Ordered the duck and potato gnocchi. Sent duck back and gnocchi dry and overdone. Wine was amazing. Will definitely give it another try when back in the area. Didn’t wow us the first go round.

We came back to Proof after an enjoyable first experience. Unfortunately, we did not connect with our server, Katie. She was distracted and miserable. We came back to Proof because of the experience we shared with first server. He suggested wine per course and dessert compliments. Katie cleared the table and took the bread sticks and unfinished plates. I waited for a glass of wine with dessert but never received. When I inquired, Katie said she thought I was still deciding. Food was outstanding and we were hoping to have more wine with each course, but that would have been too much work for Katie. 😟

First time we went last year was much better. Seemed different tonight. Steak and Duck portions were tiny and service was fair. Also odd they seated us next to the waiter station when the restaurant was nearly empty.

Proof is by far one of the most creative restaurants in DC. I decided to try a vegetarian "carbonara"--the noodles were rutabaga strips made to look like fettucine. The sauce was a cream made from cauliflower puree. Replacing bacon were pieces of roasted mushroom. It was out of this world fantastic! Also enjoyed an amazing soft shell crab in a green sauce that was equally delicious. Go ahead and be adventurous at Proof--you won't be disappointed!

I ordered Brussels sprouts, tuna burger and side salad. The sprouts were great, the tuna burger was cold. They warned me they would just sear it, but I expected the burger to at least be warm. After all, they served it on a warm plate. The side salad was really bad. It was really just a few forlorn leaves of lettuce, not well dressed and just so boring. It was like eating wet grass. That salad alone should give this place a lukewarm review.

Has gone down hill in both food and atmosphere. Seems the current price-pint is aimed mostly at hocky fans who aren't all that interested in what they're eating. Wine list still quite good, but that is probably left over from the old days.

Maybe fun for some folks but not for us.

Ugh. The menu looked so promising, but Proof just didn't deliver. The setting was lovely - dark wood, but plenty of windows, surrounded by wines; we chose to eat outside, however, as it was a warm day and there were umbrellas for shade. The server definitely did not want to be there and chose not to hide it. Extremely abrupt and unfriendly service from her. The busboys were attentive and much friendlier. The wine selection was impressive; but sadly, the white wines were served barely below room temp - on a warm day, with a salade nicoise, this was disappointing. The salads themselves were unremarkable, not bad, not great. The seared tuna and soft boiled eggs were properly done, the greens and other vegetables were appetizer size (not okay for an $18 salad), and the most that could be said of the bland dressing is that it added a bit of moisture. We did not stay for desert. In part because we didn't want to chance another disappointment, and because tour buses seem to park and idle right outside the restaurant. I really wanted to like this place, but $30 for surly service, a lackluster salad, and a tepid 2 oz. wine? I think not.

Proof used to have a great vibe and stellar food, but maybe that chef left and I didn’t get the memo. My friend’s crab dinner was just weird. She wrapped it but I could see she had no intention to eat it. My steak was nothing special. I did enjoy the duck liver pate. At least it was quiet and we had a great time catching up.

I still love Proof, and "worst" is relative, but this was the worst meal I've had there - they've changed the recipe for their gnocchi, and not for the better. Seems silly to complain about a gnocchi dish being bland , but this version is not a winner.

Great space and quiet enough to converse!! The Somm was perfect- knowledgeable, personable, attentive, and responsive. We ended up with a Boca (of which I had never heard) for 23% less than the price we suggested. Very nice with dinner, lean, medium bodied, good acidity, dusty tannins. What’s not to like?!?

Our table service was not as good. Our main course arrived as we had just begun eating our salads. The server said nothing until I pointed it out, then apologized. He should have comped is the one dessert we shared but did not.

The food was good but not so imaginative. Even so, they, a f wine focused restaurant did not have a braised meat dish- surprisingly.

Wine list is great but i found it quite pricey. There are so many good wines that can cost $60 at a restaurant; there is no need to pack your list with only pricey wines. We chose a south african at $95 that was excellent. But....

Very friendly, awesome service even though we were there pretty late. Only had drinks and dessert - drinks were not particularly noteworthy, and desserts were a little hit-and-miss. Loved the petit fours the server brought out, but the blueberries were tasteless.

The service was friendly, attentive, and very quick, which we appreciated as we were 6 on a business meal time. Food was a little disappointing - flavors a bit flat with limited seasoning, and textures of noodle based and vegetable based dishes were a little limp. Dessert was a lemon tart with blueberries that just tasted bland - the crust of the tart was raw tasting not flaky, the "meringue" looked to have been created with a torch as it was browned but melted immediately, and the blueberries and lemon were quite plain without anything to tie the plate together. That said, I had an excellent wine; the list was extensive and there were reasonably priced by the glass options. I would give it another chance for dinner.

We still do not know who out server was. No one took care of us. We asked for help the entire night. The wine order was wrong. We finally got wine after the appetizers was almost finished-because I held off finishing mine until I had wine. We had to request that someone think about the lack of care and do anything, SOMETHING- to make us feel better. We went in the recommendation of a good friend who loves wine and great food. We were in from NYC so we know good service which can be casual, but this was terrible, virtually no service. It truly ruined the meal to have to beg for care. The Manager “forgot” to comp us anything after promising to try to make us feel better. If they had brought a glass of wine while we waited for them to find the correct bottle it would have been enough. Or given us a dessert. Something. I spoke one last time to a server to say we were disappointed that we experienced no acts of kindness and the manager popped up with a lowered bill. I appreciated that but it again showed the lack of being pro-active to give the guest an experience where they left feeling they couldn’t wait to come back.

I love this restaurant and come often as I live at CityCenter. It was busy Thursday night due to the CAPS game. Service was awful. We ordered DUCK and received LAMB, which the waiter claimed to think was what we ordered but he never asked us how well done? BIZARRE. Ordered a side of cauliflower but had to ask for a serving spoon. Ordered a Moscow mule, not served in the copper cup but in a hi-ball glass. Very bizarre evening. Not up to its usual great rating I would usually give this restaurant.

Went to Proof for dinner with two friends; two of us ordered a glass of the Cava Rose. Waiter said it needed to be chilled, could we wait. We said we would, but he never offered it later, nor did he suggest a substitute. He seemed to be pretty distracted by a bigger group that arrived after we did. Food was delicious; two of us had two different salads, for both the dressings were too salty. Lovely atmosphere, food was beautifully presented, disappointed in the service

Not ready for brunch

I want to start by saying that we have enjoyed dinner at Proof numerous times. Great menu and good wine selections. However our recent brunch there was a real disappointment. We would not recommend it.

The brunch menu is limited, but did have some interesting meals that drew us in. One was the duck confit waffles with foie gras butter – Sounds intriguing right? A nice slow cooked piece of duck that melts in your mouth along with some waffles, maple syrup and a spicy sauce. Well, they did not have any duck let alone duck confit so they were substituting with fried chicken. The butter did taste a little different, the waffles were nothing special and the sauce was way too spicy. I could probably get chicken and waffles elsewhere for less than $18.

Another offering was huckleberry pancakes with lemon ricotta frosting. Huckleberries are found out west and in my own experience are more tasty than blueberries. What a treat. It’s not huckleberry season, but I assumed Proof could get them if they had them on the menu. No, they did not have huckleberries so were just using blueberries. We did not order the $14 blueberry pancakes.

We did order a wagyu burger, but it turned out overcooked and the bun was stale. We ordered the cinnamon brioche roll to share for the table with our drinks. It was also stale and did not appear for over 20 minutes. When it finally did arrive, it was with our entrees.

The restaurant doesn’t open until 11:30 am. Typical brunch hours are 10 – 2 so we assumed they would be ready, but it felt like the staff had showed up about 5 minutes before opening. There were probably 25 people in the restaurant, but when I visited the restroom after our meal there were absolutely no paper towels. Someone obviously didn’t bother to check the restroom when they opened for the day.

No duck, no huckleberries, no paper towels, stale breads, bad timing on appetizers and entrees. It seems like brunch for Proof is just an afterthought.

I have been wanting to go here since it opened. Went for brunch at 12:30 Easter Sun., knew i wanted all week the duck confit waffles. Was not too busy but service was slow. Took about 30 min. to get our drinks, asking after about 25min. We started w/churros, which had brown crispy ridges, and then took a bite and mine was completely raw mush through and through. My friends' were under but b/c they were ok with eating them, we didn't complain or send back; but their next ones to complete the order were more raw. No one checked on us. We finally see our server and order drinks & food--after a delay--and wait. About 15 min. later--still NO drinks--our server comes and says sorry, he only now learned that duck confit is 86. I order the Benedict on latkes. He comes back 5 min. later and says sorry there are no latkes, just biscuits. Why did they run out--can I note that latkes is also a Passover thing? I say ok. But I really wanted the latkes b/c i love eggs w/potatoes. So I ask for a side of potatoes thinking maybe they have them, unless there is a potato shortage. He says sure. OK so do I need to go in the kitchen and shred and drain some potatoes for the chef, or what?! One Benedict has gloppy clear whites, so my friend sends it back-w/a different waiter, as ours is nowhere. Mine is cold. I tasted the wagyu burger; it was fab. That and my egg w/ham, ruined by the biscuit though, were the only good bites I had. The biscuit was a good biscuit but with a sliver of the tasso and a runny egg, the biscuit overpowered everything. Sorry, but total miss. And $16 for a biscuit, egg, and tiny pieces of ham, really? We should have left after the wait to order or then the raw churros. The waiter said he took off the Bennie for my friend; I wasn't paying attention b/c I was so over him and the entire place. I still gave him 20% b/c I'm nice. But I regret it. I spent $35 to have an annoying experience that left me hungry and disappointed on a holiday. Will not be back.
