We were staying in the hotel and had had breakfast in this restaurant (which was also excellent) so we decided to give it a try for our evening meal. We'd asked to sit at the high-table at the end of the bar and when we arrived, it had been rearranged so that we were very comfortable.
We had food from the bar menu - lamb chops and a wagyu beef burger - and both were delicious.
The food in the main part of the restaurant also looked excellent.

Definitely a pricier dining experience, but it's a special treat. Feels like eating in a spa environment. Very calming and airy, and the food is very good.

Great service from the moment we walked in the door of the Fairmont Pacific Rim and the staff at Botanist kept this going. I recommend sitting at the bar if you dig cocktails at all. Very knowledgeable, great wine selection and Somm, literally would not change a thing for our next visit.

So third visit and after very good experiences previously, a disappointment. First, this time nothing on the menu really appealed to me or my foodie companion, which is unusual. Since there were no “wow” dishes, we opted for the chef’s tasting menu. My only modification was that lobster was in the standard, so they would sub me, keep my companion on the standard track. First course was a Douglas fir smoke infused beef. Looked really cool, tasted only like ashes to me; got a better reaction from my companion. Scallop dish next was innovative presentation, but the radishes and jalapeño oil totally overwhelmed the subtle taste of the scallops, so like the previous course, the protein was just to deliver a flavour other than the base of the dish. The sablefish with squid ink was nicely cooked, but again the protein faded in light of the sauce. The lobster my partner got next “didn’t work” as a flavour combo. My beef was fine but undistinguished. The lamb tenderloin with mushrooms that came next was the unquestioned hit of the meal, we both thought it was great, and my companion is not a big lamb fan. The dessert course was a fail, chocolate ganache with mint ice cream. The chocolate flavour was anemic, and the mint was aggressively vegetal, not really minty.

We opted for a bottle of wine from the shortish list of small family organic or biodynamic wines. I opted for a varietal I had never heard of from Australia, and it was unique as promised.

The electric guitarist music was fairly loud and not as accomplished as I would expect for that setting. The room was very nice as usual. Service was fine but not outstanding. The wait staff assistance in our initial review of the menu was not very helpful, and the sommelier tried, but didn’t succeed in giving me a feel for what I should get, which is important when there is little familiar on the list. I know wine, for context. Overall, this was a major contrast to two previous top drawer experiences.

Had a wonderful experience at Botanist for my graduation lunch, the location, and design made it a beautiful gathering place for my family and a lovely place to celebrate. The food and cocktails were exceptional, the prices are on the higher end but definitely worth it. Can't wait to go back!

Overall I found the food to be kind of underwhelming. It looked pretty but lacked punch/flavour/anything to make it all that interesting, and the lobster was underdone. We had a 5-course tasting menu with wine pairings, and the wine selection was far and away the best part of the meal. Ambiance was nice and the service was adequate but not overly friendly.

Perfect everything. From starter to dessert. The open kitchen was amazing to watch. Each course was prepared to perfection. For starters...foraged mushroom, mushroom soil, crispy piave, HAND-CUT TAGLIATELLE. Wonderful! Entrees ...artichokes, confit tomatoes, crispy skin, CHORIZO-CRUSTED CHICKEN BREAST (best chicken dish I’ve ever had!!! ) REALLY) And wild mushrooms, swiss chard, potato pavé, foie jus, DRY-AGED STRIP LOIN ... cooked Rare to perfection wild mushrooms added brilliant flavor! And finished with a hand made dessert Esmeralda ( I think). Heather seated us Marty advised us and took our order and Brandon served dessert! I wish I lived in Vancouver ( This would be a Resturant i would make my favorite). One of the best meals we’ve ever had!!!

We enjoyed the tasting menu and had a fantastic server (Genevieve), but we weren’t seated in the main dining room, despite having a reservation. I’d only recommend the restaurant if you are in the main space as, for $350 for 2, you really want the ambience.

Miguel was our server, and he’s very polite and friendly for the whole dining period. Need to be attention that on weekend , they only offer brunch menu, not breakfast nor lunch.

Our family dinner at The Bontanist was lovely. Due to a large party our shared appetizer took a long time to reach the table...this was recognized by our server and, appropriately, we were not charged. The duo fois gras was amazing. Several people, beyond our initial server, approached our table before we placed order for mains....would have liked a quick explanation of their role....it got confusing...but in the end worked out well. Mains were delicious (duck, chorizo chicken and watercress salad). Dessert...the deconstructed Meyer Lemon tart a must...the squash dessert would have been better in the fall. But overall a great experience and we would recommend!

Really great experience overall, with very friendly and helpful service, the ability to tweak a dish or two to suit dietary needs, and just overall deliciousness.

Dessert was the weak point, but possibly only because the rest of the meal was so good.

Definitely would go again!

I made a reservation at the Botanist for my boyfriend’s birthday this past weekend. The service was fantastic! Our server Brandon went above and beyond to make sure we enjoyed our evening. The food was also amazing. The scallops were easily the best scallops I’ve had in years! In fact, every dish we ordered was amazing! A special shoutout to Brandon, the kitchen staff and the rest of the Botanist team that made this dinner a memorable experience.

We decided to try out the tasting menu.

We were provided with 6 courses and we enjoyed every single course. The experience and presentation were phenomenal and we’d highly recommend trying this place. The only critique I had was the amuse bouche and only meat course consisted of lamb. Would’ve been nice to have a different variance so there was no repetition. That being said, both dishes were cooked perfectly so it’s hard to complain at all. Overall 5/5.

Beautiful meal, excellent service, reasonably priced for what it was. Also amazing guitarist in the background - not too loud but superb backing music for a wonderful meal. Fully recommend.

Ambience was lovely. Cocktails exceptional, and wonderful service. However, the food was trying very hard to be pretentious, without the quality. Food relied heavily on salt and butter. Roots vegetables were undercooked. Presentation was creative, however. I recommend coming here for desert and cocktails.

Three of us had the snow crab appetizer and all felt the same - extremely bland, lacking flavour, two didn't finish. My main was duck - cooked very well and tasted excellent, there just wasn't enough flavour to complement it, so the dish was overall flat. The main of chicken was again good for the chicken, but flat with the accompaniment. Two people had the sable fish and neither finished their dish. We were looking forward to the dinner but left overall quite disappointed. Our waiter Larry was excellent (explained, answered questions, unobtrusive but attentive) and service overall was very good. Unfortunately the taste of the food didn't live up to lovely presentation.

The first thing i noticed walking into the Botanist was definitely their light airy colors, well selected decor and beautiful plants placed throughout the restaurant and hanging from the walls. The clean and open floor plan felt spacious and inviting. The attentive and patient servers were polite while waiting for our orders and our drinks were perfectly mixed and garnished adorably with fruit and floral accents. When the server came with our meals, the food was aromatic and plated beautifully and each server explained our plates to us. It was such a wonderful and complete experience of relaxed, comfortable fine dining. I would recommend this to a friend and family.

The colours, peacefulness and service made it feel like I was on vacation! I love the relaxed feel of this place The brunch servings were large and appetizing and it was nice that the servers, china and atmosphere meshed together very well. Service was friendly and sweet!
