I met my daughter there for dinner. I looked at several best rated restaurants online and picked Notch8 because of central location, parking options as well as I am coming in from Bowen Island. But I'd say mostly because I thought your dinner menu looked good. So kudos to your chef...they brought me to you. I did look at the menu of the #1 rated by someone ( as well as many others) restaurant at The Georgia. But I just didn't see anything that really appealed to me. And I could not see a dessert menu online. When I go out to dinner I absolutely want a good dessert menu. It's a treat. And in my opinion the desserts should be rotated, deleted and added to on occasion. Especially if I decide to choose a particular restaurant to frequent.
I ate the Shoots, roots and leaves I think it was called with Bee Pollen. I loved it. It was healthy, light yet substantial and beautiful to look at. I loved having a vegetarian option right on the menu instead of having to ask for something to be adjusted.

Expected a little more given the pricing. Food and service were ok, nothing out of ordinary. I gave a note , asking for a quiet corner for a romantic bday dinner but we were sat at a normal location in the middle and the waitress did not mention anything about the occassion.
Dinner was horrendous! Would never recommend this place.
There was a foul smell like dirty dish cloths coming out of the kitchen and they had to change our table. That didn’t help because the smell kept coming and it was nauseating. The food was also horrible, lacking of flavour and over cooked. We had to send some dishes back because they even burnt the sablefish we ordered. Service was poor as it took 25 mins for our waiter to even come to get our dinner orders and we sat there trying to wave her down for hours.
Celebrating a 9th birthday, it was made truly memorable with Chef Will touching the table turning it into an interactive experience talking us through the campfire tartare dish including black truffle and smoked egg yolk.
We were blown away by the dessert platter created for a special occasion which was deliciously indulgent and a perfect way to end our evening dinner.
Thank you for such high level hospitality from Chef. I will definitely be recommending to friends and family!
The food is very good here focusing on west coast and local ingredients. Good choice of various seafood meal. Food is well prepared and well served. Also have a good wine selection though I find their prices a little high. Only downside is the ambiance. It is a lobby location and feels cold and is noisy and echoey. Not a good place for a date but fine for business.
Fantastic service! We went in to have afternoon tea as we had dinner reservation elsewere that night for my mom's birthday. However we didn't know that the last seating was at 3 for the afternoon tea service. So we were seated for dinner instead. We just had bread, soup and salad but we never felt any pressure to order mains or dessert. And during our stay we never felt rushed. A nice surprise was the live music - a guy on acoustic guitar started playing and singing around 5. Finally, there came a birthday cake slice with candles compliments of the chef! My mom and I were both surprised. It was a really nice gesture. I know now I'm having my birthday dinner here! Thanks Notch8.
We went there for a friend's birthday, it was a very good dinner. Not a big menu for food but all dishes are creative and special, they are all delicious! The sea-sar salad is so special and unique, I strongly recommend everyone to try. Wine menu is big, they have lots of good selections. Overall this is a good place for friends gathering or any special event.
my girl friend and I were so impressed when I took her there for her birthday; therefore we took my friend and her whole family from China to your restaurant. I bragged about the place ; unfortunately the presentation and the food though still good, came up a bit short than when I was there with my girl friend. The difference in the lamb chop was more obvious meaning they were not great. But I have a good memory of my first visit to your restaurant with my girl friend. That counts . Thank you

We waited for a bottle of champagne for 20 minutes to start with, our glasses were never refilled in lounge at all. When we moved to table things never improved. The food was quite good but not good enough to compensate for the lack of service. We waited for 20min for our packed leftovers to return and decided to leave and cut our losses.
My husband I went here for our anniversary - each year we go to a different Fairmont Hotel for our anniversary as we were married at Lake Louise Fairmont. Our dinner at Notch8 was our BEST anniversary dinner yet (6 years). The food was incredible - every course - the ambience truly lovely, and the service was superlative. We highly recommend Notch8!!
The food was excellent, very tasty, cooked perfectly. Never take the lingcod off the menu. The presentation of the food was amazing, very beautiful, a work of art, you almost didn't want to eat it. But of course it was so delicious I even wanted to lick my plate at the end!
The ambiance was alright, I didn't like that we were sat near the walkway "window" of the hotel, I prefer a more private feel in a restaurant like that. The restaurant is well decorated and very pretty.
The service was prompt, great timing on the food, didn't take too long. This works great for business lunches where you don't want to be out for too long.
The servers could use some work on their professionalism, and appearance. I would imagine in a restaurant of that price and quality you would want the wait staff to reflect that image. Some of the staff didn't even look like they tried to do their hair.
I think with good training and high expectations the restaurant would be 5 stars all across the board. It really makes a difference when the small details of the staff being very professional, very well versed in the menu, offer some suggestions and attentive to the client, it makes the difference between a good and amazing restaurant.
