The daily changing eight course Tasting Menu is an of-the-moment celebration of seasonality and creativity. For a supplement, course-by-course wine pairings are available. The menu served nightly highlights the best ingredients of the season, enhanced by skillful technique and an eye toward varied textures and flavors. Desserts, masterfully prepared by Chef Santos, are irresistible complements to Cogley’s savory courses.

Aubergine is the equal of any 2 star Michelin restaurant and many 3 star ones at a lower price. Incredibily innovative food that is also delicious. If you are in the Carmel area and want an amazing dining experiece, don't miss this one. The service is equally first rate. And you can hear each other - an added bonus for those of us who want to talk to each other vs look at our cellphones.

Incredible experience. We decided to come here while on vacation in Carmel because we wanted to venture outside the box of our normal restaurant choices. And wow this did not disappoint! Food was AMAZING, beautifully presented and every course was delicious. We chose to do the wine pairing with each course,
Which gave us a chance to try some of the best wine in the world. Service was exceptional, above and beyond. Worth every penny. Would definitely come back!

Joined in for Valentine's day dinner--which is when you don't know exactly what to expect since it is such an odd day for restaurateurs. Surprisingly, the "premium" for valentine's day menu was reasonable compared to the normal menu. The setup is small, quiet, and romantic aplenty for that special night. They served a six-course meal, like with any starred restaurant, you expect some of the dishes to be bland but not a single one failed us. Every dish was strong and savory, yet subtle in the mixes of flavors, and kept us guessing. The quantities were perfect and left us satisfied at the end of the meal. We did not do the paired wines but instead picked a delicious rose champagne from the lengthy wine list. The only comment I would make is for the service to be slightly more friendly and for the pace to be slightly slower. They were efficient and nice but a few more smiles would have been appreciated. I would say that in comparison with 3-star places like the French Laundry and Quince, the food is a notch above but the service a notch under.

This was a New Year’s event that was super pricey ($750 per person) and supposed to be spectacular. Instead it was cheap and cheesy. Small mediocre bites with random inserts of good wine and champagne. There was no seating; mostly standup, some of it outside in the winter. We left early and will go home and have a real dinner before midnight. Never again.

We had dinner for six people – long time good friends. Due to the size of our party we were forced to book a table in the wine cellar and use the eight course tasting menu. The food was decent but the portions were minuscule. We also took the wine pairings and again wines were fair but servings very small. Overall it was a very disappointing dining experience and we have had much more enjoyable dinners with smaller groups in the past.

This was one of the best meals we have ever eaten. Each course was like edible art and we could see the love and care that went into it. The wait staff and sommelier were excellent. We got the wine pairing and it was so much fun to learn about the wine. We highly recommend Aubergine.

Aubergine was an amazing experience. We celebrated my boyfriend's birthday there and it could not have been more perfect. The staff were all very kind and knowledgeable. The dinner itself was an experience with each course coming out looking like a work of art. Its definitely worth the cost for special events.

For a special occasion dinner, I would highly recommend Aubergine. Chef Justin Cogley is the most creative chef and the meal, the presentation, the service was off the charts. Check their instagram page to see the beautiful food and plating you can expect. It is extraordinary.

Aubergine restaurant in Carmel may be the best dining experience on the West Coast. The night we visited, the 24 seat dining room was full. Yet the room warm, cozy, and refreshingly quiet.The wait staff was attentive without being bothersome as well as being nicely attired in dark suits. The restaurant definitely had New York City feel to it,
accommodating and professional. The star, however, has to be Chef Justin Cogley. His 10 course tasting menu flows like a Beetle album...individual songs uniquely creating a single impression. One member of our group was a vegetarian, and yet her courses looked exactly like ours! Justin wants to make every dish perfect. I highly recommend this wonderful restaurant.

We were delighted to celebrate my husband’s birthday at Aubergine. We had been looking forward to it for several weeks and the experience exceeded all of our expectations. The eight course tasting menu with superb wine pairing was like great theater for the palate. Each course was presented in a creative way to visually enhance. However, as beautiful as the presentation was - the exquisite preparation of the course was even better. Bravo Aubergine!
