Matsuhisa Vail can accommodate up to 200 seated inside the restaurant, and another 60 seated on the patio outside we can tent the patio for larger groups. Within the restaurant there are various private dining options, including the fireside lounge (seats 14) and a private dining room (seats 40).

The food was delicious and the staff was attentive. Unfortunately, the bottle of white wine we ordered was served at room temperature and wasn't able to be mostly chilled until nearly the end of the meal. When we brought it to their attention, the staff did apologize but did not offer to bring out a glass of wine or something while we waited for the wine to chill (for the next 20 minutes).
I'm not sure if it was just because this was off season, but should have been noticed before the bottle was brought to our table.
This was our first time to the restaurant and it was an amazing experience presentation of food was outstanding and the service impeccable and the food wonderful since it was off season we took advantage of some of the specials which was great I highly recommend this place
Fabulous from the start to the finish. Service was spot on, friendly and knowledable. The menu may be a little difficult to understand at first but your server will guide you and explain any dish to you perfectly. Every dish was perfectly balanced and the sashimi was some of the best I have ever had. We will back!
The food is good to great, but even though there appear to be 3 people waiting on you, you still feel as if no one is waiting on you. When you ask what comes with a meal and you are told, "Nothing." But there are things you can order such as rice and yet no one says anything until they are picking up the plates and then they say, "Oh, yeah, you could have ordered rice, most people do." So, Asian Cod was fantastic and would have been even better with rice.
I’ve been go Matsuhisa a few times. We did the tasting menu for $45 which was a great off season deal to try. We also had the lamb chops which was a great additional appetizer to the tasting menu. The lamb chops were spicy with Peruvian type of spices. The sushi was all fresh as expected from Nobu. The only thing we didn’t care for was the steak on the tasting menu - it was nothing special. The crab leg was delicious though. The dessert was amazing. Thanks for a great night!
Just an absolutely incredible experience celebrating my girlfriend and my anniversary. We were a little intimidated by the menu, I didn’t want to miss out on any of the amazing specialties by picking dishes I knew, so I put all the pressure on our waitress. She came through, and more. She picked out 6-7 sushi dishes for us, each better than the last. We had an unforgettable meal, one I know we won’t soon forget.
With all the hype that surrounds this Vail staple, we were thrilled when it lived up to it's reputation. Fantastic waiter that was well versed in everything on the menu from cocktails, wines to all the food and the specials that were offered. There was so much to try so we took our server's suggestions on several items and they were some of our favorites! Hope to make it back!
Outstanding dinner!! This was our second night in a row and everything was perfect from start to finish. We met the GM of Matsuhisa/Vail (Jordan) who was extremely nice and very attentive to everyone in the restaurant. He set the tone for a terrific evening. We had multiple courses and each one was delicious. Our waiter Antonio was excellent. Every year when we come from California to Vail we make a point of coming here. Matsuhisa is always first-rate!
We enjoyed our visit during restaurant week. Food was amazing. Lots of seating options from loud energetic to cove with booth where we sat. Servers were a little distracted and maybe overly busy. Didn’t feel the “love” as so many others in Vail. Overall I’d return just maybe not right away.
It was my husbands birthday. Made reservations way ahead and mentioned this in the notes. They tried to sit us sandwiched in between 2 other tables inches apart. When we asked for another table the hostess was very rude. Our waiter made up for her rudeness and was very kind. However, we were very disappointed in the quality of food and the hostess kept coming over to our waiter telling him she needed our table. Won't go back or recommend.
Highly anticipated and didn't disappoint. We went all out and sampled from the entire menu but if you were more price conscious you could definitely enjoy a wonderful meal without breaking the bank. The wine list is extensive with bottles of all price ranges. This is such a special place. It's approachable and family friendly. I highly recommend.
Matsuhisa is our "go-to" when visiting Vail. The scenery is spectacular (IF you are lucky enough to get a prime seat) the service is excellent and the food is outstanding. Though the quality and portions have been much better in the past, it is still the best meal you will get in the Vail Valley.
Knowledgeable and attentive staff takes great care guiding you through a no miss menu. Beautiful scallop wrapped artfully and perfectly cooked was a great start to the meal. Seafood Taco were inspired and genuinely delicious. If you're hungry there are sooo many delicious choices, and while you might feel a bit heavier for the meal, at least your wallet will be lighter!!
Overall we had a very good meal. Almost all of Matsuhisa's menu items are small plates. It gave us an opportunity to try a lot of different things. My wife and I ordered about 8 items. I'd say about half were great the other half just good. That is the down side of being able to order so many items. It's hard to reach great with every plate.
We visit Vail often. This is probably the best seafood centric restaurant in town.
Matsuhisa is a fabulous restaurant. It is a bit pricey, but the food quality is totally worth the splurge. Great wine list, great cocktails, great sake. There is a sushi bar for people who dont want to wait. So many great dishes, my family eats at least 1 meal here everytime we come to Vail.
We were out celebrating my new job. We had a reservation and the restaurant wasn't busy and they sat us next to the server station and the bathrooms. Not a great start. We asked to move and they did move us to the front by the open doors where the views were incredible. After that things went smoother. Great view, good service, but it is pricey for what you get.
We have had the opportunity to visit matsuhisa/Nobu in numerous cities. Although this was our first Vail visit it will definitely not be our last. The atmosphere is Modern and fun! The menu
Is amazing and has tempting delicious food that would fit most everyone. The wine list, cocktails were great . The total meal and service was exceptional!
Matsuhisa is one of our favorite Vail restaurants! We always ask the waiter waiter for suggestions and this time he scored with a seasonal off the menu roll - the Teradita, white fish with a chili paste that was out of this world, a little spicy with bomb flavor. Our other to die for choices are the Broiled Black Cod with Miso and the Yellowfin Tuna with Jalepeno. Not your typical sushi!
