Each dish is crafted to order and presented with refined finesse, delivering a bespoke discovery of the senses through flavours both familiar and wild. This is New Year’s dining redefined. Reservations cancelled within 48 hours or no-shows will incur a $75 charge per guest. Reservations are currently open for guests with confirmed guestroom bookings at Fairmont Banff Springs Hotel during the festive period.     Great service and a lovely experience! Nicholas was an amazing server — friendly and attentive. I was celebrating my birthday and got a special dessert with a “Happy Birthday” message. Such a nice touch! Thank you!

    The menu was somewhat lacking for a steakhouse. As in, it didn't have the tableside service for salad, steak, or dessert. The food themselves were good. Nothing to complain about. The service, however, was lacking. The server didn't fill up our wine. When the food arrived, no one gave an explanation as to what the final product was. The menu simply described the dish as bison or crab and listed the ingredients that went in it. Same with dessert. The dessert didn't taste like they were made in house, but rather out of a box. The coffee was disgusting. The overall experience made you feel like "the restaurant knows that you aren't coming back, so they don't really care as long as they've got your money this time."

    Fairmont is spectacular hotel. Dining at 1888 Chop was a wonderful experience. Cocktails were delightful and they had expansive wine list to choose from. Dinner was outstanding. All entrees cooked to perfection. Our server was attentive and friendly. The atmosphere was very comfortable. Would highly recommend a visit.

    We were staying in the Fairmont and had been given many recommendations for this restaurant. It sadly did not meet expectations. The best dish was the broccolini. The mashed potatoes were mostly butter. The steak but good but not worth the price. While they were accommodating to get us out in a timely fashion, we finished our food before anyone came by to check on us. We had much better food during our trip and were disappointed with this experience.
