Very upscale small boutique type sushi inside the Hilton in Pensacola Beach. View of water is nice. Food was delicious and presented beautifully. Our server was Bailee and she was delightful.

This restaurant is a hidden gem on the second floor of the Hilton Hotel. It’s very small and quaint with very relaxing vibe. The service was fantastic. Brynn explained the menu to us perfectly and helped us make some delicious decisions on sushi. . I recommend the crispy rice and tuna tartare appetizer and the smoked salmon roll. We ate every last bite!!!

We all had the omakase. Waitress was very knowledgeable. Food was top notch. Chefs did an amazing job selecting what was served. They even allowed me to come back the next day for carry out. This has been a tradition that my son and I have done during our vacation. I'm already excited for next year. Well done, Bonsai!

I consider Bonsai one of the top 6 restaurants in the Pensacola/Gulf Breeze area. If you want sushi in a fine dining atmosphere, this is the only place to consider. You get beautiful presentation, delicious food, and the quite of their cozy restaurant tucked away in the Hilton hotel. The fish is perfectly fresh and every dish is well balanced, often accompanied with micro-greens grown in the chef's garden! I also have great appreciation for their full bar, sake menu and delicious wines, if you want to move away from the Japanese theme while you enjoy your dinner. We come back monthly to see what new changes to the menu have been put in place or to just revisit our favorite items.

We liked the items we ordered. Everything was freshly prepared. Restaurant is small and intimate. Service is excellent. Sushi prices are high IMO. Tuna tartare and wagyu appetizers were excellent.

Bonsai is a gem that elevates the sushi dining experience to new heights. From the moment we stepped inside, the ambience was serene and inviting, despite the slightly awkward wait outside near hotel rooms. The evening began with brilliantly crafted drinks that set the tone for the night. I enjoyed the Flowerpiercer and a drink named High Favors Come in Small Doses, both of which were expertly mixed and bursting with unique flavors. For the appetizers, the Pork Belly was a standout. Served on a salt block, it was perfectly seared and delightfully fatty, with just the right amount of saltiness that enhanced the dish without overpowering it. The Florida Citrus Maki was a great choice that I very much enjoyed with the salmon row being the perfect cherry on top. The Tuna Tartare, although it could have used an extra wonton crisp, was hands down the best tartare I have ever tasted. The combination of fresh tuna and delicate seasoning was simply impeccable. We concluded our meal with the crème brûlée, which was creamy and smooth with a hint of horchata-like flavor that added an unexpected but delightful twist to the classic dessert. Our waitress, Brynn, was fantastic. She was knowledgeable about the menu, sweet, and attentive, making sure our dining experience was nothing short of perfect. Overall, Bonsai provided a memorable dining experience with exquisite food, exceptional drinks, and top-notch service. I look forward to returning and highly recommend it to anyone looking for a superior sushi experience.
