The restaurant reopens at 11pm until 2am on a Saturday and hosts a different chef, bartender, and entertainer who each showcase their respective talents. For this inaugural night, the guests in the S+W house were: *[Not Just a] Bartender Chris Leavitt *Chef Sarah Thompson of Casa Playa at Wynn Las Vegas *Vocal loop artist Just Alliance (John Allen) Hit my must-go trifecta: A favorite place, new, and one-off. The hostess gave me the option of a quieter location on the floor, or a seat at the bar. Bar for me, of course! The special menu, dim sum style (and without prices, but according to my receipt each item was $16), listed four dishes by Chef Sarah Thompson, four from Chef Brian Howard, three cocktails crafted by Chris Leavitt, three by S+W. Ordered- Drink of 2024 (Leavitt): I can remember Mexican coke and tequila. I think. Quite buzzy. Dry Aged Kanpachi (Chef Howard): Delicate yet incredibly zesty. Hokkaido Scallop (Chef Thompson): Four slices interspersed with an equal number of (I think) hearts of palm coins. Definitely preferred the meltaway scallop over the crunchy veggie. As spicy as advertised. Maitake Tostada (Chef Thompson): Chip was piled high with meaty mushrooms. Delicious. Dame Uno Masa (S+W Drew): This variant of July's special item Maíz Por Favor tasted lighter, brighter. Also strong. Summer Corn Arancini (Chef Howard): Caved to the craving because cheese, of which these four wee crisped spheres were loaded together with al dente rice to make a creamy flavor bomb. Cotija Carajillo (Leavitt): Unusual combination that appealed to me. Because cheese. Crème Puff (Chef Howard): Intimidating in size. Lots of cream and fresh crisp fruit in and on the airy pastry. Value: High to me due to the variety, taste, and respectable volume in both food and drink. Atmosphere: Club loud. Just Alliance had fascinating rhythms.
