CHEF JAYSON FOSTER was born in Norwich NY where he developed a love of cooking through spent time with his mother and grandmother in the kitchen. In 1996, he came south to Beaufort, NC. After stints in other dining spots, Jayson was hired by Chef William Bell at William’s Casual Fine Dining where he was named sous chef. Jayson attended Carteret Community College; Culinary Arts studying in France under two-starred Michelin Chef Marc Meurin. A stalwart on the Beaufort Food Scene, Jayson has cooked at Chef’s 105, Circa 81, and at Aqua, where he was the Chef for 10 years. In 2012, Jayson and team won the Fire on the Docks Competition in Wilmington, NC. Jayson is proud to bring all these experiences together in the kitchen at Blue Moon Bistro and looks forward to serving you. Bon Appetit!

3rd visit to the (now, not so) newly updated Blue Moon Bistro, and it was spectacular. 6 of us…..all orders on-point….came out at the same time. Food was hot, delicious and beautifully presented. Very accommodating to one diner with celiac…many options available. Can’t wait to go back!

Noise level a little more than when dining outdoors but expected. Unfortunately, the temps dipped a little too quickly yesterday. Our to go place each and every time we are in town (About monthly September through May). That crazy thing called work gets in the way of more frequent visits. Awesome food and service as always!!

A very good restaurant.. we’ve eaten several times. Food is excellent or very good. Service always excellent. They do rush a bit. Looking to turn over in just after an hour. And the acoustics make it a bit noisy when busy. Certainly worth a try.

This was our third visit to Blue Moon Bistro and it was another wonderful experience with fine foods and seasonal beverages. The staff are professional and very attentive. We would highly recommend dinner or just drinks at the bar while visiting Beaufort.

Everyone was friendly and cheerful. Hannah, our server, provided excellent service, just the right amount of checking in and seeing to what we needed. The food was excellent, well presented, and just right amounts. Will definitely return here on our next visit to Beaufort.

We went to Blue Moon on the weekend of the seafood festival, so they were quite busy! Our server, Tessie, was upfront about the timing of plates coming out, there was no concern that your dinner would be on top of your appetizer. And I appreciated that, it was super busy, but servers helped each other deliver food and drink, the manager Amanda stopped by to say hello and see how everything was. After the masses cleared out, the noise level came down and it was more relaxing. The food was wonderful, all around. I had the filet mignon, ordered medium rare, cooked to perfection!! We enjoyed cocktails, dinner, dessert...a very nice place to spend a great evening enjoying friends and food and drink!

Fish was delicious and the service was excellent. The Caesar salad was not very good. Lettuce was not crisp and it had way too much parmesan cheese.

A lovely quiet evening. Excellent service without being intrusive. I would highly recommend if you are in Beaufort looking for a spot to relax, enjoy a nice meal alone or with friends. You will not be disappointed.

Our favorite spot in Beaufort. A great “newer” privately owned restaurant on Queen, that has service at heart. Drinks are good and my favorite item, the Shrimp and Country Ham Pasta!
