We had a great brunch experience last Spring and decided to try it for dinner. Besides being overpriced, the food was very salty and underwhelming. My Contramar-style fish was one-note, salty, and had no nuance. My husband’s brick chicken was disappointing - too much aioli, overcooked squash, salty chicken. The only item that stood out was the the crudité appetizer on a bed of seeds with a carrot mis dip - it was delicious then and now. The service was quite good, but not enough to bring us back. We could have eaten a James Beard award winning meal (from the Sanford) for the same bill.

When 1 + 1 is far more than two. Tonight (and tomorrow night... you still have time to experience this), Birch had a pop up featuring two proteins: oysters and shrimp. However, the four preparations, accompanied with the options of champagne or martinis, makes for far more flavor combinations than we could have imagined. The Lambert de Seyssel champagne is bright and delicious; a perfect complement for the shrimp and oysters. That said, the Birch fan "pro tip" is to order the pickled ramp martini. In our combined 80 plus years on the planet, this is our favorite martini we have had. And Chef Kyle shared that their pickled ramp stock is dwindling. So run, don't walk. Your opportunity to have a great martini is running out. We tried all four preparations of the two proteins. Having dined in Milwaukee (and around the world) for years, the four pop up dishes are outstanding and a great value. If we had to pick a favorite, it would be the hot oyster preparation. They are truly "flavor bombs". It's always impressive when a single bite can deliver so much flavor. Between our last review of Birch and this one, we have dined there numerous times. Each experience was excellent. We have also continued to order in and dine out at other restaurants in the city and surrounding communities. Birch is one of our true happy places. The people. The food. The service. And the atmosphere which features some of the best music I have heard in a restaurant ever. If you haven't experienced Birch, go for the pop up. If you can't go for the pop up, go for the core menu. It's time and money well spent.

The new shrimp preparation is exceptional. The addition of tostada’s on the menu is great, a must try. The aioli really pops.
