I actually don't have much to say about Proof. You'll shortly read why that's a bad thing.
As a dinner for two, we each had a cocktail, the charred octopus, and for entrees the hen roulade and the lamb. That meal costing a good bit over $100, one would expect it to be really good, right? At least memorable, correct? Something, at least something, that would make you say, "I want this again." Unfortunately, the best I can give is that it was probably near the top of the, 'most flavorless pieces of meat I have eaten' category. Don't get me wrong. Both the hen and lamb were cooked really well, but also devoid of flavor.
Outside of the food, the service was good, staff were friendly, and Proof had a quiet, enjoyable atmosphere.
If you want a meal you won't remember, and not in a funny way like The Hangover, then maybe Proof is for you.
We went for Sunday brunch and LOVED the feel of the place off the bat. We had wonderful food (we split the French toast and pumpkin bread appetizers and fresh fruit + cocktails) and service, including coat check and a bathroom that's just a quick stroll through the adjacent modern art museum. Really a fun experience. I'm definitely coming back here next time I'm in Louisville!
Lovely food and wine options in a unique and intimate setting.
Excellent service, innovative menu, delicious dinner. The traditional menu items (chicken, beef, fish, vegetables) are all prepared with an non-traditional flair. My date and I especially appreciated the bread served with dinner, as it was not sweetened, as many restaurants in this area serve (sweet rolls or cornbread). The seating is close (but not cramped) - this gave us the opportunity to meet and chat with couple sitting next to us. We both agreed we want to return soon and sample more of the excellent fare at Proof on Main.
Great food and attentive service
Excellent find for foodies. Three of us doing an Urban Bourbon Trail needed some food, and Proof on Main was perfect. The Charcuterie Board included pork tongue and head cheese, along with unique cheeses and jams. The wine list was broad but not necessarily expensive. We tried fresh fish, duck, and a veggie platter. All of us were pleased. Walking through the art hotel lobby and bar was engaging and enlightening. Looking forward to returning!
It was a special Christmas dinner for us and we thoroughly enjoyed the ambiance and the food.
The waiter was attentive when he was around, which was not a lot. Food was good but the service lacked and made the experience unenjoyable.

2nd time here. Service above and beyond expectations. We were sat tightly between two other couples , though there were other two-tops nearby without next door neighbors.
Portions between too large and skimpy depending on item.
Too many items on menu borderline: blood sausage bolgnese, Duck gizzard and heart pasta, both fish dishes served in broth. Lamb is an odd combination that resulted in puzzled diner.
All in all, not sure I can be convinced to return.

Terrible. We were offered 1 Cab by the glass with dinner. When we received the bill, it was $24 per glass. Food was mediocre. Management offered to charge us for a bottle as compensation. Big deal, we didn't drink a bottle. Go elsewhere.
