Our kitchen is authentic and rustic while refined, with techniques that highlight the power of plant-based cooking and honor the environment around us. Centered around our belief that food is medicine, our seasonal ingredients are hand-selected at local farms by our chefs, who work closely with farmers to tap into local knowledge and choose produce based on their health and wellness benefits.     This was an extraordinary dinner. We started with creative and delicious cocktails served with a sprig of rosemary that was lit at the table creating an intoxicating aroma. Then had three vegan dishes…the coconut ceviche, portobello mushroom, roasted plantain…the sauces and representation and the taste…all wonderful. Our favorite dish(though decidedly no vegan)…corn and pork pibil….completely wow.

    Una experiencia increíble en el restaurante, nosotras llamamos al lugar porque no sabíamos cómo llegar y el personal muy amable en todo momento nos ayudaron a llegar. La comida, la atención y las bebidas corresponden a lo que pagas. Sin duda una muy buena experiencia en el restaurante.

    Everyone must experience the gastronomic pleasure of dining at Mambo’s!! We saved our last evening in Belize to dine here celebrating a milestone birthday. Wonderful kind service, ambiance and soft music. Our meal was life changing! Delicious and beautifully plated. Be sure to leave room for the off-the-charts key lime pie!
