About Knife

With Knife restaurant, 3 time James Beard-nominated and “Top Chef” contestant John Tesar brings a fresh, new steakhouse dining experience to The Highland Dallas. The menu features all-natural born and raised Texas meats, complementing “old school” classics like 45-day dry-aged sirloin and bone-in rib eye with “new school” evolutions that include culotte and flat iron. In addition to larger “slabs” of meat for group dining — including an 18-hour braised crispy pig’s head — the menu is rounded out by an extensive charcuterie program, bacon and ham tastings, sausages, sandwiches, salads and pasta dishes.

In addition to a sophisticated dining room, Knife offers a flagstone garden patio with a fireplace. A private dining room with its own lounge and fireplace is available for special events.

Knife was recently named “Best Steakhouse” by D Magazine and named "Best New Restaurant 2014" by Esquire Magazine,

Service was a little slow, we arrived for brunch and were only the second table in the restaurant seated, but it took 30 minutes to prepare and bring out our food -- something to snack on for that 30 minuted would have been good. Anything. Also the server offered us soup as a side, then when we asked what kind of soup do you have - she said, it's brunch - we don't serve soup. But you serve burgers and steaks.......so not sure why it was offered if it wasn't available. Besides those hiccups, the food was good, we ordered 3 burgers and one in our party had the pancakes, and he cleaned his plate. It's a quick drive to the Meyerson for the matinee show, and it has a nice open dining room. Even if all the tables filled up it would not feel crowded. We would try it again, maybe not for brunch, but looks like a really nice place for dinner. They need to expand the brunch menu if they want to be a "brunch place", there were really only a handful of truly brunch type options.

OK, everybody comes here for the hype. First thing first, the dry aged 32oz bone in Ribeye we ordered was good, not 10/10 good but a solid 8.5/10 at least. Strong beefy flavor, accurately cooked, not too fatty but very flavorful. Seasoning wasn't perfect, the the caramelization was bit over done also, IMHO. Bacon tasting was meh, love the fried avocado.

Sadly the good stuff pretty much ended there. I'm sure I'm just a scattered sample. First, no valet stuff showed up until I walked in the hall, fine, it's shared with the hotel, not their fault; then at the entrance of the restaurant, we waited a solid 2 mins until a guy showed up to check in our appointment, pretty sure they did this to make sure you have enough time to peek their dry age room.

Then after seated, we noticed the table is very oily, so is the floor.. I mean it's OK to do a contemporary steakhouse, but you have to stay clean, or throw a table cloth on to cover the dirts!! BTW the table and chairs are not close to quality stuff either... Steak knives tho, both had deep crack in the handles. I mean your restaurant is named KNIFE..

Our server wear Crocs, must be contemporary thing, and a dirty white jacket.. And she doesn't know how many days the steak had been aged

But again, glad the ribeye was good, but I'd stick with other traditional steakhouses around town, I guess.

Completely worth the hype. John Tesar's Knife delivers on all points. The Bacon Flight is a must!

Also - those Avocado Fries are a brilliant different option for a Side Item.

Steak was cooked perfectly and seasoned well.

Took my elderly father for a dinner out. We loved the filets, which were tender and perfectly cooked. But even better was the okra and the chocolate hazelnut passion fruit panna cotta! Not to mention the Barolo...

Considering the prices, my family and I were a little underwhelmed by our very expensive dining experience at Knife. After reading all the rave reviews about the bacon slab tasting, we were surprised that for $18 we received only received 6 regular sized pieces of bacon that although tasty, definitely not worth $3 a slice. For dinner, we all ordered filets and found them good, but a little on the salty side. All entrees were a la carte and sides ranged in price from $8 - $12 for small portions that are to be shared "family style." We tried the avocado fries, wild mushrooms and mac and cheese - all good, but again expensive for what you get. Knife is a great spot if you are able to expense it for work or out for a very special occasion. Otherwise, for the money, I prefer Al Biernat's or Papas Bros.

This place was a little strange to us. The steak was delicious but everything else was very average, which was disappointing. The prices are high end but the service was slow and the quality of the dishes outside of the steak was lacking.

Knife is our "MUST DO" restaurant when we travel to Dallas. Again, the food was WONDERFUL, the service top notch and the ambience incredible. A MUST try is the bacon sampler...our two adult boys LOVE it! In addition to seeing my son, it's another reason I want to go to Dallas!

We decided to dine here since we were in staying in the hotel. we had previously planned to go to Pappas Bros. Steakhouse. The food was very good a Knife. The bread service was disappointing because the bread was cold. Warm bread would elevate this service. The filet was seared nicely and flavorful but it cool when served and the plate was not hot. The biggest downfall was the lack of service from our disinterested waiter. Other tables got their food much quicker and received more attentive service.

Knife offers a great selection of steaks. The choices go beyond the typical steakhouse with some unusual cuts and a more expansive menu than many places. Check out the menu on the website. The bar is a lot of fun and there is some great mixology talent behind it.

The only negative to say about this restaurant is they offer late reservations they don't seem to accommodate. We had a 9:30 reservation mid week. We started our dining experience as most people were winding up. As we were finishing our meal, the restaurant was empty, the kitchen was empty and the wait staff was counting out. Reservations shouldn't be offered that late, if customers are going be made to feel like they are forgotten. Especially at the price point.

Knife was not at all what I expected. We went for Sunday brunch and it has the ambiance of a Waffle House only the food wasn't nearly as good. Maybe dinner is the ticket here??? It's pretty much your typical hotel cafe...nothing special.

We were really looking forward to eating at Knife and brought good friends who would also appreciate the experience. It was good. It wasn't exceptional or amazing and I'm speaking about the food and the service. For the "Best Steakhouse in Dallas" rating - of course our expectations were high going into the restaurant. We ordered the bacon tasting along with the charcuterie selections to begin and then the two guys had steak while my girlfriend had a burger and I had the bolognese. We included some sides with our meal: roasted okra, mac & cheese, creamed spinach and we all tried an avocado fry as well. We all enjoyed some wine.

Regarding the food: the bacon tasting is interesting and in the end - you're not overeating on the fattiest food ever. It's like five small bites of bacon (once they cut it for your table) and it IS kinda fun to try to taste the difference. We could've skipped the charcuterie if we had known how much of it was pâté-ish. Made us wish we had gone with the lamb meatballs instead.

The guys liked their steaks, but their comment was that it's hard to mess up a dry aged cut. The burger was completely gone and I took 1/2 of my bolognese home because it was Just That Good. Worth those calories!! The avocado fry was delicious. Only need one, though. The spinach is not creamed (so that word should really not be in the title). It's surprisingly much healthier than expected - more like "steamed" spinach. The mac & cheese was barely touched - so not as yummy (or we were full). Only those who like okra will like the okra. Sadly, it will not convert those who don't. We left zero room for dessert, but enjoyed the nice touch of sweet little treats served at the end.

Regarding service, our main server didn't give a good vibe impression. We felt like she was "putting up" with us and we're not rowdy, just talkative. The guy with the bread was WAY friendlier with a better sense of the menu. We wanted to LOVE Knife, but we only liked it.

Tro my mind, this is by far the best steakhouse in Dallas. The aged beef is exquisitely seasoned, and not overly salted or buttered like the chains. Although pricey, it's worth every cent. The béarnaise sauce (which remained perfectly stabilized over the course of the meal and didn't separate like less-expert preparations) perfectly complemented the Ribeye, which you should allow the kitchen to slice. The creamed spinach with shallots is delicate, not gloppy or casserole-y like some restaurant offerings. And save room for the unique desserts (enjoyed with french press coffee). They aren't too big to cap off a big steak dinner, and leave just the right sweetness to conclude a meal. The noise level varies greatly depending on what day and time you go. Earlier is quieter. If the bar is full, it's boisterous!

Tried the bacon tasting appetizer per other recommendations...I think others hyped it up too much. For me, at the end of the day bacon is just bacon. It all tasted good, but it all tasted the same. The real star of the show for our meal was the Big Eye Tuna Tar Tar. Very clean tasting and super fresh! We shared a dried aged ribeye and thought it was very good. The only disappointing part was it was already sliced when it arrived at our table. I feel like it cooled faster than it should have, but that did not stop us from finishing it all. Overall, it was a very good experience with exceptional service.
