With Knife restaurant, 3 time James Beard-nominated and “Top Chef” contestant John Tesar brings a fresh, new steakhouse dining experience to The Highland Dallas. The menu features all-natural born and raised Texas meats, complementing “old school” classics like 45-day dry-aged sirloin and bone-in rib eye with “new school” evolutions that include culotte and flat iron. In addition to larger “slabs” of meat for group dining — including an 18-hour braised crispy pig’s head — the menu is rounded out by an extensive charcuterie program, bacon and ham tastings, sausages, sandwiches, salads and pasta dishes.
In addition to a sophisticated dining room, Knife offers a flagstone garden patio with a fireplace. A private dining room with its own lounge and fireplace is available for special events.

Knife Ratings and Reviews
I went for my boyfriends birthday to surprise him with a nice dinner and a nights stay at The Highland. I believe the steak he ordered was under exotic it was $110 and we ordered mac and cheese for the side. When the food came out it wasn't hot and quickly got cold because the AC was blowing on it. I really hate to complain about food especially because it is no ones fault the food got cold so quickly. However, the steak came out looking a bit medium and not medium rare how we requested. I mentioned that to the server and she said she admitted it looked between MR and M. It took a while to receive the food so we just ate it as is. I felt bad that my boyfriend didn't quite enjoy the steak as much as I would have liked it wasn't not very juicy or tender. I thought we would have gotten more "bang for our buck."
Picked this place for my Birthday because everything is perfect. You can view the aged steaks to the right as you walk in and every item on the menu was an adventure. They had an incredible Sinatra Style singer and pianist at the bar named Ricki Derek that has to be the best of his kind of entertainer. Cigar bar and creative cocktails make this place perfection. Came here for NYE as well and have to say this is one of the best Destinations in Dallas' own back yard.
Overall, great meal and service, with nice free vegetable crudités and small desserts for everyone. It can end up being pretty expensive, since it is a steakhouse ($45 steak + salad + side, etc.). However, it was a very good steak, and they also have several cheaper options on the menu ($16 burgers, $30 pastas), so you can easily go and have a great meal without having to spend more than you want.
The service was amazing, the setting is beautiful. We loved all of the sides (avocado fries are a must), the cheese plate, etc., but the main star – the meat — made me not fully love this hyped spot. The steaks are "charred" (burned) on the outside. I asked for medium inside and it was very much rare. If I go back, I opt for anther entree.
The restaurant's air conditioning wasn't working which is a huge problem in the middle of the summer. For a restaurant catering to special occasions, they should let guests know in advance so they can make alternative plans rather than sweating through their meals. Seemed really inconsiderate of its customers.
Fantastic dining experience. Bacon tasting was awesome. 45 day aged sirloin was amazing. Service impeccable. The only downside was the lack of air conditioning throughout this side of the building. Guests and waitstaff were sweating throughout the evening. Fix the A/C and it was an overall five star experience.
I love KNIFE for the dinner menu. I took some clients for lunch and was very disappointed in the lunch menu. The presentation was poor the food average and very $$$$. Very different experience from the dinner menu . I will continue to go to KNIFE for dinner but never again for lunch.
Jasmine, was our waitress and she was good. But, everyone assisted even if it was not there table. A little pricy on the steaks, but my hubby is a steak lover and he said it was good and cooked to perfection. I had the burger and it was delish. Our mean was tasty and with we only go out to eat once a month. We won't complain about the dollar amount. We just thank God that we are able to treat ourselves and eat well doing it.
We had a wonderful experience at Knife. My dining companion stated that his steak was seasoned and cooked perfectly. I thoroughly enjoyed my pimento cheese burger. Great ambience, great little service touches, they staff is attentive, accommodating, and helpful. We would definitely eat there again.
Hype blown. We went for Sunday Brunch first of all, service was poor. Our server seemed so busy but we were 1 of 3 tables. We ordered the Salmon Eggs Benedict, Short Rib Eggs Benedict, Avocado Fries, a bottle of Prosseco, and a side of OJ. The bottle with OJ took 10-15 mins to hit the table, the fries never made it, and the entrees were cold. Specifically, the short rib was ice cold in the center. We didn't cause a stir but we are certain we won't return and we're thankful it was just brunch and not a $200 dinner. I believe the menu is great and the chef is awesome BUT your line must be able to duplicate the product the award winning chef produces. Our experience indicates the product and service has fallen short, we are incredibly disappointed.
An incredibly creative steakhouse and the best flavors in Dallas, a city which can often be a palate-bore. A top shelf bar with plenty of bar seating and cigars for purchase, with an open kitchen and a terrific dining setup. From a service standpoint, one of the smartest concepts in Dallas, from crudites to the dinner mint. Shout-out to Ryan for finding an extra doggie bag bone for our "multiple dog situation." Chef Tesar suggested we return for our anniversary--we'll be back we'll before then. 6 stars or of 5.
Host staff was friendly and helpful. They shared their hospitality. The server was solid, informative and attentive. The food was wonderful with the exception of the Beef tartare. It was pedestrian at best. The beverage list is solid. We sat with a view of the kitchen and it was not good. There was food left on the floor for our entire meal. The kitchen staff all had different uniforms some with hats, some with a bandana, some with caps on backwards. the uniforms were not well kept; not a good look. A cook came out to visit friends with a dirty apron. The back walls behind the hood was not cleaned and the sauté pans had carbon buildup. I only share this for the food was amazing the service was amazing and the desserts were the best I have had in 15 years. overall I would revisit this restaurant and recommend it to friends.
We shared a dry aged ribeye with mushrooms and seasonal greens which were pea leaves. Steak was perfectly cooked and had great flavor. Had a 2009 saint emellion Boudreaux that was a great value half bottle.
Service was good. The waiter didn't bug us and took good care of us. My only nick was the bartender made me a vesper and it had a ton of ice in it. You got to strain that so the drink does get watered down too much.
Fantastic food with perfectly prepared steaks and an excellent ambience. Service very disappointing and way out of synch with food quality. With an early Sunday reservation (5:30 since we had a 3 year old with a 7PM bedtime) and a half-empty restaurant, our steaks weren't served for 90 minutes. Agonizingly long intervals between courses. Totally inexcusable was the failure to clear dirty crudité plates for the entire course of the meal.
Poor rhythm of course timing and no effort to straighten up the table at a pricey high-end restaurant left a negative impression on what should have been a home run experience. Too bad, because the meat quality was outstanding, in a town with lots of excellent steak restaurants choices.
