Terrific food, bar and service in a funky dining room. Unique place.
Overall, this was a very disappointing dining experience at a well rated restaurant. I had the octopus appetizer and it was very overcooked. We both then had the tagliatelle with pork belly and clams. When they first brought it, it was clear there were no clams. So we sent it back. When they redid it, it had clams in it but the pasta was overcooked and gummy. They took it off the bill, but we had been looking forward to fine dining. We went there because we were guests of the adjoining 21C Museum Hotel.

Lunch with two of my kids plus a 3-year old grandaughter. Great place for lunch. Not too quiet, but quiet enough that we could talk comfortably. (The three year old was well behaved.) Staff was attentive, just a great place for lunch.
Sat very quickly. The waiter was attentive and gave a great recommendation. Ended up going with the Halibut which probably was the best I have ever eaten.
We had the good fortune of visiting Proof On Main during a weekend visit to Louisville. Everything about this restaurant was outstanding. We met before dinner in the bar which while busy still provided excellent hand crafted cocktails in short order. Dinner was impressive and the service was perfect. This restaurant has the added bonus of being attached to an art gallery so the décor was very interested and unique.
We changed our reservation to a later time, then got in a time crunch. So, that part was our fault. We had to chomp down our food to leave on time.
We felt there was no value for what we ordered vs the menu price. $39 for a 5 ounce piece of halibut, and $38 for a bone-in pork chop is pretty steep. Our meal, with 6% sales tax came to $100.79. No alcohol or desserts.
We stopped by for a quick dinner before a show at Kentucky Center for the Arts. The restaurant was full but our service was great..we shared three small plates ..the lentils were superb... can't wait to go back & spend more time here
I went with my wife for my birthday while in town. Overall the food and drinks were good. Service was simply OK. I would recommend going at least once to check it out.

Meal was excellent, I had the pork chop and my wife had the halibut. Staff was very helpful on suggestions for our meal since we had never been to this restaurant before. Will definitely be back.
We had a lovely experience here. The food was great, very fresh and creative. We had the Roasted Bones, the sugar snap peas, the meatballs, and octopus. The service was excellent, very friendly and helpful. Terrific cocktails and an excellent wine list. We'll definitely be back next time in Louisville.
Came while at a conference. Had a 6pm dinner reservation and got in early by being willing to sit at the bar (which is hideously decorated like a gay bar) for a while. Maybe it is and nobody told us. Food was okay. Catfish dip flavorless. Bison burger was good not great. French fries were boring. Bar waitress was better than the dining room. Would not recommend.

We went to this restaurant after a day on the Bourbon Trail. I am not sure the two are particularly complementary. We were tired and a little grungy and this was definitely a much more upscale place. The food and service were very good. We just felt we might not have met their standards for their guests.
Great service— a server from my meal the night before came up & said hello! Catch of the day was oven roasted halibut & it was spectacular! Proof is my favorite restaurant in Louisville.

Monthly dining with a new 13 year old foodie. Everything was really good, staff was outstanding!! He really enjoyed thought the place was "swanky".
First time and it was great! Really great. Salmon dish for me and sunchokes for my friend. A gorgeous amalgam of tastes on every plate. This is a must go in Louisville. And there’s an art museum in the adjoining hotel. So fun.

I would not hesitate to try Proof. Cocktail's were excellent, but very slow to come out in time. Sides were of good portion, but a bit salty (brussel sprouts). Corn bread was excellent!
The above were the small issues we had, but overall, it was a great experience and I would come back again. Had the salmon, braised pork (excellent), corn bread (excellent) and a side of brussles. Definitely try!
This was a last minute brunch decision, our previous brunch visit was not great, but I'm so glad we gave it another try because this time it was wonderful. Service was outstanding, the dining room was gorgeous and the food delicious with a really creative menu. Proof is always a great spot for dinner downtown, and now I'm back to endorsing for brunch as well!
The hotel museum attached to the restaurant was amazing. The decor in the restaurant is amazing. The staff was extremely friendly. Food was pretty flavorless. I got the shrimp and grits and doused it with hot sauce, which was fine. We got fries for the table and they tasted a day old and reheated. The bread pudding starter was good though!
High end smart and sharp. My salmon with egg salad sandwich was lightly seasoned and delicious. The side salad was a flavorful compliment. We were seated next to another table but spaced enough apart to maintain separate conversations. Don't skip the drink menu - from Lattes to lemonades every selection is deliberate.
My wife wanted to celebrate our 2 year wedding anniversary, and picked Proof on Main. We were on time and were seated right away. We were hoping to get a corner table or something that wasn't out in the middle of everything, but we did.
I ordered the ribeye medium and was very disappointed. It was over cooked and dry. My wife ordered a plate that had a few different cheeses and some crackers on it and a burger and it was ok.. I sent my steak back and ordered a hamburger instead, and it was good. Our bill, even without the ribeye was $78 including the tip. Very expensive.
Not sure I can recommend . I guess I'm just not used to a place like that. :-)
Three of four of us were delighted with the food and service. One was disappointed in the salad, but really should've asked for information about the dressing.

My boyfriend and I celebrated our anniversary at Proof. Our dinners, both pork, were phenomenal. Our waiter, Louie, made a wonderful wine recommendation to paired with our dinner. The octopus appetizer exceeded expectations. Staff brought us a complimentary dessert in the spirit of our celebration.
All in all, this is precisely why Proof is my favorite dining experience in Louisville.
As always, the food, cocktails, and service did not disappoint! We invited a business associate and her boyfriend to dinner and theater who had never been to Proof on Main. They were blown away! Hands down the BEST creative cuisine in downtown Louisville! Outstanding charred octopus (my personal favorite), Cranberry Pot Tart (chicken pate uniquely prepared) tantalized our palates during cocktail hour while we and our guests devoured the Spaghetti Squash Ragout and Snapper entrees. Never enough room to fully enjoy dessert but we managed to put a hurting on the delightful chocolate cake concoction brought forth from the creative chefs. Once again, we left will bellies bulging and smiles on our faces!

Very disappointed with the food overall. The catfish dip appetizer was good, but the snapper was horrible. Service was good, but very unhappy with management. Our bill was close to $150, with main course $78 alone and the MOD only discounted $19 for undercooked fish that was inedible. Was excited about eating here but won’t be going back.

In addition to the inspiring museum art pieces, this restaurant has a fabulous menu of delectable goodies for every type of person. Try the beet salad..(even if you don't like them) to die for. All the rest was superb as well!!!
I'm going to be the negative voice in all these fabulous reviews. Maybe the night my husband and I dined the kitchen fell short. The atmosphere is arty eclectic, if you're into buffalos and vintage indian photos, this is your place. The noise level is low, perfect for conversation. Our waiter, although good, was pushy at the beginning. The wine pours were generous, the wines by the glass were very overpriced. I ordered two sides for dinner, the grits and brussel sprouts, the presentation was nice, both dishes were over salted. My husband ordered a special which consisted of shredded pork and some kind of pasta, he remarked not enough pork. For dessert we ordered the sorbet trio and all three were no good - really! The smoked sorbet was truly awful. After dinner we walked around the hotel and enjoyed the art, if you visit don't miss the bathrooms, definitely interesting.
