Our evening at Bonsai was a wonderful dining experience! The food was presented with amazing attention to detail and artistry. The view of the Gulf was spectacular. The food and service were excellent! We especially enjoyed the Florida Citrus Roll, Applewood Smoked Tuna Roll, and A5 Wagyu Strip-loin.
Went as 2 couples for a date night. Decent food and good service with half view of ocean in small intimate setting but the price (food and wine) was expensive for the quality of food provided. Sushi was excellent, pork ramen was just ok and pork was slightly tough. for $40 a bowl it should be exceptional ramen. Wine list was very small with cheapest bottle being $60 to $2000. For such a small wine list, there were many bottles (at least half the list) that were extremely high priced and uncommon for the local area, even at higher end local restaurants.

Great spot that we weren’t expecting in the Hilton. Pretty, nice view, modern and clean. Really tasty fresh food, but really expensive for what it was and we eat at nice restaurants a whole bunch. There’s something to be said for paying for convenience AND good food on Pensacola beach, which is scarce.

Our waiter was great (I can’t remember his name though). The ambience and food presentation was definitely worth it. The only thing that would have made it perfect was if there was more of a view of the water.
This is by far the best sushi I ever had. There’s nothing like it in Pensacola. The citrus roll, smoked tuna and pork ramen is a must have. Definitely going back!

The most expensive, absolutely tasteless ramen I have ever experienced.
Top level ingredients were used, with no umami. $40 for a bowl of mediocre ramen is just silly.

The good things first: The server was very attentive without hovering. She was great.
The appetizer, Wagyu beef, was delicious. Not a lot of food, but very good flavor.
The not so good things: The restaurant is down a hotel corridor with rooms people stay in. It is a very odd location and was very hard to find. You go up stairs, around a corner, around another corner, down a hallway...it would be good to have better signs or an easier to locate entrance.
View wasn't what we were expecting for such a high cost dinner.
The nigiri and sashimi were okay. Not our favorite but okay. We had eel, salmon, tuna, snapper, etc. We wanted to try a variety to get a feel if this would be our new sushi spot. None of them really stood out as excellent.
The special sushi roll, hickory smoked, was a very pretty presentation. It comes in a glass dome with smoke in it. The taste, however, was too smoky. My husband compared it to eating a burnt stick. We weren't able to taste the sushi flavors at all. We had 2 pieces each but could not eat any more.
Overall, it is a new restaurant and hopefully they can work out the kinks and work out the flavors/food to be more what people will expect for the prices. We spent over $200 on dinner for two and would not recommend it.

The food is good quality, With some dishes reaching the level of fine dining. But I felt the Ramen was overpriced and uneven quality. Also, the location is really strange for a high-end restaurant. It’s pretty clear that the room used to be some sort of hotel lounge. Having said that, we will be going back because the food was overall pretty tasty.

It has fancy expensive food in a hotel suite. Weird setup but yummy food. I just wanted more food after I got my $150 bill. Worth trying for the novelty of it but I wouldn’t go again.
Went here for my birthday. Our waiter, Keith, was great. He explained everything on the menu, gave recommendations, and was very attentive. The food was unreal. The artistry and taste were worth the money. Highly recommend the waygu beef appetizer and the smoked tuna roll. Don't say no to the green tea gelato for dessert! Definitely get there early to have a cocktail outside while you watch the sunset and make sure you make a reservation.
