Featuring Chef Nobu Matsuhisa’s signature new-style Japanese cuisine, Matsuhisa Vail is located in the Solaris Plaza in the heart of Vail Village. Our dining room is open from 5pm nightly. Takeout available nightly from 5-9:30pm.

I have been to a number of Nobu's restaurants, and they never disappoint. This Matsuhisa is in the same league. Great variety of unique dishes, along with top notch sushi. The food will more than meet your expectation. The location of the restaurant in the bar lobby of the Solaris was definitely disappointing. Very loud and very public, with people coming in and out all dinner. Completely changes the atmosphere of the restaurant and detracts from what should be a very memorable experience.

This is our second time dining here in Vail. The food and drinks are just as excellent as we remember. I would have given more points on the service except the our server was a little gruff. The seating hostess was fantastic. Super nice. The folks that came and took away plates, refilled water glasses, gave us extra silverware, and napkins, they were superb. The only downside was our actual server. We were here for my husband’s birthday. The server made a big deal of it being his birthday, asked what birthday dessert he would want. And at the end of the meal, charged us for the birthday dessert! When I asked about the birthday dessert and shouldn’t it be complementary, she replied “oh, we don’t do that. You have to pay.” Felt like a bait and switch. I would dine in here again, but with someone else providing our table service.

We arrived 30 minutes ahead of our reservation time, and they were able to accommodate seating us immediately. Our server, Antonio, was gracious, knowledgeable, and prompt. He didn't hover but was there when we needed him and provided excellent service. It was a special occasion for us, which they observed nicely, though none of the desserts we ordered were comped on a $500 meal (which you see often elsewhere for birthdays, anniversaries, etc.) Not a huge deal, but would be thoughtful...overall we had an outstanding experience and will be back whenever we're in Vail!

My wife and I were celebrating our anniversary. Just as reference we travel a lot globally and seek out Michelin star restaurants, the husband and wife spots that have been doing it for years, the hip and chic restaurants you name it we like to eat.. I’m getting off track here but wanted to let you know we are very very into food. Our dinner at your restaurant was embarrassing. The nigiri was dry and leathery as if it had been pre cut. Cardinal rule, never pre cut fish in a sushi spot. Presentation as a whole was lacking, the hand roll was dry and crumble like, the quality in the sashimi fish also fell short almost strip mall sushi style quality. When it came to the hot food it was good but just that good. I can’t remember a single dish that my wife or I was blown away by. That being said the mushroom dish was good. There is so much more but I thought you would want to know in an effort to improve. We’ve never had a problem paying for good food and expect the prices, be honestly I felt robbed after this dinner.

Came to Vail for a girls’ (moms’) getaway and dined at Matsuhisa Vail. We had the BEST experience! Fun and energetic restaurant. Delicious and fresh cuisine. Top notch service. Jason was our server. He knew the menu inside and out, gave great recommendations and catered to our table. We can’t wait to come back!

The food is incredible, and the sushi really is high quality and fresh for the Midwest. If you order correctly, you can leave full and a bill under $200. I did feel like the value matched what I paid for. Our waiter was friendly, attentive and super helpful guiding us through the menu. 5/5 stars for him. the ambiance was a little left to be desired, but I didn't really bother me. It's definitely a family environment inside. What I didn't like was the attitude from the hostess and the water didn't work in the girl's bathroom. I fished my meal with dry soap on my hands and when I asked for a towel from the waiter, he had nothing to give me. it was weird.

The food was exceptional and the service was exemplary. The variety of flavors, textures, styles and presentations was an amazing sensory experience. I would like to commend Vincent who was my waiter, Mary Anne who assisted, and, I believe Matthias as the presenter.

Had a familyof 11 their, and set outside. Great night. We ordered 8 different appetizers and four bottles of wine. All the food was outstanding. this is the 4th straight year we have eatten there.

We celebrated a birthday out on the patio, loved our server and our busboy, everything was low-key and perfect, food absolutely delicious and service made it all come together. Only complaint would be the long wait for first round of cocktails, the bar service was slow.

Excellent location and setting. Great friendly service. Limited menu, although interspersed with unconventional items. Presentation of appetizers, rolls - picturesque. But taste was at best mediocre. prices were much higher than the food deserved, although, probably, location dictated this. In a few words, trendy but far not the best for the money.

Loved this place last year— this year was below sup par, unfortunately. Service was great, but the food was terrible and virtually flavorless. Best thing on the menu? Chicken skewers. Spicy tuna had no spice- I feel like it might have been salmon. And the bluefin tuna sashimi was so small. I don’t even think it was blue fin. Sadly won’t be back.

The portions of sashimi were sliced so thinly that with certain cuts of fish, it was difficult to discern the flavor of each. Only the scallop and uni were memorable. Disappointed.

Amazing!!! We loved our waiter and everything we ordered. The seabass dry miso, cod lettuce cups and the spicy tuna roll (traditional style) were all amazing!

Amazing food. Service improved over previous visits. Matsuhisa in Cherry Creek has always been outstanding!! Vail pales in comparison, but this last visit was better.

The sushi items that we ordered were dry and bland but the rest of the meal was nice. The ice cream and ice dessert was over the top good!

Really good service - our table was near the entrance and near the bar. We probably would have enjoyed it more if we were seated in a different area. It was hard to hear our guests and especially hard to hear our servers.

Amazing as always! We always come to Matsuhisa at least once a week during our summer vacations to the Vail area. The food is outstanding! From simple sushi rolls (which are probably the best things on the menu: tiradito and okra rolls are our favorites) to cooked dishes - everything is just perfect! Love this place!

Excellent nigiri and sushi. Service and food was slow to start but once the restaurant slowed down food came out timed a bit better. Stick with the fish it was fresh and delicious, every fish item we would order again. Shellfish items were less memorable.
