About Booth One
Booth One is a classic Chicago restaurant being reintroduced in the heart of the Gold Coast neighborhood from Lettuce Entertain You. Drawing inspiration from the legendary restaurant at the former Ambassador East Hotel, Booth One is a contemporary American concept with a vibrant, social dining scene. Created by Chef/Partner Doug Psaltis, the menu at Booth One utilizes top quality, seasonal ingredients to showcase modern interpretations of throwback dishes. We had a great night at Booth One, I brought my boyfriend here for his birthday. The service was attentive yet didn’t bother us every two seconds. We ordered the booth one salad, ricotta tortellini, asparagus and filet. Everything was delicious and the perfect amount of food for two of us. I would love to come back with a big group or for another date night
Loved our experience. Excellent service, asked if we were celebrating anything and when I said yes the waiter promptly brought out celebratory glasses of bubbly. Excellent entrees - lobster risotto and beef Wellington were both fantastic. Though pricey I didn’t think it was too overpriced for a special occasion and for the quality. They ran out of the popular chocolate coconut cake but the lemon meringue dessert was beautiful and tasty. Beautiful ambiance as well. We would definitely return (once we get enough LEYE points!)
Mark was one of the best servers I’ve encountered in a long time. Knew the fine points of preparation and wine list. Also very engaging and attentive, all the while training a shadow. Job well done. We’re local and will return. Pricey but expected and value was delivered. Not the Pump Room of old but times have changed.
The evening was lovely. Food was good.
There was a little discomfort surrounding dessert. I was planning the evening for 2 birthdays. I had written into our online reservation that we were celebrating 2 birthdays and I called earlier in the day and confirmed with the hostess that there would be 2 complimentary desserts served. One dessert came with 2 candles and we were charged for it. It was very uncomfortable to make an issue about it. I felt that there should have been one complimentary dessert for each person as we have had at all your other Lettuce restaurants.
We had a very nice meal. Booth One is new, so they are still in the early stages of operation.
Prior issues that other reviewers noted on the service are fixed. Our service was excellent--attentive and well-organized.
Our dinners had nice touches of originality. The Caesar salad was outstanding--high quality anchovies and a great dressing made this usually dull dish truly special. Golden beets and quinoa with yogurt sauce were a surprise hit. I have to confess that I chose my entree for one of the sides--fresh artichokes--I can't resist them. The chicken was well-prepared, loved the artichokes and arugula salad. Beef Wellington was excellent--really well executed.
Drinks were very well crafted.
Prices are pretty on target for the Gold Coast--but the quality of the food is higher than average.

Everything we had was delicious. We started with a chopped vegetable salad (shared), which was very fresh. Entrees chosen were lobster risotto and crispy duck. The risotto was heaped with a lot of lobster and came with an extra amount of rice, which was needed. The crispy duck looked delicious, nicely browned as advertised, and was accompanied by roasted vegetables. Desserts chosen were pear profiteroles (sans pastry), nicely roasted with a scoop of vanilla ice cream and rich fudge sauce (an extra amount of sauce was included in a pitcher); and lemon Napoleon, which was quite tart but good. Nice selection of wines by the glass. I would like to return in the future.
Probably some of the worst service I have ever had. I have been many times when it was Pump Room and was excited once it became a Lettuce Entertain You restaurant hoping the food would be better. The food came out cold, they forgot one of our dishes, and no one came to check on us and it was nearly impossible to order a drink. When we finally did order a bottle of wine (which came after our main course...) the "wine director" might of been the worst person of the entire evening. Overall very disappointed in our experience.
Have been dining here regularly as The Pump Room for over 36 years! It has always been my wife and my special go to place! Booth One has made it even more of a special place for us! Will be back again and again! Thank you Rich Melman for making New Year’s Eve one we will never forget!
We had made our reservation weeks before, and checked in when we arrived. We were told that it would be a few minutes and that we could wait at the bar. We went to the bar, ordered a drink, and waited. 30 minutes later, we went back to check with the hostess, who told us that we had never checked in (she was the person that supposedly checked us in when we arrived). We were seated shortly after that with no apology. The meal was just ok, and the service thereafter was good. It's too bad because our experience the year before, when the restaurant was The Pump Room and under different management was excellent, and we has high hopes for Booth One.
Food was delicious, cannot fault them for that, but the service was incredibly slow and attention to detail was lacking. Everything took forever. We wanted dessert but after waiting 10 minutes for the waiter to come back and take our order, we decided it wasn't worth another long wait.
First time at Booth One since it was Pump Room. The food was good, and the service was much better than previously. The atmosphere has not changed much in the dining room, but the bar area is much more open with the bar in the middle of the space. The old entrance on State and the reception desk is now gone, opening up a little more room in the bar area. Lobster cappuccino was incredible, but paid $40 for lamb chops that consisted of 30% fat. Check was definitely higher than Pump Room....I would say 20% more.
