It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish! That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part. A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

My wife and I loved the food, ambience, and service. The prices are on the high side but that is expected for this level of food/experience - we were celebrating an anniversary so it was a special occasion. Having said that, the food/drinks/service were as good as we have ever had. My wife rates the steak as the best she has ever had (filet) and I'd say it is definitely up there but we did eat at PS Steak a few months ago and I thought that was better but that is also another notch up in price. We have eaten at many top notch steak places - but the point is the steak was super awesome - perfect cook and seasoning. And it was $60 for 8 oz with asparagus and mashed potatoes and a sauce (I believe there were some mushrooms too!). I really enjoyed the tandoori chicken breast that I had. Nothing crazy special but it was excellent for $30. Then there were also the drinks - great variety and very delicious. The lemon drop my wife had was awesome - she gets them everywhere and they definitely vary. She likes them sweet (doesn't like when they are a "burner"). This was sweet with some body to it and a hint of vanilla - I really liked it as well. I had a mezcal/aperol concoction that I enjoyed. Drinks I think were $15 each which is pricey but, again, that is pretty common now and they were excellent. We ended with chocolate mousse that was delicious. The service was attentive, helpful, and quick. It was a slow Thursday night (Bridgerton candle light concert afterwards). In any case, we will be back for sure (and will be recommending to others)!

Great steak house. I had a filet mignon which was cooked the way it was meant to be: Pittsburgh. What a delight! Absolutely lovely. The portion size for the steak was great. I cannot say the same about the fried onions but you are in America so it’s not unexpected (I ate maybe 20% of what was in the dish and I am a big guy who loves onions). It’s rare I say this but the onions were a little too salty for me. I had a key lime pie which was good. It should probably say Key Lime Cheese Cake to be fair. The portion was excessive. Roughly 1/4 of a full size cake! Eating it would definitely exceed 2000 calories on its own. I had a fantastic time. The staff was uber nice. If you crave a steak it’s a reference.
