At the helm is Executive Chef, Rob Zack, who began his career at Aspen's Hotel Jerome nearly 20 years ago. He is vital in recreating new menus, inspired cuisine and unique restaurant experiences throughout the hotel as part of the renovation project.
Prospect restaurant is our up-scale casual dining culinary epicenter of the hotel. The Living Room Bar is a relaxing and comfortable spot for small plates and cocktails. The infamous J-Bar is still a cornerstone of Aspen's local social fabric.

We met friends from out-of-state for brunch. The food was quite good - the kitchen made a mistake on one order. They apologized immediately and had it prepared correctly. The service was very good and very friendly.
This was an excellent brunch. Unfortunately due to a private party we were shifted from the restaurant' s more gracious space into the J-Bar which is more rustic/casual. The menu was terrific and delicious; the service charming and constantly helpful. The only issue was winding up in a less proper space than expected after having reserved. Still a high recommend!

The menu was quite limited and the dishes very heavy. One dish that several people at our table wanted to order was unavailable due to lack of ingredients such as kale. I have eaten there twice before and had a good experience but this time was disappointing. Interestingly the place was empty...perhaps the reservations prompted the lack of ingredients...or maybe it was the reverse.
2+ hours for dinner with no appetizers is excessive. Other than the poor service, everything was good.
We have celebrated 3 special occasions here from engagement to anniversaries and it never disappoints. Great experience time after time.
I would not call it a rip-off - I call it fraud! Advertising as a Gourmet restaurant but serving food like "Denny's" diner - costing an arm and leg. This is Aspen, guys! Just walk a couple of blocks and you find really fine dining!

Very nice ambiance in terrific historic Hotel Jerome abutting J Bar. Great table, service, wine and meal. All of us had a wonderful evening.

This is one of our favorite places in Aspen for breakfast. The Food is so good and the ambiance is so cozy and beautiful. May, one of the managers is always so kind and sweet to us and makes sure we have a perfect experience every time. We love it here!
Went there for a late breakfast with family on Thanksgiving while staying at the hotel. Service was great along with the food. Kids even enjoyed the menu options. Thank you!
After having an amazing breakfast at Prospect we decided we should go back for dinner. This review is for dinner only. We had the salmon and the pork prime rib. Both were mediocre. The salmon had too many flavors, curry, horseradish and the pork was very tough. Beet salad was awesome. Two cocktails each . No desert. Almost $200 for 2 people
Really enjoyed our evening at Prospect. Sat outside, the service and quality of the food was outstanding.
The Jerome Hotel is a lovely venue, and the restaurant takes advantage of that space. The food was excellent: nicely presented and imaginative. We would happily go back when we are in Aspen.
One of us was gluten free (celiac) and they apparently did not understand the severity. On one of the dishes, they charged extra for a equal substitute, and the pork "prime rib" was dry and tough. Our anniversary gift was a yummy bowl of peach ice cream- though they still put gluten cookies in them. They just suggested we pick it off and laughed about it. We ordered a $100 bottle of wine and the manager who opened it for us didn't say a word to us or even smile. The staff (loudly) reset the dining room while we were still eating! Overall, super disappointed in this special night/ and for driving so far to dine here. Just basic service. Not hospitality.
The Prospect was a fantastic restaurant. The food was delicious, flavorful and the charming Hotel Jerome was a perfect backdrop.
We have avoided the Hotel Jerome dining scene for years of almost annual visits, but the recent reviews of Prospect and the menu online enticed us to give it a try. Glad we did, because the cuisine, service and patio ambiance were all superb, and the value fine considering Aspen. Skirt steak was perfect; green gazpacho delicious. Wine by the glass with modest pour was a bit pricey. We look forward to a return.
Cocktails and wine were expensive as were appetizers. The $16 salad was quite small and the $18 gazpacho with a shrimp was small, too. Entrees were good. There was one large loud table that made conversation impossible.
Waiter didn't write our order and got it wrong. It was my daughters birthday luncheon and the service wasn't good. Brought the appetizers out at the same time as our main course and gave it to me as my entree. Didn't get my entree until fifteen minutes after. Asked for dessert menu. Took forever. Also let our dirty plates sit for way too long. On a $150 tab I expect more. Did discount our meal $13. I expect more from Prospect.
Cuisine was very good. We had an outdoor seat and got some added ambiance from a private party nearby with a band. The wine list was good but we were not able have but a glass. Recommend.

Fabulous food in the most amazing and authentic hotel in Aspen! We ate here for our first meal in Aspen and were absolutely blown away. Impeccable service and a really interesting menu. We shared both the veal cheeks and the roasted salmon. Both were superb, but if you can order only one I would recommend the salmon. Perfectly cooked and seasoned. Mediterranean flavors. Yum! Treat yourself to a whiskey in the bar after dinner - you'll feel like a character in a Western.
Great meal... Interesting menu with some East Indian spice to their dishes. Salmon was fantastic as was the vegetarian dish. Kids loved their steak and meatball dish as well.
The dining room is one of the most beautiful in Aspen. The food was well prepared, with an excellent visual presentation and proper sized portions. The timing of the courses was just right...not too long to wait and not a feeling of being rushed. Service was excellent, if not a bit too attentive. We eat out often in Aspen and this is the our favorite restaurant.
The food was not bad, but significantly less than I'd expect for the cost. Red snapper was overcooked, other dishes were under seasoned. Nothing was so poor that we complained, but we won't be coming back.
This was the best meal we had in Aspen. The food was deliouos and beautifully presented. Everything was outstanding. I had the beet salad and Scallops, perfectly cooked. The only reason for the value downgrade was the wine list. The prices are ridiculously expensive. I felt trapped you want wine with dinner but paying 4-6 times the cost seems unreasonable and the price by the glass is even more outrageous. Wish they would offer something a little more reasonable.
