Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves, making people go to the gathering place for our culinary community.
Located in the heart of Coal Harbour inside Fairmont Pacific Rim, this casual fine dining restaurant offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

If your desire is for a beautiful meal surrounded by beautiful people, you must go here.
This restaurant offers some of the best craft cocktails I've tasted. Rye N' Reynolds is definitely a fave, smooth, balanced, complex. I was last here two years ago before the pandemic. When Canada opened the border to Americans and I scheduled a trip to Vancouver this was the first place to be booked. The meal was excellent (muscovy duck breast, perfectly prepared) and gai lan. Service was spot on, warm, professional and friendly but not intrusive. Carry on, Botanist, you've nailed it.
Tuna crudo, octopus, lamb and duck dishes all absolutely delicious. Very nice cocktail. Superb dining experience.
Well balanced food and wine pairing.
Food quite good but somewhat overpriced - protein portions (especially of fish) relatively small. Excellent cocktails.
Tagliatelle was the most flavourful pasta I’ve had in a long time. So good. Charred octopus was also delicious. Duo of lamb was fantastic and so was the rib eye. Didn’t care for the side of gai lan or the “ratatouille” but everything else was absolutely wonderful.
Amazing food and great service. The “we’ll take is from here” dining option is a must try unique experience. Highly recommend and will definitely go back!
Botanist was able to cater to the dietary restrictions of a vegan and a pregnant lady with allergies. We were truly impressed by how they were able to accommodate our dietary restrictions even with their Chef’s tasting menu. The wait staff were friendly and attentive. I highly recommend coming by for dinner!
Waited over 1/2 hour for a reserved table and it was early the service. No one came around to communicate this. The "atrium" has no ambiance and overall an underwhelming experience. I wanted a quiet table but not a lesser experience than what the dining room offers. Servers were friendly, food was ok to good but again, underwhelming compared to other restaurants in their field. Huge fan of the Fairmont hotels but this experience left me not feeling I need to return any time soon to Pacific Rim.
Great experience!! Beautiful restaurant with delicious food that’s presented gorgeously
Very nice restaurant with well trained staff, knew both the foods anda wines and were very prompt. Not inexpensive but worth the money.
Server knowledgeable on wine and cocktails. Their take it from here set dinner is a great full experience for fine dining.
Love everything about the Botanist. Food and drinks were delicious!
Excellent, top tier experience. Thank you for the birthday candle and treats.
Came for Sunday brunch with four more friends and we all loved the food. I would describe it as an explosion of flavour and I couldn't decide which one is better! Highly recommend.
Beautiful room and excellent service. Vegan menu is fabulous too
Tasting menu and wine pairing was absolutely amazing. Highly recommend. It truly is an experience!
The ambiance was great , as a vegan I had the beet steak and it was delicious.
My wife had an amazing pasta
The service was amazing
I highly recommend this restaurant
food quality was really not worth of the space nor the price we paid. we had tasting at $117 per person with not even the quality of some of the street food. Maybe it is is inside Fairmont Hotel? maybe the rent is too high? risotto is too salty and lamb is not the best cut and came hard to chew. knife also was poorly chosen for the food and does not cut into the meat even. poor experience for the food despite a nice ambiance and location. Wine pairing also a joke - for $60, did not even feel that i had wine at all. Pour was too small, probably at 2 oz. each for 5 and that is only 10 oz. of wine. almost order another glass to go with the meat course. overall rating for the food/wine at below average.
Incredible evening- food, service and setting. Staff were attentive and made the birthday celebration memorable.
Husband and I decided to celebrate our anniversary…(we haven’t ate at a restaurant since before COVID)
Overall, service and food felt great until we saw a mouse and pointed it out to the server (which they also saw and said they would handle).
But obviously mouse was gone by the time she went to look for it and we were left scared for the rest of the night…Anniversary dinner ruined…
Amazing, as always. For a night out, special occasion or not, this is our top pick.
Arrival, departure, and everything in between can only be described as perfection. Thank you to the staff for a truly memorable experience. Botanist captures an energy so special, you just want to bottle it and save it for later. Try the duck, and whatever wonderful wine the sommelier Stephanie recommends!
The Sommelier was first class. Knowledgeable and passionate about her art, was the 5 star act of the show. Everything else was third class minus. The wrong appetisers served at the behest of an arrogant chef and then lamb then served raw was only the start of it. All style over substance and an absolute fail.
one of the best meals I have had in my entire life!! Every bite was an explosion of flavour, I was in heaven!
Watching the chef and his kitchen at work was such an amazing experience. It’s honestly an art and was an honour to watch. However, the service was very pretentious and left a bad taste in our mouths. We were visiting from out of town and botanist was #1 on our list of restaurants to visit. When our server came around it felt like he instantly profiled us as a young couple and that we maybe weren’t worth his time. It’s really too bad that happened but the ambience is amazing and we highly recommend sitting close to the kitchen to gain a better appreciation of the time and effort that goes into each plate.
Good service and awesome food! I will go back for the chocolate praline fondant
amazing! highly recommend- quality is unmatched and the vegan menu was sensational. service 10/10
Very interesting food with outstanding combinations of flavours - good service can be a bit noisy but then we are oldies !
Absolutely loved it here. The service was fantastic and the food was amazing. Had the vegan tasting menu. Will definitely go back
Celebrating birthday. Great place for dining. good service
Delicious, clean, amazing service, and beautiful! Perfect for special events.
Really nice spot.
Octopus was fantastic
Server was very kind and made us feel special.
Cocktails were really good
Ate at a few top spots in Vancouver and botanist was the best.
The Botanist was fantastic! A very enjoyable culinary experience
We were pleasantly surprised and intrigued with the use of foraged components of each dish. They complimented the main ingredient well. Larry, our server was attentive and we really appreciated the privacy provided with the table spacing; you did not feel the presence of people sitting beside you.
Staff were very professional, ambience was perfect, and the food was delicious. Two people within our party had different food allergies (lactose and fish) and the chef went above and beyond to accommodate.
Excellent restaurant. One of the best in Vancouver. You will pay for it though.
Disappointed because when we got there we were told that the tasting menu was not available that night because they were out of it?! It was the reason we reserved there in the first place. The rest was ok.
As great as expected for this level of restaurant.
