The food was well executed; however, the service was lacking due to overwhelming arrogant attitudes with the hosts and our waitress. We came to experience Japanese fusion, not the attitudes. We won’t be back again when we visit Vail.
Same menu as Nobu in general. Nothing special. Was very disappointed about the sushi. For the price, I expected top class sushi. The rise has a hard crunch in the middle and not done right. I am sure this is the standard of Matsuhisa. Very poor sushi.
Best sushi in Denver/Vail. TK40 Sake is amazing and service was excellent.

Pretty good sushi but not the best, loved the Miso soup and tempura roll but the shisedo pepper specialty roll we had was just so so. Service was stellar! Would definitely eat here again and try a few more rolls.

Absolutely amazing experience at Matsuhisa! The service was second to none, the food was just outstanding, nothing was ordinary. Great experience and definitely would come back again.
Having been to a number of Nobu restaurants I was ready for a treat. What a very expensive disappointment. Can’t say that any of the omikase tastings was memorable and most were below average. The sushi course and miso soup (really? Miso soup?) was uninspired for even a corner sushi restaurant. Service was good and is the only reason I didn’t list as an overall one star. I will warm all my friends and family to avoid this overpriced (even for Vail) disappointment. The sushi over by the Sebastian is far superior. I’ve never regretted a dining experience so much.

Great dishes and great services. We were fortunate to get a table in a relatively small alcove (just one large table on either side of us) otherwise we find the restaurant seriously loud and cramped for such a large place. We loved our different selections and also that we were able to order as we progressed with our meal. Among other things we had the wild yellowtail dish and the wild white raw octopus - great textures. A special treat was the desert of a rice pudding topped with fruit and some crunchy oats.

The portions are small, the food is good, nothing special. However, if you walk out spending more than $100 on the meal without even ordering drinks and the food is just “good” it is a bit disappointing. Sushi is same as what you would get at any strip mall sushi joint, not bad just good.

Ask about the specials of the day. On the night we went, we had the amberjack tuna with white truffle shavings and miso crumble (not sure of the "official" description of this dish) in a yuzu vinegarette which was AMAZING. We were glad to be able to enjoy one last truffle dish this season.
What a fantastic restaurant! We loved it. The service was very, very good and the food was incredible. We go to Vail frequently but had not yet experienced the divine food at Matsuhisa. It will be a "must go" to restaurant from here on out!

All four of us enjoyed our dinner and said we'd come back. The format is a little different as it's designed as a restaurant where food is shared. That works for some groups and not for others. Since I eat a ketogenic diet and watch what I eat very closely, the shared food thing usually doesn't work for me. It didn't work for any of the four people in our group, but our server - who was wonderful - quickly adapted to our style. They bring out the food as it is ready, very much staggered, and that can be off putting for some people. But, the food is all really good. Creative and excellently prepared. My wife had some scallops that she says were maybe the best she had ever had. I had sea bass with black truffles. We shared a truffle salad with shrimp, and we had some assorted starters. We weren't at all rushed, enjoyed the surroundings, and thought the restaurant was comfortable and attractive.

This would’ve been a 5-star rating if our waitress didn’t take it upon herself to hold up my sushi order until we were almost done with our dinner. When I initially inquired on whether the butterfish dish came with rice, our waitress informed me that it didn’t but I could order a side of rice so I said that instead of the side of rice I’ll order a California roll.
Our miso clam soup cane, then our main dishes arrived. I slowly ate my butterfish and my king crab tempura, waiting for my sushi. At one point, my boyfriend and I both stopped eating our dinners altogether waiting for my sushi, all the while my food was getting cold. Our waitress never stopped by to check on how are meals were. She wasn’t the one who delivered it either, so i expected that she at least see how our food was tasting, if my boyfriends lamb was cooked to temp, etc. Finally she cane by and asked how we were doing and I informed her that we were still waiting for our sushi. She then went to her ordering system to order it, when she returned I asked her if she just ordered it and if so, I didn’t want it if I needed to wait from that point. She went on to explain that she was timing it because we had so much food on our table and that she was planning on bringing it as my third course! Was she not part of the conversation regarding the absence of RICE with my meal?? Why would she assume that I would want my sushi after my miso soup, after my dinner of butterfish and tempura? She should have asked.
The food was excellent! I just wished I could have enjoyed my dinner with my sushi. Too bad!
Great food but sadly that was overshadowed by two extremely unfriendly hostesses. Rude would probably be a good word. This restaurant seems to want to give a select few the impression that they are dining at a really hot restaurant. Sadly, the hostesses judgement is not doing the restaurant any favors. I enjoyed the food but was not pleased with how we were treated or how we saw others being treated. I will not dine there again.
Tiradito was excellent, sushi is always fresh and there’s not a bad dish to be had.
Great experience - nice space in center of village. better food than Aspen location - “normal” portion sizes vs the “tiny” portions in Aspen. Great quality, great service, daughter celebrated her birthday, waiter created a deconstructed bento box with birthday wishes on it for her - she was thrilled. Best Nobu/Matsuhisa experience I’ve had in a while- will be back!

Great and inventive Japanese cuisine. Sushi the likes we've never had before, as well as terrific tempura and a great modern vibe ambiance.
WOW! Are there enough platitudes for this amazing fine dining establishment? I don't think so. Everything was absolutely perfect. From the service, which was impeccable, to the food. I cannot honestly point to a single issue. We tried the seasonal tasting menu, a long with several suggestions our server made. The fried crab in garlic chili sauce, the cod fish, the sea bass and the shishito peppers were all outstanding. To end the meal we had the mochi ice cream and kakigori. This is a shaved iced dessert that is an absolutely must try. Over Vanilla bean ice cream, there is a big pile of shaved ice. This is served with 2 jars of syrup. One is mango passion fruit, and the other is condensed milk. These are poured over the ice. Embedded in the bottom are small pieces of mangoes and pineapple. Oh my! Heaven.
Such a delicious meal - one I’ll be sure to remember. We took lots of recommendations from our knowledgeable waiter Ben & we weren’t disappointed at all. 5 stars!
Had a reservation at 8:30, not seated till 9:10. Sat down and no one came to even get our drink order for about ten minutes. Service for this level of dining was not good. Not given an apology or anything? Very rushed. Food was amazing but wasn’t a relaxing meal.
We had a terrific meal at Matsuhisa. It seems a little pricey, but not out of line for a high end restaurant in Vail. We had the out of season tasting menu that is a great deal at $42 for 5 courses. This becomes $175 or 8 or 9 courses during the ski season which sounds really outrageous. Great restaurant for an occasion, and certainly great if price is no object.
Amazing as usual. One of our go-to spots in Vail. Expensive but always a great experience. Food is creative and service is impeccable.
We had a great evening, for the most part. Great service, food and sake! Every time we have dined at Matsuhisa has been wonderful. The only problem was not insignificant. A large group in the bar was progressively getting louder and more obnoxious over 30-45 minutes. The manager told me that he was about to go talk to them. I would have thought that he was about 20-30 minutes late. We have been there several times when the bar was energetic but not out of control. It was very unfortunate. But otherwise the service and food.... Fantastic. Thanks MW
