• Cambridge Remain In Light - ABV 5.0

  American light lagers and Pilsners are easy to drink and refreshing. They are not, however, easy for a craft brewer to make but we are always up for a challenge. Pilsner malt and flaked rice provide sweet cereal grain notes while German and Czech hops add spiciness and a balanced bitterness to the finish. Cold fermented and aged with a German lager yeast, the palate is clean with a snappy finish.

  Pale gold, bubbly, seriously dry. Richly aromatic, suggesting myriad fruits of the earth, and the earth itself, with a complex, palate-cleansing balance of fruitiness, astringency, and acid. Alcohol content 7.5% by volume. Full cork closure, 750 ml. bottle. Delicious with many foods, much as the driest champagne can be.

• Orval Trappist - ABV 6.2

  In contrast to all the others, the Orval Trappist brewery makes only one beer for the general public. It has an intensely aromatic and dry character. Between the first and second fermentations there is also an additional dry-hopping process. Through this the beer acquires its pronounced hoppy aroma and extra dry taste. Bottled at 5.2% abv can go up as high as 7.2%

• AleSmith X Extra Pale Ale - ABV 5.25

  AleSmith X Extra Pale Ale is a clean, light-colored, light-bodied ale. The People's Choice award winner at the 2000 San Diego Real Ale Festival and the second runner-up in 2001, it has a good dose of dry hops balanced by a gentle sweetness, giving an almost sweet-and-sour effect. Appearance: Light golden color, and a nice white head, with good retention when properly served. Flavor: Starts off with almost tingling flavors of citrus and pine, balanced by a nice malty sweetness, then fades to a dry finish with a lingering hoppiness. Aroma: Strong lemony-citrusy character, with sweet malt and pine in the background. Mouthfeel (body/texture): Smooth, light-bodied.

• Birrificio Italiano Amber Shock - ABV 7.0

  Ambershock® is an amber beer produced by way of infusion, with 7.0% alcohol by volume (17.7 Plato degrees). The wort boiling phase is prolonged in this case to obtain a certain caramelizing of the sugars in the wort. Strong, full-bodied and mellow, its marked yet well-balanced malt flavor mainly derives from a special bottle-conditioning process that lasts for approximately 4 weeks. Bear in mind that this is not a refermentation phase caused by adjunct sugar or wort, which happens with Trappist beers. It is an exclusive procedure adopted by Birrificio Italiano® of Lurago Marinone. That is why Ambershock® is only sold in bottles. If it were matured in vats and served on tap, it would have a completely different taste. Bottle conditioning also brings about perfect settling of the yeast, which makes it possible to have a perfectly limpid beer with a strong, bright amber color.

  Tart of Darkness is a 7.2% abv stout (a far cry from our Black Tuesday) that we aged in used oak barrels that previously housed beers such as Sucré or Black Tuesday. We then added our special blend of souring bacterias and wild yeasts. The result is a perfectly tart yet awesomely dark and roasty sour stout. Not a style you will see very often, and in our opinion, not a style seen often enough. This unique stout has notes of tart plums, roasted coffee, vanilla and oak.

• De La Senne Taras Boulba - ABV 4.5

  Wow. This is quickly becoming one of our favorite beers here at Shelton Bros. This is the perfect session beer - loaded with complex yeast flavors, hopped to perfection, and as drinkable as any beer you've ever tried. At 4.5% alcohol, it's built for drinkability we suggest buying it by the case. You're no doubt wondering where the name comes from and what the hell the foreign text says. It's all been explained to us by the brewers, but we're still not entirely clear about it. What we can understand is that a young Flemish man has gone and married a French-speaking Wallonian girl, and his father, Taras Boulba, is very angry. (Smeirlap means 'fool' in a bizarre local dialect, which combines Flemish and French, somehow.) This is all a bastardization of the original story by Gogol, whose protagonist was Russian, a Protestant. His son marries a Polish girl, a Catholic, during the religious war between the two countries in the 1600's, and the Russian father simply kills his son to eliminate the shame.

  Take Dupont's legendary yeast, organic barley malt, a waft of certified organic wheat, a swirl of citrus and spice and you can almost imagine the rare, delicious interpretation of the signature Belgian beer style that awaits you. Foret Blanche is drier than most wits, more lemony than it is tutti frutti, and has a yeasty, tart profile. Foret Blanche is 5.5% ABV, with a foggy honeycomb color.

• Oude Gueuze Tilquin à l'Ancienne - ABV 6.4

  The Gueuze Tilquin à l'ancienne is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l'ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose.

  Over the ages the term 'cellar door' has numerously been referred to as the most beautiful term in the English language. upon setting out to create the first summer addition to the Stateside line up of ales; the feeling that almost instantly came to me was that of beauty & cleansing. many summer offerings tend to lack the complexity of their bigger, colder season counterparts; so my goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the 'cleansing' aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let's not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

  Right out of primary fermentation this beer is decidedly an American Pale Ale, but as it enters secondary, a bridge to Belgium is built with a dose of Brettanomyces Bruxellensis. A 5 week maturation results in slightly dry, fruity beer with a hint of floral Brett character that will evolve over time.

• The Monarchy Grodziskie - ABV 4.0

  The Monarchy's is the only authentic version of a "Grodziskie", made with 100% oak-smoked wheat, local Polish hops, and the beer's original yeast. When it was discovered that the original brewery occasionally used willow bark in the recipe, they decided to throw that in too. Based on a beer style once brewed in the Polish town of Grodzisk Wielkopolski.

A healthy dose of additional Amarillo and Centennial are dry hopped to give this beer an inviting hop aroma. The beer is fermented with a neutral yeast strain and allowed to dry out so it finishes crisp and clean.

• Rogue Shakespeare Stout Nitro - ABV 6.0

  Stout was first introduced by Guinness in Ireland as "Extra Stout" (a stronger version of their Porter). Later, the stronger Imperial and Double Stouts emerged. Sweet, Milk, and Oatmeal Stouts are English adaptations with less alcohol and less bitter then the dry Irish Stouts. Victorian England recognized Oatmeal Stouts nutritional value and it is traditionally the drink of choice for nursing mothers and athletes. Rogue's Shakespeare Stout is ebony in color, a rich creamy head and a mellow chocolate aftertaste. It is made from Northwest Harrington, Crystal, and Chocolate malts, roasted barley and rolled oats, along with Cascade hop.
