At Bolero the customer is in charge of the timing on our wide selection of churrasco(skewers) to be brought to your table by our Gaucho Chefs. Green means go and Red means stop. A perfect setting for any festive occasion as we offer a wide range of different, cocktails, wine, and beer. Dining with friends and family was meant to be fun, the Brazilian way!

It is always a wonderful experience and I love bringing our kids or friends whenever we go.

The Bow Valley Ranche Restaurant is the new fine dining facility located in the restored Ranche House. Their menu features a contemporary interpretation of Alberta regional cuisine. Today, the flavours and traditions of Alberta’s ranching heritage live on at the Bow Valley Ranche. Our Grand Salon holds approximately 110-120 guests. William Roper Hull and Senator Patrick Burns hold approximately 30-32 guests. Our John Glenn room, located in the upstairs, old master bedroom of the house, holds approximately 12 guests.

Sit down beside the massive fireplace in the Grand Salon or enjoy the covered wrap-around veranda during warm weather. Enjoy lunch, dinner, cocktails or weekend brunch. Reservations are recommended. Please note that we do not take reservations for the patio.

Our décor is warm and modern. The tradition has always been dark wood, leathers and a muted palette for a steakhouse. We broke the mould and decided to add hand-selected music that reflects us! We’re more like Jay Z and less like Sinatra.

We only serve ranch specific Alberta Beef. That means we don’t serve beef from anywhere else on the planet. We know our farmers and ranchers personally and respect the hard work they put in to produce our beef.

We are one of just a handful of steakhouses in Canada that serves, Grass-fed, Grain-fed, Wet-aged, Dry-aged and Wagyu beef 365 days a year. Our beef is always fresh never frozen.

We use a 1800 degree Infrared Grill to cook your steaks. The high heat creates a flavourful crust on the outside of the steak and leaves a juicy centre.

We stopped by for a late lunch during a tour of Victoria. We enjoyed delicious soup with fresh seafood, and salad sitting outside. Our service was excellent and everything tasted delicious.

We were pleasantly surprised. It was my first time and I brought my bf to celebrate his birthday! We got the Jarret d’agneau with seasonable vegetables and rice, and the mushrooms pasta dish in a white creamy sauce. We had it in the Table d’hôte and the dish were very generous portions. We were so full and so satisfied! Kudos to Chef Mathieu!!!

We got the Jarret d’agneau with seasonable vegetables and rice, and the mushrooms pasta dish in a white creamy sauce. We had it in the Table d’hôte and the dish were very generous portions. We were so full and so satisfied! Kudos to Chef Mathieu!!!

It was a brand new menu so I tried an unusual sounding appetizer — mushroom tempura on white sauce that takes two days to prepare. It was insanely delicious!! We sat at our fave table #84 and had our fave waiter — Dave. He was the kindest and most considerate he’s ever been to us — maybe because he was happy to see us again, maybe because it was our Anniversary.

When I asked for a window we were lead to a table by the window. I just thought that a early reservation would have afforded us that honor. Food was excellent good value for your dollar and 8 dollar desserts! First place for the week when the dessert was under 15 dollars! Waitress was fantastic! Oh it says parking 10 dollars as you pull in but if you let him know your going to Remingtons no charge!

We were celebrating my friends birthday. My friend had never been to the Valley before. We both had a marvellous meal. Our server Letti was kind, prompt and very knowledgeable. Nadia is always spectacular, checking in on all of her guests. We definitely will be doing more celebrations at The Valley

Darren our waiter was amazing. Very courteous, understood we wanted time to make our choices of both drinks and food and didn’t rush us through the meal either. He took time to talk to us (we are on a tour of Eastern Canada so only in Niagara for one night). He was very knowledgeable about the wine choices available and the particular wine producer. The food was beyond our expectations and the nicest meal we had during our 12 nights in Canada. Thankyou to all the staff involved. We also had breakfast in the Watermark as we were staying in the hotel and our server Anna was friendly, efficient and much nicer than any other server we have had (with the exception of Darren the night before). These members of staff both appear to really enjoy their jobs and are a credit to their employers.
