   Wonderful dining experience in a beautiful old hotel. Our server was knowledgeable and helpful. We had the lobster and a Rib eye steak, with sides of potatoes and broccoli, and we started with the house made bread. Bread was amazing, crispy outer crust, soft inside with a delicious butter. Lobster was very well done, all taken out of the shell and served plated already with a butter sauce on top. The tail is also quickly grilled on a wood fire to give it a special taste. Rib eye steak, 16oz AAA Alberta beef cooked medium rare and on the more rare side. Comes with a sauce I had Chimichuri , the steak was cooked to perfection and tasted amazing! And it is a large steak. Potatoes were amazing and smoothly whipped, the broccolini was char grilled with melted blue cheese on top. Everything was amazing!

   Our experience at 1888 Chop House was outstanding. Our server Adam was extremely knowledgeable and suggested several different things for us to try on the menu. We went with the wild boar chops and bison. One of the best meals we have had in a very long time. We highly recommend dining at 1888 Chop House if you find yourself in Banff.

   Everything was fantastic with the exception of having to be sitting next to some people who dressed like they had just come from the gym. Why can’t there be a dress code at least to avoid hats being worn and sweat shirts and hoodies etc. It was nice to be able to dress up a bit to enjoy the dining experience that all the staff fulfilled.

   $158 steak had no taste and was a waste of money, food just wasn’t good for the cost

   Came here for a post-engagement dinner. The hospitality was stellar - every staff member we encountered congratulated us and made sure to make the dinner feel special. The food, while pricey, was cook d to perfection and plated well. The ambience is what you would expect at a Fairmont (excellent!). In summary - you come here for special occasions, service, and ambience, not necessarily the food. Would come here again for a special occasion in the future if in Banff again

    Our meal and service was amazing. What you would expect from a 5 star hotel. Meal portions aren’t huge but just right if you’re doing a 4 course meal.
