About Knife

With Knife restaurant, 3 time James Beard-nominated and “Top Chef” contestant John Tesar brings a fresh, new steakhouse dining experience to The Highland Dallas. The menu features all-natural born and raised Texas meats, complementing “old school” classics like 45-day dry-aged sirloin and bone-in rib eye with “new school” evolutions that include culotte and flat iron. In addition to larger “slabs” of meat for group dining — including an 18-hour braised crispy pig’s head — the menu is rounded out by an extensive charcuterie program, bacon and ham tastings, sausages, sandwiches, salads and pasta dishes.

In addition to a sophisticated dining room, Knife offers a flagstone garden patio with a fireplace. A private dining room with its own lounge and fireplace is available for special events.

Knife was recently named “Best Steakhouse” by D Magazine and named "Best New Restaurant 2014" by Esquire Magazine,

This was our first time at Knife. I have cooked several items from John's cookbook, so we wanted to see how the "real deal" was...and it was excellent! Everything from the appetizer to the dessert was wonderful, but the steak was the star of the show. Great service, highly recommended!

I made reservations for my husband's birthday and we were not disappointed. Our waiter, Ryan, was fantastic, the food was delicious with more than enough food to share. The atmosphere was perfect and made for a lovely evening.

Just Wow. This is my third visit to Knife over two years (we do not live in Dallas). It consistently provides first class food with attentive and professional service. The space is beautiful and comfortable.
We had lamb meatballs and avocado fries as starters, both delicious. The tomato sauce with the meatballs had a pleasant smokiness which paired well with the lamb, and the avocado fries--a signature of Knife, I believe--are amazing. Don't miss the exquisite crudites" and bread service (complimentary) as well. Three of us had the hamburger as it was recently named the best burger in the USA by thrillist...and it truly deserves that recognition. The filet was perfectly cooked and flavorful, and the sides of creamed spinach and Brussel sprouts were well prepared and tasty without being too rich. We had two desserts--brie cheesecake and chocolate and coffee--both very good especially the cheesecake. Coffee service was up to the standard of the rest of the meal.
It is unusual to have such a fine restaurant in a hotel but Knife shows that it can be done. Kudos to Knife!

Great service . Total dining experience from the starter crudettes to the homemade candy as a finisher along with a muffin to take home. The steaks are great , bacon is fantastic ,burger is special and pasta is very good . Prices are bold but the desire to accommodate every wish is very enjoyable.

A disappointment as I was treating the family who hosted my Thanksgiving stay in Dallas. Two of us ordered the highest priced beef and it turned out to be tough. Spoiled the evening even though other dishes were fine.

We had a waitress that lived in Dallas for 30years. But she acted like it was her first time serving. Not only was she rude she was down right disrespectful. Our steaks were unevenly cooked and our sides came out cold. I was afraid to complain because I didn't want the children's first time experience to be even worse. When we first sat down she introduced herself. She cleared our display plate with the menu still on top didn't place our napkins in our lap. She didn't lift the menu what she did was take the plate and let the menus fall. She never took our drink order. She also didn't get our dessert correctly. I know she said complementary but if we had no choice don't ask for my choice. If I wasn't embarrassed enough to bring my boyfriend's family to their first "fine" dining to this horrible experience. I would have complained to the manager and gotten her fired, I don't care how anybody looked at the table they should still treat everyone with respect and the food should have been up to par. unevenly cooked meat should be unacceptable at a steak house.

I was visiting my child at SMU and anted a nice meal. The service was impeccable. We shared he bacon sampler appetizer and split a salad. I had the filet-beautiful. Cooked perfectly-may be the best filet I have had in the past decade. My date had the skirt steak—contemporaries and fabulous. I would highly recommend.

Service was a little slow, we arrived for brunch and were only the second table in the restaurant seated, but it took 30 minutes to prepare and bring out our food -- something to snack on for that 30 minuted would have been good. Anything. Also the server offered us soup as a side, then when we asked what kind of soup do you have - she said, it's brunch - we don't serve soup. But you serve burgers and steaks.......so not sure why it was offered if it wasn't available. Besides those hiccups, the food was good, we ordered 3 burgers and one in our party had the pancakes, and he cleaned his plate. It's a quick drive to the Meyerson for the matinee show, and it has a nice open dining room. Even if all the tables filled up it would not feel crowded. We would try it again, maybe not for brunch, but looks like a really nice place for dinner. They need to expand the brunch menu if they want to be a "brunch place", there were really only a handful of truly brunch type options.

OK, everybody comes here for the hype. First thing first, the dry aged 32oz bone in Ribeye we ordered was good, not 10/10 good but a solid 8.5/10 at least. Strong beefy flavor, accurately cooked, not too fatty but very flavorful. Seasoning wasn't perfect, the the caramelization was bit over done also, IMHO. Bacon tasting was meh, love the fried avocado.

Sadly the good stuff pretty much ended there. I'm sure I'm just a scattered sample. First, no valet stuff showed up until I walked in the hall, fine, it's shared with the hotel, not their fault; then at the entrance of the restaurant, we waited a solid 2 mins until a guy showed up to check in our appointment, pretty sure they did this to make sure you have enough time to peek their dry age room.

Then after seated, we noticed the table is very oily, so is the floor.. I mean it's OK to do a contemporary steakhouse, but you have to stay clean, or throw a table cloth on to cover the dirts!! BTW the table and chairs are not close to quality stuff either... Steak knives tho, both had deep crack in the handles. I mean your restaurant is named KNIFE..

Our server wear Crocs, must be contemporary thing, and a dirty white jacket.. And she doesn't know how many days the steak had been aged

But again, glad the ribeye was good, but I'd stick with other traditional steakhouses around town, I guess.

Completely worth the hype. John Tesar's Knife delivers on all points. The Bacon Flight is a must!

Also - those Avocado Fries are a brilliant different option for a Side Item.

Steak was cooked perfectly and seasoned well.

Considering the prices, my family and I were a little underwhelmed by our very expensive dining experience at Knife. After reading all the rave reviews about the bacon slab tasting, we were surprised that for $18 we received only received 6 regular sized pieces of bacon that although tasty, definitely not worth $3 a slice. For dinner, we all ordered filets and found them good, but a little on the salty side. All entrees were a la carte and sides ranged in price from $8 - $12 for small portions that are to be shared "family style." We tried the avocado fries, wild mushrooms and mac and cheese - all good, but again expensive for what you get. Knife is a great spot if you are able to expense it for work or out for a very special occasion. Otherwise, for the money, I prefer Al Biernat's or Papas Bros.

We decided to dine here since we were in staying in the hotel. we had previously planned to go to Pappas Bros. Steakhouse. The food was very good a Knife. The bread service was disappointing because the bread was cold. Warm bread would elevate this service. The filet was seared nicely and flavorful but it cool when served and the plate was not hot. The biggest downfall was the lack of service from our disinterested waiter. Other tables got their food much quicker and received more attentive service.

Knife offers a great selection of steaks. The choices go beyond the typical steakhouse with some unusual cuts and a more expansive menu than many places. Check out the menu on the website. The bar is a lot of fun and there is some great mixology talent behind it.

The only negative to say about this restaurant is they offer late reservations they don't seem to accommodate. We had a 9:30 reservation mid week. We started our dining experience as most people were winding up. As we were finishing our meal, the restaurant was empty, the kitchen was empty and the wait staff was counting out. Reservations shouldn't be offered that late, if customers are going be made to feel like they are forgotten. Especially at the price point.
