Le Sails Restaurant et sa carte des vins primée présente plus de 500 vins, avec un accent mis sur les grands viticulteurs australiens. Le chef exécutif Paul Leete crée des menus en utilisant des produits fermiers locaux et de saison pour en assurer la qualité.
