This was an excellent brunch. Unfortunately due to a private party we were shifted from the restaurant' s more gracious space into the J-Bar which is more rustic/casual. The menu was terrific and delicious; the service charming and constantly helpful. The only issue was winding up in a less proper space than expected after having reserved. Still a high recommend!
The menu was quite limited and the dishes very heavy. One dish that several people at our table wanted to order was unavailable due to lack of ingredients such as kale. I have eaten there twice before and had a good experience but this time was disappointing. Interestingly the place was empty...perhaps the reservations prompted the lack of ingredients...or maybe it was the reverse.
In Aspen for ski week and wanted to try Prospect because it has very good reviews
It is an excellent restaurant ... excellent food in a splendid atmosphere. Service was very good

After having an amazing breakfast at Prospect we decided we should go back for dinner. This review is for dinner only. We had the salmon and the pork prime rib. Both were mediocre. The salmon had too many flavors, curry, horseradish and the pork was very tough. Beet salad was awesome. Two cocktails each . No desert. Almost $200 for 2 people
One of us was gluten free (celiac) and they apparently did not understand the severity. On one of the dishes, they charged extra for a equal substitute, and the pork "prime rib" was dry and tough. Our anniversary gift was a yummy bowl of peach ice cream- though they still put gluten cookies in them. They just suggested we pick it off and laughed about it. We ordered a $100 bottle of wine and the manager who opened it for us didn't say a word to us or even smile. The staff (loudly) reset the dining room while we were still eating! Overall, super disappointed in this special night/ and for driving so far to dine here. Just basic service. Not hospitality.
We have avoided the Hotel Jerome dining scene for years of almost annual visits, but the recent reviews of Prospect and the menu online enticed us to give it a try. Glad we did, because the cuisine, service and patio ambiance were all superb, and the value fine considering Aspen. Skirt steak was perfect; green gazpacho delicious. Wine by the glass with modest pour was a bit pricey. We look forward to a return.
Waiter didn't write our order and got it wrong. It was my daughters birthday luncheon and the service wasn't good. Brought the appetizers out at the same time as our main course and gave it to me as my entree. Didn't get my entree until fifteen minutes after. Asked for dessert menu. Took forever. Also let our dirty plates sit for way too long. On a $150 tab I expect more. Did discount our meal $13. I expect more from Prospect.
Fabulous food in the most amazing and authentic hotel in Aspen! We ate here for our first meal in Aspen and were absolutely blown away. Impeccable service and a really interesting menu. We shared both the veal cheeks and the roasted salmon. Both were superb, but if you can order only one I would recommend the salmon. Perfectly cooked and seasoned. Mediterranean flavors. Yum! Treat yourself to a whiskey in the bar after dinner - you'll feel like a character in a Western.
The dining room is one of the most beautiful in Aspen. The food was well prepared, with an excellent visual presentation and proper sized portions. The timing of the courses was just right...not too long to wait and not a feeling of being rushed. Service was excellent, if not a bit too attentive. We eat out often in Aspen and this is the our favorite restaurant.
This was the best meal we had in Aspen. The food was deliouos and beautifully presented. Everything was outstanding. I had the beet salad and Scallops, perfectly cooked. The only reason for the value downgrade was the wine list. The prices are ridiculously expensive. I felt trapped you want wine with dinner but paying 4-6 times the cost seems unreasonable and the price by the glass is even more outrageous. Wish they would offer something a little more reasonable.
The maitre' was clearly enamoured with the couple seated next to us. Despite ordering the $105 tasting menu plus wine pairing, he curtly ignored us while obnoxiously discussing movies with the woman seated next to me. It got so bad, the couple apologized to us. She must have been famous or something but for hundreds of dollars it was literally 2 hours of intrusive conversation on his part. Mostly about George Cloiney and Hail Caesar! As far as the food, first and second courses were delightful. Entree was lacking.
