Proof is a wine-centric restaurant serving Modern American cuisine.
The casual, elegant feel to this Penn Quarter destination is reflected throughout Executive Chef Austin Fausett’s menu. Proof showcases the best local, organic and sustainable ingredients in clean, beautiful preparations, an extensive international selection of cheese and charcuterie, as well as a wine list containing over 40 by-the-glass selections and 1,000 different bottles.

Private Party Facilities:
Although we do not have a private space, Proof offers seating for large groups in our dining room with a contract. For parties of 9-20 guests, we offer a 3 course menu beginning at $70 per person (excluding tax and gratuity). For groups of 20 or more, we require a food and beverage minimum, which depends on the date and time you are looking to host the event. A full restaurant buyout is available for groups of 50 or more, where we can offer both a seated dinner, or a passed hors d'oeuvres/cocktail style reception.
Proof can seat up to 14 guests at one table in the dining room; groups larger than this will be split into tables seated next to each other. We are able to seat 85 guests, with room for 125 standing.

Visited for a quick bite before a Verizon Center concert, but often lunch here as well. Proof offers innovation with delicious results. Would have been five stars but for a couple of minor issues---something that was supposed to be served warm came out chilly, the goat cheese appetizer was delicious but a little overpriced for what it was. But these were minor issues.
Would have given this place a 5 but the hostess who sat us seriously put a sour taste in our mouths. After that, great service and great food. The wine selection was amazing and the charcuterie and cheese board was excellent. Both the duck and oxtail entrées were delicious, and side of risotto fries were amazing.
Loved that we could make a meal out of appetizers and salads. The fried cauliflower is excellent. As was the goat cheese flatbread. What really took us by surprise was the raspberry meringue dessert. Waiter was attentive and got us out in time for the theater. We'll be back!
Server helped us get out the door in time for our play, even though we were late. Food was fab. Octopus tender. Hen of the woods mushrooms? Yum. Chocolate hazelnut cake for dessert was divine. Chef is sadly misinformed about the impossibility of getting pasture raised veal,otherwise it was all lovely.
My wife and I came to Proof for an after workout Brunch and we loved it!! The food was absolutely amazing including the Foie Gras Waffle!!! I highly recommend Proof and not just for the food, the service was excellent. It is also in a great location right in the hear of downtown DC.
Fabulous food and fabulous service. The hostess Elizabeth was very accommodating when we arrived early. Our server Mike was extraordinarily attentive and Monica helped us select a perfect wine. If you like carpaccio you should try their preparation. And the halibut also was a fantastic preparation. We really enjoyed our evening!
Our wait staff knew every aspect of their menu and were very forthcoming on recommendations steering us to those items they considered exceptional. When we were about to order too many sides for the size of our group they recommended against it, even though we tip based on the total cost of the meal. One of our favorites, year in and out. Thanks, folks.
What an enjoyable experience as a one-top! Abby's timing and attention was superb. I ordered the Summer Tasting Menu and she helped to provide more background on the wines, as well as local recommendations on where to find them or those that might be similar. The food preparation and wine pairings were delicious and great fun- I felt like I learned quite a bit about the possibilities of Riesling, regardless of former opinions! I will be sure to recommend Proof to friends, both in town and visiting!
We recently dined at Proof to celebrate an anniversary. We both had the summer riesling tasting menu. The food was great and beautifully presented. The wines were paired well with each course and represented a fine sampling of different makers and regions. The service was excellent. We enjoyed ourselves so much that we signed up for another of their special tasting events before we left. The courses included an amuse bouche of a croquette, a latin-inspired soft shell crab dish, bone marrow & foie gras, bacon-wrapped rabbit, and a peanut butter and jelly bar (which was so much better than it reads).
We went to check out Chef Austin's new spot. We love Trummer's and we wanted to see how Austin was doing at Proof.
Overall, the food was very good with service to match. The Som was extremely knowledgeable and selected the perfect wines to go along with our food choices.
The prices were lower than we would have expected. A great value considering the stunning wine list!
