Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves, making people go to the gathering place for our culinary community.
Located in the heart of Coal Harbour inside Fairmont Pacific Rim, this casual fine dining restaurant offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

Our experience at the botanist was amazing. The food was delicious, service was great and environment was really nice. Would definitely go back again!
Food is fresh with very creative presentation
Food was incredible as expected! The ambiance was stunning and unique! However, our server was quite dismissive and not welcoming. I went with my partner for her 30th birthday because it is one of her favourite places and we experienced a lack of fine dining service.
We were looking forward to trying new cocktails but unlike the table next to us that was offered last call, that courtesy was not extended to our group. Instead our drinks were whisked away. It made us uncomfortable and so we did not stay for dessert. When it came to ordering our meal, my friend wanted the burrata salad, to which the server responded curtly, “that’s all you’re getting.” (She has various food limitations and love of burrata so she is careful when ordering). We also were not checked on when food did come which is an expectation at any restaurant. I felt like I needed to bring this up because we were all excited to either return or try The Botanist for the first time and I don’t know if we would return.
Amazing food, we did the tasting menu paired with wine and it was unreal. I couldn’t have enjoyed myself more. Will be going back again.
Fantastic food and cocktails with great service. Great attention to covid protocols with lots of space between tables, temperature checks. A real treat.
I've requested a candle in advance for my bf's dessert cake, but they forgot. I went there for his birthday but it kinda ruined the day. won't be
Wonderful! It was one of the best brunches I've ever had!
An incredible experience, beautiful environment, wonderful food, impeccable service. I can't wait to go again.
Food and service great as always.
Too many utensils at the table. Waiter didn’t seem as knowledgeable as expected for a restaurant of this caliber.
I had a wonderful dining experience and highly recommend The Botanist for celebrating those special occasions with friends and loved ones. Arrive early and enjoy a uniquely crafted cocktail at the bar. If you are in the mood to be truly spoiled, indulge in the chef's tasting menu with wine pairings - it will not disappoint!
The tasting menu was great value, dishes were well creative, well composed, and consisted of great ingredients that highlight the Pacific Northwest. One standout dish was the beets with nori and XO sauce. Great service throughout the night and a wonderful sommelier who educated us on the wine we were drinking.
it was our first visit to botanist and it was amazing. all the staffs were friendly and helpful.
Went there for brunch, post covid-19.
The service was fantastic. The food and mixology was excellent. The fact that it's reduce capacity was nice, because tables were spread apart which provided added privacy. Noise level is as expected, don't expect quiet.
The ambience was nice, classy and inviting however, we were disappointed with the service. It was our dinner anniversary and requested a table so we can sit together and my partner could ease off his back pain and be comfortable. They denied us a booth that was just recently sanitized when they could easily just sanitized the table we were given and made the consideration. For a $260 bill, I think that’s the least they could’ve done. We huddled with our bulky coats in our small chair throughout dinner until we requested an extra chair to rest our coats. Won’t be coming back.
Food was amazing even though portions are kind of small for the price, however most of the staff were rude and our server gave us a lot of attitude for no reason? Could’ve been a lovely upscale dining experience if they trained their staff to be more polite.
Nice for special occasion. Attentive server and great presentation.
Great experience and food. Can’t wait to go back.
Exceptional in every way and by far the most interesting, modern plates in the city
Great service and very attentive. Food was phenomenal in flavour. Thank you!
The best brunch experience I’ve ever had. The service, food and ambiance was outstanding.
I have been to Botanist a few times and this time the food quality was very mediocre and was not satisfactory at all. We were 4 people and we ordered different appetizer and main dishes and although the presentations were beautiful, the taste was not good and very average.
Cocktails were good and very easy to drink, could be a bit stiffer imo. We had the tasting menu and we really enjoyed. It was quite different from the regular items on the menu. Our favs were the dry aged duck and halibut. Was very very well done. I’ve not had a better halibut (not comparing fish and chip style) anywhere else. And my goodness the dessert was 100%!! I would go back just for dessert!! Oh and the ambience. Loveeeee!!!
Poetry In Motion cocktail is new favourite!! And awesome service. Will be back soon!
The flavours, ambience and service were fantastic! I highly recommend this place to anyone looking for a great meal and a great night.
We waited several months to go to Botanist and we were not disappointed. Hopefully we can return soon.
I treated my friend for a birthday dinner Saturday evening. The service was so poor that it put a damper on our lovely meal. Our waters were almost empty and only filled when plates were cleared. My friend finished her drink fairly quickly and wasn’t asked if she wanted another until midway through the meal. We weren’t asked if we wanted dessert and had to wait around to order. We had to flag our server down and she rudely asked us “did you decide?” We weren’t actually offered anything to decide on. My friend asked for a glass of port wine, was told it wasn’t on the menu, and it was served to her, the waitress gave her the glass by going over my head (no warning) and then in between us. Our food and drinks were delicious but the service was so bad/non-existent that it was difficult to enjoy.
Perfect place for brunch, food was great. Will definitely be going back.
Amazing service and delicious food. Our waitress was prompt and professional and was super knowledgeable about everything. Couldn’t have gone better!
The botanist never disappoints!! Highly recommend. The service is top notch and the food is absolutely delicious!
Overall good, but the brunch food wasn’t the best.
Excellent service great atmosphere was a little bit loud
Very relaxing, awesome food and fantastic services.
Great place to enjoy any occasion
Look forward to when they bring back the specialty drinks.
had the tasting menu- interesting and delicious as always. The duck was outstanding
Fantastic food, great ambience, good COVID protocols
The Room is Beautiful and the food was great. 2 of the sides were not done well. But everything else was beautifully done.
It is not at all pretentious or stuffy. A casual and comfortable environment but sophisticated at the same time.
The vegan menu was very much appreciated even though my wife is only vegetarian.
Jackie was great, she provided outstanding service.
The entire experience was magical! The decor, the service (including a sommelier) and the food was amazing. This was a honeymoon highlight for us and was fine dining at it’s best!
Went for weekend brunch and it was amazing. They accommodated our 3 year old very well.
