Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

We absolutely loved the Taste of Bacán – the 5‑course tasting menu delivered a stunning journey of bold, Latin‑American flavors with artistry in every bite. The dining room is sleek and stylish (and on balmy evenings, the terrace is a dreamy spot) . From the moment our amuse bouche of tuna tacos arrived—bright pickled jicama, guajillo cucumber, tarragon—it was clear we were in for something special. Each course thereafter—smoked‑feta octopus with chimichurri, silky moqueca OG style with scallops instead of black cod in coconut broth, a perfectly cooked carne filet with papa chorreadas and mole verde, and an inspired chef’s dessert finale—was beautifully plated and packed with layered, expressive flavors . Service was impeccable: attentive, polished, yet unfussy, making us feel welcomed and elevated. The open kitchen adds a theatrical flair, making dinner feel immersive and lively. Chef Guillaume Robin (a Michelin‑recommended talent) and his team clearly take pride in each imaginative, seasonal dish . Overall, the Taste of Bacán is a memorable celebration of inventive, Latin‑inspired cuisine, executed with precision and flair. Highly recommend for anyone seeking exceptional food, attentive service, and a refined yet down‑to‑earth ambiance. We’ll absolutely be back.

We went for appetizers and dessert. Everything was incredible. We got the seafood tower which was amazing. For dessert we had the grandmas cookie brownie and a chocolate espresso martini. Our server, Ibraham, was exceptionally knowledgeable about all things food, wine and beverages and even put in some personal touches to our evening to make it even better.

My husband and I were visiting Orlando from Denver to celebrate my bday and chose Bacán for my bday dinner. Best decision ever! Everything was spectacular!! The restaurant its absolutely beautiful, we sat in a table right in front of the kitchen and it was lovely! The food was executed to perfection, from the presentation to flavors to timing and temp on every dish!! Dessert, delicious!!! Service was great too. Gracias por los tequeños, one of my favorite dishes! Also loved how the tickets were perfectly stacked on expo! That attention to detail makes the difference. Thank you for an unforgettable meal! We are definitely coming back!

Food was awesome and server Brad was spectacular . He is the most profession and polished server we have ever had . He understands what good hospitality is. We love visiting the wave hotel and visit Bacon.
