We were late for our reservation thanks to the I-70 traffic. I called the restaurant and our table was waiting for us. Our server was excellent, when we first arrived we let her know that we were anxious about getting to a show and she said she’d let the chef know. We actually then asked to slow down the service because the dishes were arriving so promptly.
We ordered the Omakase chef’s creation menu. It was fantastic. The Wagyu beef was impeccable

As we were there for a special occasion, unfortunate that we were surrounded by kids which ruined the ambiance- just would have appreciated if someone asked as we were there early Enough with a lot of empty tables that we could have been seated somewhere not in what seemed to be the “kids” section for such an expensive meal. Certainly changed the ambiance.

We had big expectations going into this restaurant since it was my first time to Matsuhisa even though I’ve been traveling to Aspen for years. I had never gone before because I figured it’s the exact same as the Nobu chain. Well, it is the same and probably not as good. I don’t understand the hype. Yes, it’s tasty, but it’s Nobu, so it didn’t make it as special. On vacation I prefer new dishes than the same ones and flavors from that at home. The crowd was fun and the service was nothing to argue. We would go back, but more for the environment not the food.

Great food and vibe, we always come here when we visit. Overall not so family friendly unless you come early and sit in the back.
Horrible service. Done with Matsu. Way too many other good places these days and service must meet price.
We had to take food to go bc it took so long compared to other food. and he forgot some of our order.
Never came to check on us. Bus boy was on it way more than our waiter. Was a painful experience.
I love the food at Matsuhisa but the noise level is intense. Worth it however to have the Salmon New Style. WOW.

Simply put: it’s not worth the premium price. $500 tab for what would have been $200 anywhere else. Decor is dated and cheap; servers are trying to hustle patrons through quickly; menu is simple.
Amazing dinner. The quality of the fish is amazing. Only proble is the Uni is great and we went ttwice and they had run out.

I feel the restaurant is overrated. I've had much better Japanese food in the Front Range. The prices are ridiculously high, the place is loud and overcrowded, the service poor, and one of the dishes was so salty and overcooked we had to send it back.
I would open with the food is fantastic, but would warn people about getting there at 6 pm which was our reservation. We arrived about 10 mins early and were told we had to wait in a small corner by the bar next to the restrooms. We were confused until it dawned on us the restaurant does not seat anyone until 6 pm their stated opening time. Well at 6 pm they proceeded to sit about 100 guests in to the tiny dining room and all the servers went to work. Having worked service industry this is disastrous and showed by the way we were treated by our waitress. The food runners were fantastic. Our waitress did not come check on us until after both appetizers and two of our dishes had been finished, we were about 3/4 of the way thru with our final course when she asked how is everything. We said fine and finished. When we asked for the check she slammed it on the table as she was running by. I say this to let everyone know and the management that putting that kind of stress on employees and clients is uncalled for. You are not Disneyland at opening time. I will never dine here again and will make sure to steer my friends to any of the other fantastic dining establishments in Aspen.

We had a memorable experience. We completely splurged and ordered Wagyu A5 beef, king crab tempura, sushi combo, black cod miso, and eggplant miso. Everything was beyond delicious and the service was great. It's so awesome not to be disappointed when going all out on ordering the expensive dishes. Definitely didn't regret it. I'm telling you, that Wagyu A5 beef though, I'll be thinking of it for a long time to come. I hope to have it again some day...
Food was good. Creativity mostly with the entrees and not as much with the appetizers and desserts. Our waiter was attentive. Two complaints --- a server picked up one of our appetizer plates with food still on it to take it away without asking if we were finished. As she was about to walk away, I told her that we were not finished. Instead of placing the plate back on the table and apologizing, she just asked who wanted to finish the appetizer then handed it to them and took the now empty plate. My second complaint was our shaved ice dessert. We were given the options for the available fruit syrups that could be placed on that dessert --- Strawberry, Passion Fruit, Green Tea and Blueberry . Last year we had Blackberry syrup with crystalized ginger. I asked if that was still available. Our server went to the kitchen to check and came back to our table and told us that it was available and I requested that flavor. The dessert arrived and there was no ginger. At first I thought that I was just missing it in my first several bites then realized that it was not there at all. For a restaurant listed as $$ ($20 for a small skillet of cauliflower), I would have expected that the price would include outstanding service.

This is one of the best Japanese sushi restaurants I've experienced . The sashimi and sake were enjoyable. With many traditional sushi picks and some surprise new sashimi plates. My wife has never been a sushi lover, but the experience at Matsuhisa has change that. Thank you for a wonderful evening.

Maybe it was off season - yet very average experience. You expect everything you order to be great...fair to poor is how I'd best characterize the food Sat. night.

Quality was not to their usual standards...very disappointed in the food..shrimp was watery...crispy rice was hard as a rock... vegetable tempura was not fresh.. only the cod was eatable..
...from start 2 finish, all aspects of a great dining experience were achieved! the off-menu crispy spicy tuna was so good, we ordered more...AND the passion fruit shave ice is a MUST dessert!!
Goff was just OK with the exception of the new style sashimi .. that was best part . Signature black cod dish was over cooled , sent back and second piece was also on edge of being cooked - pieces were too thick on general and sauce was thick and too sweet.
Service with Elizabeth was great !
