Daniel Costa and his team, from the front of house to the back, have for a very long time now produced, in my opinion, the finest dining experience in Edmonton. We have been regulars for years through the history of Corso 32, Bar Bricco, and Uccellino, and now have been several times to Olia. The quality remains in the cuisine, and yes, there is an Edmonton-touch as many ingredients are local, yet, the attention to the details of fine Italian cucina are sacred. The freshness of the peas in agnolotti and the insalata verde stood out, the acidity was balanced in the salad, the leek in the arancini as subtle but clear, and the second pasta dish, the crab and potato ravioli, was superbly balanced with just the right amount of saffron. The wine list? Outstanding. Great range of Italian wines from the Veneto, Toscana to Sicilia....and the finish...Amari....the Lucano Reserva from Puglia was divine. The space is large, the tables many, the ambiance excellent, though at times, loud, but I was not there to dine alone nor expect silence. Beautiful night out at an excellent restaurant.

Happy hour is only in the lounge so make sure you sit there during those times - very silly. Overall service was excellent and food was more than adequate. Though, I still find Earls needs to flavour their food a tad more. I had tortellini and steak and it was a tad bland. Others in my party were pleased with their meals though.

The food was excellent and we enjoyed our lunch. We are always surprised by how many people we encounter who have never dined here or for that matter never heard of Ernest's. If you are looking for a delicious and creative fine dining experience at a reasonable price we would highly recommend this spot. A bonus is that you are supporting the advancement of the culinary training of future chefs. It's a win win.
