Merlo features authentic Bolognese Italian and serves the freshest ingredients possible, many imported directly from Italy. Executive Chef, Luisa Silvia Marani, takes great pride in her handmade pastas, homemade sauces and her ability to acquire the freshest ingredients available. Each course is made to order and requires accurate preparation time. Merlo is a slow-dining establishment; so come for romance, or for an important business dinner. Merlo on Maple was recommended by our hotel. It was the best meal we had on our 4 day trip to Chicago. The fish was fresh. The salad was so delicious. Heather was out server. She was excellent. The ambience was wonderful. A delightful old brownstone. Bar on first floor restaurant on second.
The food was superb.
Recommended as a great place to take customers and they were right. Food was excellent and the atmosphere very good to discuss business specifics while enjoying the meal. The only negative was the buffalo mozzarella appetizer. There was so little mozzarella that we felt we were short changed. Other appetizers were excellent and no complaints.
Went to celebrate my husband's birthday while visiting Chicago. Everything was fantastic! It's a restaurant with exquisite food, experienced and professional wait staff, and a cozy and romantic atmosphere. The wine list is extensive and our waitress helped us find a wonderful match for our meal choices in our price range. This was my second visit and both times were just wonderful.
Excellent food! Been here many times. One of my favorite restaurants in Chicago. My only complaint is that I asked for gnocchi with bolognese sauce and they wouldn't do it for me even though both bolognese sauce and gnocchi were each on the menu. A restaurant of this quality and price should cater a little more to specific requests where possible. I had fettuccine with bolognese but left feeling disappointed. The waitress could have asked the chef but didn't. If I wasn't on a business dinner I would have pressed the issue.
Cute bar. For dinner the four of us were directed upstairs. Perhaps short staffed that night 'cuz our service was a bit disjointed. Our food was not hot when it arrived - perhaps from another floor? One of our dinners was dropped to the floor before delivery and needed to be re-ordered. The three of us had to begin for obvious reasons. No adjustment to the final bill. Pasta was great had it been hot would have been better. Chocolate dessert was divine. I still would recommend in the hope that we were there on a bad night for everyone.
This is one of my favorite restaurants in the US. Try to dine here whenever I'm in Chicago.
Food is outstanding and the service is unparalleled. The townhouse setting in the middle of a major city makes the dining experience even more interesting. The menu is creative, yet simple. The wine list complements all that is served
When you study the preparation of the food you will find this is exceptional food which certainly was the case throughout dinner. Everything is made fresh, daily, from scratch, and is over the top in terms of taste. If you’re a foody, don’t miss out on this experience.
Been to Merlo on Maple several times and it always impresses me. The food is amazing and the service has been perfect. You can't go wrong! The restaurant is located in an old multi-floor house which is beautiful and cozy and the food is outstanding. Made to order pasta which is absolutely delicious.
I can't wait to go back!
northern Italian authenticity
amazing pasta dishes, sliced porcini mushroom salad was outstanding. seafood special was fantastic with clams, mussels, fish, shrimp, langoustines in a broth - just amazing. pasta with truffles unbeatable. no room for desert

My expectations were not met unfortunately. The menu had wonderful items, but having had some really wonderful Northern Italian food before this was just ok. I would have maybe rated it higher had it not been so expensive. Pasta was the best of the items we had. I would maybe give it another try but there are so many other great restaurants in Chicago I likely won't make it.
Everything was perfect for a celebratory meal with colleagues: food and wine were fantastic; I especially recommend the Dover sole and the gnocchi with truffles. I appreciated the ambiance and quiet atmosphere, good for conversation. Service was great. And I love the roses everywhere.
Previous posts warned us about pricing on specials so we made a point of asking. Overall very pleased with the meal. Very quiet Tuesday night which can be a little risky but the we had no issues with the service or kitchen. Excellent wine recommendation within our price range. Expect to spend $200 for dinner and wine for two but cost could go higher.
This was my first time at Merlot on Maple......Kim our bartender was friendly and recommended the Barolo as a wine choice, a spectacular recommendation!
Once we sat down to dinner our waiter was attentive but not overbearing! We started with a appitzer of Figs & Prosciutto it was heavenly!
As for the main course I had the Taglioline paglia e fieno , handmade green & yellow thin taglioline w/ veal, prosciutto ragout, hard boiled quail egg with truffle oil! It was prefect in every way!
My friend had the Carbonara do Parmigiano Reggiano & Prosciutto w/ black summer truffles! Another fabulous choice!

I would 100% recommend Merlot on Maple for a dinner after work to a special occasion dining experience!!! We will be back!!
Have eaten at Merlo quite a few times. On recent Friday night the place was quiet and we were looking forward to a quality dinner. You cannot go wrong with the pastas here and lot of them come with fresh truffles. The special on this night was dover sole. This is a rare fish in Chicago. My friend ordered the dover sole and I stuck with the staples of pasta and anteprimi. The waitress was nice enough to go over the specials without mentioning any pricing but we assumed the fish would be pricey. Little did we know how pricey!! $72 for the dover sole is an absolute ripoff and then not to alert us is a true white collar crime. This place can be like that. They just assume that if you are dining there they can charge you anything and in most cases the diners don't care. BUT $72 for a small filet of dover sole?? That folks is just arrogant underhandedness that takes the cake. So be warned do not let them off without asking about pricing on the specials. This is by far the most expensive fish in Chicago. Other places that serve dover sole are less than $60, so this was just criminal.

Every time it exceeds our expectations. The figs with prosciutto was sooo good! The handmade gluten free pasta tastes like the real pasta! I will only eat pasta from Merlo. The specials each week and the exceptional service keep us coming back! Highly recommend for northern Italian food at its best!
