Service was extremely slow/ lacking overall, main dish was “ok”, and the dessert was bland. Love visiting the Boulders and their fantastic bar, so am really disappointed with the Palo Verde experience.
I was a bit disappointed in the ambience which I considered to be very sterile. More cafeteria-like than fine dining. Also, we had noted in our reservation that we were celebrating an anniversary, but no mention was ever made of this during our dinner there. I don't think I would travel so far out of my way to go for dinner there again.
Great service from Simon but sitting outside at night was a mistake. No light at all, very dark and that made it tough to see our food. The candles on the table provided very little light.

Last minute change in plans brought us here. The steak tartare was not as indicated on the menu. It lacked a cured egg. I could not find the celery root puree on my plate of scallops. All in all, the food was ok, the service was impeccable but I expected more from an expensive restaurant in The Boulders.
Service was terrible. Over an hour to order and another hour for our food. 3 out of 4 dinners weren’t very good.
The food is good, the service is okay, but the ambiance is not conducive to visiting. The acoustics are awful.

Went to Palo Verde for the first time with some friends visiting from Chicago. We were looking for a new place and based on the menu we decided to give it a try. The overall ambiance is lacking. The artwork on the walls were some photos for sale of random places which seemed odd. Also, the vibe was pretty nonexistent as there were very few tables occupied.
Our server gave insights on the menu which we appreciated her honesty. However she didn't write down our order so we didn't get the octopus appetizer which we requested based on her recommendations. The scallops and filet were fine but overpriced for what we received. Three scallops seem pretty skimpy for the price. Service was slow. We had mentioned we needed to leave at a certain time and it took over an hour from the time we sat down to getting our entree and we were not overly slow in ordering.
We didn't even mention the starter not coming because we needed to leave but I am not a fan of servers who think they can remember everything. I will chose to take my $ somewhere else as the value definitely isn't here.
Very quiet evening. The waiter was excellent and the food was very good. My husband and I shared the grilled octopus and I had the lamb chops, an appetizer, as an entree—it was plenty for me. I would go back
Enjoyed a delicious pre-Valentine dinner. The resort and surrounding scenery is breathtaking and well worth the visit. Would have loved to play golf while visiting.
Very nice food, staff, and ambiance. Outdoor seating was nice, except for constant vehicle traffic nearby. Mostly hotel golf carts and utility vehicles
Had the sea bass. Very good. The lamb rib starter was phenomenal. Great service. The actual menu is different from the on line menu.
BUMMER! This is a favorite spot when we are in the area (from the east coast). We booked 10:30 Sunday breakfast on the patio, received a confirmation email, and arrived to learn the restaurant was closed for a private party! Serious communication breakdown.
We spent our 25th Anniversary here. The food and service were excellent that evening. We were provided a private dining room for the experience. The scallops were delicious! We also had an excellent bottle of wine.

I have the highest regard for the Boulders resort.The restaurant had been remodeled as palo verde is now the "high" end restaurant at the resort.We went on a Sunday night. The service was ok, but extrodinarily slow. The food was mediocre at best. I would recommend eating over at the golf course or in the spa. I hope our experience was just an off night,but we probably won't return unless we hear of a turn around. Too bad....
The food was very good, so nicely presented. Just that the music was too loud for talking.
Party of two. Started with drinks and tomato appetizer and a salad which was delicious. Main course. One of us ordered two wash ranch chicken and other luna pasta. We were really hungry when we sat down. The chicken was so salty parts of it were impossible to eat. The luna pasta presentation was great but it had no flavor. It was if it was missing an ingredient. We picked at it because we thought it would take too long to get another entree going. Very disappointed especially with all the hype. We travel a lot with it being a resort menu it could use two or three more options on menu.

We were guests at the resort. Two couples for dinner. The reviews were quite accurately ...meh!. Pretty empty despite being peak of season, the lighting was harsh, tables were wobbly, food was certainly not special. If it was warm enough for outside seating the experience would probably seem better. Management really should decide if it is just a breakfast/lunch spot, or hire a consultant to tell how to create a dinner venue worthy of the rest of the resort.
Without my member discount and a complimentary birthday entry this would have been a totally unsatisfactory experience for quality given the price. 3 of 4 entries were passable but nothing special, 4th (short ribs) tasted like a dry pot roast.
Way too many really outstanding restaurants in the surrounding area to choose from that are quite memorable and make one want to come back to think about coming back to this one and are far superior in terms of quality.
The surroundings of the private wine room was the only thing that saved the evening.
We dined on a Saturday evening with another couple. The service was very good, the food was excellent (but it did take a while for it to be served). The acoustics of the room make it louder than an average restaurant. Still, an excellent dining choice!
Food was good. A little pricey. Please turn down the lights for dinner. Much too bright.
Our dinner at the Palo Verde in the Boulders Resort was outstanding. We made reservations for 6:00 PM that had to be adjusted to 6:30 PM with no issues or problems. My wife and I arrived an were immediately seated by the manager and greeted by our waiter. The wine recommendation by the staff was outstanding and went well with the appetizers and entrees that we both ordered. We had the White Asparagus Soup and Wheat Berry Salad, followed by Lamb ribs marinated in an east indian spice rub and finished with honey. My wife ordered their baked chicken and I had the halibut which was well portioned and very juicy. The staff routinely checked in on us during dinner and the chef came out after dinner to check on our meals and overall satisfaction. Desert was a chocolate ball covered in a hot fudge which was great finish to a wonderful meal.
The restaurant was lovely. Service was excellent. Food was good. The halibut dish was tasty but fish was a bit dry.
Would not recommend! There were 4 of us and each couple ordered the octopus appetizer. It was very chewy and bland. We voice our dissatisfaction with the server but got no response or apology from the kitchen. I had the short ribs. The portion was about 4 oz and at least 2oz was just fat and inedible. There was nothing served with the dish at all, no even a garnish. One person in our party had the Halibut and that was fine. Another had the filet and said it was "acceptable". The most irritating thing was that, even though we were only a party of 4, a 20% service charge was automatically added to our bill. This was listed specifically as a service charge, not a tip. The bill stated that the tip was specifically NOT included. If we had tipped in addition to the service charge that would have been a 40% up charge, which is absolutely ridiculous at any restaurant.

We dine out at fine dining establishments regularly and this is one place that I would absolutely never return to.
Disappointed with amount of timing of our meal. We'd dined here before, knew what we wanted so ordering went quickly. Unfortunately this was followed rapid fire pace with amuse bouche, wine and appetizer, then waited forty minutes from appetizer to entrée. Our complaint was not met with satisfaction by an amateurish manager and gratuity was included on our bill to ensure a tip. We won't be back.
I was a little disappointed with this restaurant given its price point. To start with, we were seated and were not approached by a server for 10-15 minutes. Someone (maybe a manager) told us someone would be right with us which did not really prove to be correct. Finally our server came to take a drink order. Then a second server came up and tried to take a drink order. It is not a huge deal but when you are spending 200$ on dinner for two, the service should be a little more refined. Once we were actually served, the service was better and timely.
My complaint about the ambiance is really the lighting. It is very bright in the main dining room. It detracts from what could be a romantic setting. All in all, our experience was not bad here. The food was good and our server was perfectly friendly and efficient once we were in fact served. But I would expect a little higher quality overall from a restaurant of this caliber.
Service and ambiance aside, the food was great, including breakfast which we had the next day.
Overpriced and underserviced resort restaurant. Waiter inadequately trained, hostess looked like she had just walked in from a casual walk. Way over-priced wine list--try4-5 x retail, and halibut was overcooked. Other than these things place was OK!
We enjoyed breakfast on the patio. It was a wonderful, serene setting with a beautifully set table, great food and exceptional service.

Our waiter and host Vicki and Andrew were excellent. They were very friendly and accommodating. Made our dinner delightful.
Would have been perfect except another diner was talking to someone on the phone using her speakerphone. It was disconcerting and rude. The staff did not address it with her.
what a change with the new ownership its improved but not radically changed. Excellent food and ambiance
There were very few foods to pick from sizes were minute the soup gone the entrée was small
We had cocktails prior to dinner in the new bar area...then sat outside for dinner. The meal was fabulous....and we are members.
