Established in 1884, Maldaner's Restaurant and Catering is one of Springfield's finest restaurants. If you have visited The Old State Capitol, Frank Lloyd Wright's Dana-Thomas House or the State Capitol, you can imagine the wonderful celebrations Maldaner's likely was a part of at the turn of the last century and to the present day.
Today, under the guidance of Chef-Owner Michael Higgins, Maldaner's respects tradition while offering the best of contemporary American fine dining in our historical setting.
Chef Higgins features seasonal local and regional ingredients influenced by Mediterranean composition and preparation.
Heirloom vegetables, humanely raised meats and Slow Food all artistically prepared and presented.

Maldaner's Ratings and Reviews
Service was friendly and knowledgeable. Presentation was beautiful, and the atmosphere is very mature. Food was underwhelming. Swordfish special was as dry as the bread and ribeye was the right temperature but tasted like charcoal. Butternut squash pumpkin spice soup was on the sweet side.
Well ... there's good news and there's bad news.
Good News: The prime rib and martini were superior. Great job.
Bad News: The amount of veggies served we're pathetically small. In particular, the mashed potatoes. I LOVE mashed potatoes with a great steak. Didn't happen.
Next time, Augie's Front Burner.
A special shout-out to our server, Sam. He made our overall experience a great one. 😊
Food was excellent. We both ordered seafood- halibut special for the birthday guy and wonderful salmon for me. Our waiter Jesse was very efficient and professional. Our martinis and wine were perfect. It was a birthday dinner for my husband and they gave him a delicious complimentary dessert. The whole evening was quite enjoyable.
Excellent quality food with nice presentation. The bruschetta with heirloom tomatoes was delicious. We also had the warm goat cheese salad. The goat cheese was amazing. The burger, cooked in duck fat, was fresh and juicy. We finished off our meal with creme brûlée- also excellent. Fresh brewed iced tea was a bonus. Excellent, attentive service. Great atmosphere. Historic restaurant with fresh, farm to table ingredients. Highly recommend.
This is our favorite place to dine while in Springfield. We chose our hotel so that we would be within walking distance of Maldaners! Our server, Brett, was wonderful and made great suggestions. Food was outstanding! I chose quail stuffed with sausage while my wife had salmon. Both were outstanding! We will go back!
A very pleasant dinner outdoors. My wife and I shared a wedge salad and prime rib. While the wedge salad was small, we wished we ordered one each, it was very tasty and the romaine was crisp. The prime rib was one of the best we ever had. It was well seasoned and a perfect temperature. The sides were fresh and tasty. Overall a fine meal. Thanks.
Had the special soup - a cold cucumber & shrimp soup that was excellent, and the lamb chops were absolutely perfectly wonderful. However, the noise level was abysmal and the klutzy hostess and a waitress kept knocking things over - especially the tray stands. I nearly jumped out of my skin twice when the stands were knocked over. Watching the hostess trying to be somewhat flamboyant in her gestures and knocking over the oil bottle on the nearby table detracted from any pseudo ambiance.
Without a doubt their premium margarita is the BEST I've ever drank! I would return just to try more of their cocktails . But the food was also a treat. I ordered the lamb and my husband had the ribeye steak. Both were wonderful!! For desert we had bread pudding-and blueberry cobbler were both pretty average-and that's why I only gave food four stars. Would definately return to this charming restaurant. Make reservations. It was a Tuesday night and all tables were filled.
Maldaner's was great! The service from beginning to end was superb. I had a spicy bloody mary, which was delicious! It was just the right amount and the perfect amount of spice. I had the prime rib and my husband had the duck. They were both delicious. Prime rib is my favorite and this one is definitely in my top 2! I love that it's a local, downtown venue.
We eat here once a year while visiting Springfield for a horse show. It is always an early dinner but the ambience, food and service is exceptional! I had the Iowa Lamb chops! Delicious, large and prepared perfectly. My friend had the filet special and it was also outstanding. Our server was also outstanding and I apologize for not remembering his name.
We ordered the morel mushroom pie for an appetizer. It was good but pricey for the size slice.
One of us ordered the salmon, which was good. I ordered the Beef Wellington and we split the two entrees. I hate to say that it was the least desirable Wellington I have ever had and the other diner agreed. It should be a very high quality cut of meat in the middle, ours had a liver like aftertaste and the crust was not like any of the light flaky puff pastries I have ever had on it before. I found it overbrowned yet gummy on the inside and it had no flavor. It was also lacking in a rich creamy gravy finish. The mashed potatoes were like boxed dehydrated potatoes and we felt the portions were small. We finished with a piece of their daily special dessert which happened to be strawberry shortcake. The strawberries were macerated and served with a dollop of whipped cream, which were good. The biscuit however was thin, over baked and crunchy and had no flavor. It needs a light sweet fluffy shortcake biscuit. We thought it was a charming dining room and had a nice historic feel and over all liked the ambiance.
Our server was not very good. She was less than pleasant and all at our table of 5 had the same reaction. Our server seemed like she was going through the motions and could care a less about us. I do want to comment that it was clear from their other servers we observed that Maldaner's has great service. It was just that our experience was not very good. I have been at this restaurant before and know they have good service and will be back.
Maldaners provides outstanding food and service year around, but during morel season it really sets itself apart from several other very good restaurants in this area. Chef Higgens has developed several recipes for morel lovers that are offered only during morel season. He works them into a "morel pie" appetizer, a risotto, and a sauce that works equally well for his halibut special or filet mignon. Add a nice evening when you can dine alfresco and a glass of wine from their very nice wine list and you will not be disappointed.
