Jaleo - The Cosmopolitan of Las Vegas

So my wife and I have been going to Jaleo on all our Vegas trips for several years now. We generally love it. I find the staff to be hard working and very knowledgeable about the menu. When we arrived, there was a Gentleman who greeted us warmly who I presume filled in when the regular hostess my be busy helping someone else. The regular hostess greeted us, wasn't quite as friendly but no big deal. She sat us down in a table that really wasn't ideal. Jaleo has a great atmosphere and we preferred to sit somewhere where we can see more of the inside instead looking out at the lobby area. We asked if might move since it was an early Monday evening and the restaurant was most fairly empty. They took care of us and found a great little table and we were happy.
So to our disappointment. We first go for the spicey margarita's that we always order. They're quite tasty with a warm salt around the rim but I have to say this time they were really weak on the tequilla. Maybe they've always been that way but for $16 dollars, I think they could splash a little more in there. I went through 3 of them that night and didn't feel a thing. Not that this is what I was going for but I honestly couldn't even taste any tequilla.
Next we ordered their prefix menu. There were several different dishes tapa style that I honestly have to say were all unremarkable. I liked the steak at the end with two style sauces, one being a cilantro and the other was a creamy something. It was nice, but still pretty much a flank style steak so kind of tough in parts. There was an octopus dish that was slighly fishy that was ok. The sliced meats in the beginning were just good, not amazing. A chickpea salad that was just ok. One thing that was delightful was these little spinach filled pastries that had a unique flavor but it's not something that would bring me back for more.
With the margarita's, the prefix menu and a bottle of sparking water we spend over $300 for a mostly forgettable meal.
Perhaps I came into this dining experience with expectations too high, but I was completely underwhelmed by the food. I really enjoy Spanish food and my favorite part of visiting Spain is going to tapas bars, so I was excited to try Jaleo. The experience could be compared to having appetizers at Cheesecake Factory. We ordered the chicken fritters which tasted like shredded chicken mixed with cream cheese and then fried. The paella was unbelievably salty. However, the wine list and the staff were exceptional. If you have a more pedestrian palate, you will enjoy this restaurant.

Absolutely delicious! Tapas tasted like they were made in Spain. I've been to other tapas places in the US and it just wasn't the same. José Andrés does an excellent job at taste and presentation. Service was also exeptional.
Great food. The paella was a little smaller than I remember from the last time I came. Would keep coming back when I return to Vegas. Every dish is great and everything is a little different.
Everything has amazing flavor and nothing overwhelms you because of the tapas portions. The server did a great job pacing our food but otherwise kept himself scarce.
Wish they had desserts other than pudding/ice cream style options.
We loved the creativity of the food. Some of the dishes were standard, but really well done. Others were slightly unique and wonderful. We loved the dining. The sangria was perfect as it was not overly sweetened which is frequently the case.
I think it was too expensive for tapas that were just good, not great.
Food was superb, I highly recommend the Endibías salad, absolutely an explosion of flavor, I could have eaten more. The paella was authentic, just as if I was in Spain. The tortilla española was firm but the middle was a little soft because of the lovely onions in the middle. It was cooked through, to my liking, because I do not like runny eggs. The shrimp was cooked in a garlicky olive oil. Absolutely stunning!

All of the pork options are fantastic. The tomato bread!!! The gin and tonics!! Everything is great.

The food was quite good with a wide selection. However, the service was "meh" at best. Our waiter barely checked on us even though his station only had a few tables; brought out our drinks after 3 tapas were already served.
We've been here before and the service was great--sad to see this place make a turn for the worse.
Excellent food, with friendly, knowledgeable and attentive service. The only minor criticism was the tasting menu food came out a little too fast.
Sangria is a must have with both $35 version and $50 version of Jamon Iberico.

We love tapas because they allow us to try so many things without being stuffed or laying an arm and a leg. We tried about five different items from the menu and they were delicious! Especially the goat cheese and bread with fig jam on top.
Food was average, good variety. The fried tapas were oily and not as flavorful as we’d hoped. Not terrible but was hoping for food to taste a bit better.
We had a wonderful experience. I read reviews that talked about inattentive service and mediocre food. We did not have any of that. Our meal was one of the best we have had in Las Vegas. All of the staff was top notch. They were very friendly and informative. Our food was flavorful. We especially loved the salads, hangar steak and the shrimp. We cannot wait to go again.
