The service here was excellent. We were with our toddler, who I thought might drive everyone crazy at such a posh restaurant. We’ve eaten at various Matsuhisa restaurants, but never with a three year old. Well, I’ve never felt like more of a VIP. Sure, our daughter was rather well behaved, but I got the feeling that they would have been okay if she’d been a pill. The food was fantastic, and the items we took to go because she looked like she was waning in patience were just as good. I really can’t say enough nice things. Go. Eat well. Don’t miss the tempura tofu or the tuna tacos. But everything on the menu is fantastic. You cannot go wrong.
Wow! AMAZING experience from start to finish. I’ve eaten at a lot of great restaurants all over the world and this one is up there with the best. The service is so genuine and knowledgeable. The food is absolutely top notch and paced perfectly. The ambiance is like nothing else in Vail. Great job Matsuhisa Vail! We will be back.
Dined for a birthday party, we waited 25 minutes without any drinks, our first sushi appetizer arrived and we finished it prior to 1 beer and sake. It took at least another 15 to add on to our current order, waitress apologized twice but didn’t do anything to check or fix the situation. Very disappointed with experience after having many other wonderful meals at this restaurant!
Server led us through sake and food menu in a lovely way. Took the decision out of it and got a great sense of the cuisine.
Matsuhisa overall has a nice vibe with good food. Our group enjoyed sharing plates of food together as well as finishing our dinner with a dessert none of us has tried, shaved ice with icecream and toppings. The only thing we didn't care for was the waitress telling us what we should order rather than recommending. Her verbiage was quite forceful. We did choose a few items she said to try, though.
A wonderful meal all around and our server Ben was the best. His suggestions were great and made our experience even better. All of the staff were so welcoming and attentive- a perfect dining experience.
Birthday celebration during Vail Restaurant Week. We loved it! But despite how incredible the food was, and the fall discounts, it was still pricey.

Really great experience. This place has the whole package, great food, staff, scene and of course a great view of the mountain. All of it made for an incredible experience! The king crab tempura and tuna sashimi with truffles were out of this world. My buddy had the bento box and was a huge fan as well. Thank you Matsuhisa and keep it up!
Husband and I went during restaurant week and I thought the offerings including their fall menu were terrific. We filled in with a couple things from the regular menu and really enjoyed our evening. Wild loud vibe this particular Friday night, but felt fun and hopping.
I would recommend as the food and environment were both of very high quality. The drinks were way overpriced including a glass of wine that was so small it almost seemed like a shot glass amount. Waitress pushed hard to upsell which also created an uncomfortable environment.

Amazing experience start to finish. The server knew so much about the menu. She made great recommendations on dishes we would have never tried and took such great care of us. The food was AMAZING!

The food and atmosphere is incredible!
Our server was difficult to deal with. She was very irritated when we didn't exactly take her dining suggestions. She did not appreciate our questions about the menu. The menu itself had very little description and the server did not love that we asked questions. When we decided not to order a ton of food, she was also irritated. But without the proper menu descriptions and help from our server, we did not feel like spending the money. The menu prices were high and portions were small. Which I did expect.
The salads that we had were amazing though!
The restaurant's music was so loud (like a nightclub almost) that it was difficult to hold a conversation.
Nobu restaurants are a standard in the food industry and this venture does not disappoint. Consistency is key.
Location, ambiance and service are simply a precursor to amazing dishes. Fresh, lite and flavorful allow you to try plenty of dishes.
You pay for what you get so don’t balk at the prices!

Wow! When a restaurant like Matsuhisa decides its more important to skimp on food quality and have high prices its time to avoid.
We have never seen salmon sashimi sliced as thin as the sashimi here. A new style salmon roll with paper thin salmon. Wow !!
Miso with clams. Two broken clams. Compare to Sushi Den where there are more than 10 clams. Wow!
Greed at its best.
And on top of that, the servers seemed intent on rushing us along to the point of reaching to remove the plates we were still eating from.
As always a terrific dinner! Everything was perfect. The manager, Jordan, is great as he watches over the room making sure everything is just right. Our waiter was excellent. The food was delicious. We always drop by when we are in Vail and enjoy a perfect evening.

Overall very disappointing — we had a 8 reservation for our anniversary - pushed as the kitchen was closing at 9 which seems odd for a Friday night — and then both my wife and I got sick - bad all the way around - service, food and experience .. I have been a big Nobu fan but won’t be going back

Best chef ever —we have eaten there four other times and the new chef Peter has produced the most outstanding cuisine we have had at Matsuhisa including New York’s Nobus
Overpriced tasteless sushi with snooty attitude, will not be back. Had better at smaller cheaper places.

I rarely write reviews, we were in town for the weekend & since I love NOBU we decided to try this place out (owned by NOBU). Sat down at 7:55. Didn't get our drink order taken till 8:15.... then it took 40 minutes to get sashimi on the table. All 2 pieces of it. Also, incorrect orders came out... twice. It was a weeknight on offseason. It was not busy at all and there was no excuse. Wouldn't go back - there are much better places to eat in Beaver Creek/Vail.
A Wonderous Food Experience- once again,Matsuhisa confirmed my opinion that it is an extraordinary restaurant with really well-trained servers and food experiences that can't be missed. My compliments to the chef- particularly, of course, for the black cod bite!
We visited on a Sunday night holiday weekend. The service was amazing, lots of staff that helped each other, not just their assigned tables. We had sushi and shrimp kabobs. Both were wonderful.

Overall-the experience and service was enjoyable however, the food was not. My guests and I have visited many Matsuhisa and Nobu restaurants around the world and this Vail location was collectively the least favorite in terms of food. The seafood items had a fishy taste including the rock shrimp which is usually a crowd favorite. The ground beef in the tacos seemed of poor quality. The only dish that was enjoyed by all was the lamb. I am a home owner in Vail and visit several times a year and always go dine at Matsuhisa and have not had this experience before. I hope it is better for the next time I go.
We did the high end Omakase and it was mediocre at best. Maybe we were expecting too much but at $175 pp without drinks we were kind of expecting something beyond an average meal. The meal started out great with a delicious poached oyster and uni, but went pretty average from there. There was nothing memorable or creative after that. I’d highly suggest ordering from menu and do your own tasting menu than trust the chefs. We were very disappointed.
I eat out on average five nights a week and our waiter was the most arrogant I’ve ever experienced. It wasn’t like he was rude as you could not get him to talk to you, or even acknowledge you. It wasn’t because he was busy as he was only doing laps around the room between his leaning on the bar. On the laps he completely avoided eye contact. Food was really good and the food runners worked their tails off—fire the waiter and get one that cares and it would have been a wonderful experience.
Perfect and our waitress Mabrey, was A+!!!
