Using locally harvested ingredients, the menu contains options such as causa jar, tres tomates and ensalada rustica. Beyond greens, the menu at Once by Chef Ricardo Zarate also features meat entrŽes such as la pollada, lomo saltado and ajiaco de lengua. Once by Chef Ricardo Zarate also offers a variety of seafood options. These include ceviche criollo crocante, kampachi tiradito, chaufa paella, pescado parrillero and charcuterie mar y tierra. Each of these options is created with the freshest local ingredients by the chef.

We were in Malibu and suddenly wanted to have Peruvian food. We kind of randomly found Once in Yelp as the closest Peruvian restaurant from where we were and booked through OpenTable. We had no great expectation, but surprisingly we were greeted with enthusiastic service by every staff and the food was excellent. I really recommend this restaurant.

We've been anxiously awaiting Chef Zarate to cook his great meals again! All dishes we ordered were as tasty as we hoped for! We love it when Chef comes out to say Hello and thank us for coming!

Food was classic contemporary Peruvian,with the best CA ingredients, and a beautiful presentation. Fantastic. Service was friendly but slow, but it made the experience more enjoyable, not rushed. We are delighted that such a superb chef would host a casual place. A wonderful experience, though the noise level was trying.
