Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

My girlfriend and I celebrated our three-year anniversary at Bacán, and they went above and beyond to make it truly unforgettable. From the moment we arrived, we were impressed—our table was beautifully set with a card congratulating us on our special occasion. We experienced the chef’s tasting menu, an 8-course journey that was nothing short of exceptional. Each dish was presented with care and explained in detail, making the evening not just a dinner, but a culinary experience. The flavors, creativity, and attention to detail made every course a delight. Our favorite was the snapper dish—it had an incredible aroma and a warm, rich flavor that left us wanting more. The drinks, ambiance, and overall atmosphere exceeded all expectations. To top it off, we were surprised with a plate of elegant, bite-sized desserts, including a chocolate that read “Happy Anniversary”—a thoughtful touch that meant so much to us. Thank you, Bacán, for giving us a night to remember. We can’t wait to return and relive the experience all over again!

The food is exceptional! My only complaint is that our server advised us to order 3-4 dishes per/person which was way too much food. She described the vegetarian plates as “sides” to the proteins but one “side” could have easily been shared by 2-3 people. Portions were much larger than expected which makes for a great value but we ended up leaving lots of food on plates since we were staying at the hotel and couldn’t take it home with us. I would definitely eat here again, just not order as much. The tuna tacos and pork tenderloin were both stand-out dishes!!

Ibrahim gave us an exceptional birthday celebration for our friend Boss while visiting from Boston. I will return for the delicious food and drinks but also to visit Ibrahim who provided one of the best dining experiences we have had.
