Creating new classics, 1888 offers an immersive and interactive dining experience that showcases the very best of Banff Springs’ culinary repertoire. Each dish is crafted to order and presented with refined finesse, delivering a bespoke discovery of the senses through flavours both familiar and wild. This is New Year’s dining redefined. Reservations cancelled within 48 hours or no-shows will incur a $75 charge per guest. Reservations are currently open for guests with confirmed guestroom bookings at Fairmont Banff Springs Hotel during the festive period.     We were staying in the Fairmont and had been given many recommendations for this restaurant. It sadly did not meet expectations. The best dish was the broccolini. The mashed potatoes were mostly butter. The steak but good but not worth the price. While they were accommodating to get us out in a timely fashion, we finished our food before anyone came by to check on us. We had much better food during our trip and were disappointed with this experience.
