This is by far one of the most unique and delicious restaurants in Portland. The food is creative and tastes amazing! Every course is a sensory journey, paired perfectly with the beverage presented. I took my wife there for her birthday dinner and they went all out for us, going so far as to sending us home with their tasty steamed bread and giving her a card signed by the staff! You can’t go wrong here. Go. As soon as possible.
Truly an amazing food experience. It just keeps getting better and better, especially with more space and opportunity to grow in their new space. Delicious, interesting, creative ingredients, dishes, pairings, and platings. Plus, they are right there to answer any questions you might have!
It is certainly not a place I could go to regularly as it does cost a pretty penny, but it is absolutely worth saving up for to go to on a special occasion. And with their new attached bar space, Deadshot, there is an added accessibility to those to can't frequently indulge in the all-out fine dining experience. Would recommend 100%!
It was absolutely spectacular from beginning to end. The attention to detail was incomparable; the service was impeccable; and the creativity, preparation and execution of the dishes was exemplary. I can't wait to go back!
Wonderful meal for my boyfriend's birthday. The Holdfast team took great care to accommodate a pregnant person in our party, and went out of their way to try and help/accomodate us when we had some unexpected changes to our plans. The staff was super friendly and the cuisine/paired drinks exceptional. The price is totally reasonable when you consider it includes food + drink + gratuity. A great experience!
Now our Favorite restaurant
This was our first time dining at Holdfast's new location on SE 11th. The new place is charming, and the silverware drawers are a welcome upgrade. The food was as stellar as ever (particularly the hamachi). Holdfast remains our favorite restaurant in PDX!

I've been to Holdfast several times over the last few years and I've never been disappointed. Will and Joel have this thing nailed down: hospitality and service are beyond expectations (for instance, I spilled wine on my shirt like a rookie and Will immediately appeared out of nowhere with soda water for the stain); the atmosphere allows for quiet conversation with your dining partner, or larger group discussions during each course if that's what you're into; the wine pairings are thoughtfully curated and extremely well-tailored to their respective courses; and this goes without saying, but the food is stellar. I'm thrilled that they've kept their madeleine on the menu since the beginning, as well as the honey and yogurt course -- I've spent too much time fondly thinking about both of those dishes.
A visit to Holdfast will be well worth your time and money; the experience is unforgettable.
Amazing for special occasions and taking a serious date. All of the waiters were impeccable in their presentation, consideration and explanations of each course. Bravo!

There were a couple optional add-ons/extras and my wife and I decided to do them for one of our meals so we could try it both ways. We love food and that made it even more fun.

This was our 21st meal at Holdfast. All the previous visits were excellent. A few of the dishes in the tasting menu were alway exceptional, the rest simply excellent. This time surpassed all the rest. Both my wife and I thought this meal was far above the previous ones - something that is hard to believe considering how superb our previous experiences were. We could not pick out one course as our favorite - they were all so far beyond excellent. We could not imagine how the Holdfast crew could have topped our previous dinners. Now e have experienced it, and we are in awe!
Overall, a wonderful experience. Both Chef Joel and Chef Will were passionate about the food presented and were very engaging with everyone. Wine Guy, Ty was very passionate about his wine pairings as well as his craft. Thoroughly enjoy ourselves. Highly recommend for a special occasion or just seeking out what some of Portland's Chefs are creating. Creative tasting menu, excellent wine pairings and incredible value. I highly recommend checking out what these two Chefs have created.

From start to finish, this place is incredible! Perfect for a date, special occasion, etc you can interact with the chefs and somms, learn while you eat, and be amazed with each new dish.

In a world where tasting menus at this level are $200++ we felt the value at $140 (which included service and wine pairings) was unbelievable. Every dish was a hit and every pairing was enjoyable. The experience was refined but casual and fun. We can't wait to go back.

We had an absolutely wonderful experience. The chefs were outgoing, informative and funny. The sommelier and waitstaff performed impeccably. The food was outstanding - each course a revelation. I really enjoyed the entire evening and cannot give higher marks across the board.
Food presentation and taste, as well as progression through courses was absolutely spot on and amazing. Attention to detail was perfect, as was communication and interaction with chef's and servers. Wine pairing was solid - in truth, no wines I'd want to go purchase on my own, but all solid. IMO, the courses at Holdfast blow those away at similar types of experience restaurants like Langbaan, DOC, Tailor Railworks (when it was open)..
All staff amazingly friendly, great personalities, all of the right mix of things.
The one huge missing piece here was the environment/ambiance. The dining room is similar to what you'd expect a popup to look like in an inexpensive 30's/40's vintage hotel. Walls dominated by vintage type wallpaper, terrible lighting, and what seems like a complete lack of intention. It wasn't beautiful or relaxing to be in. It wasn't a space I'd ever want to be in if it wasn't for the food and servers being there. I think the environment is a real disservice to the food being served and the attention to detail and quality that goes into it. I imagine there are others who do enjoy this type of look, but for my $300+ meal, I want an environment that I actually want to return to and sit in for 2 hours. At this level of expectation, I believe it's food + service + environment. All are equally important.
We had a wonderful dining experience at this place. The dishes were meticulously prepared and they were so delicious. The chefs used organic and fresh ingredients. We highly recommend this place and would come back the next time we visit Portland.
You can tell that Will and Joel put a lot of thought into each dish. The blend of ingredients and herbs they put into each dish makes every bite special. You just have to experience Hold Fast for yourself to truly appreciate what they do. It's not a romantic setting where you can have "alone time" with your date. Each dish is described to you and paired with a glass of wine. Seating is all around the bar so you can watch the dishes get prepared. It's the kind of dinner you need to be ready to really dive into and focus on what you are eating. Not good for business meetings or other gatherings. It's really all about the food.
This was truly a unique and wonderful experience! All of the dishes had such fresh ingredients and balanced flavor, and the wine pairings were perfect. It was also cool to sit at the bar and watch the cooks plate the food in front of us. Everyone was very knowledgeable and cared deeply about food. Delicious and fun evening!
One of the most exquisite meal I've ever had. Such interesting flavor combinations and textures. They also did a really wonderful job of accommodating dietary restrictions.
My only critique is that that I'd have liked a more robust pairing option instead of one glass per two courses, or it would have been nice for more wine options off list (perhaps ones that weren't so natural too).

An experience as creative as the food, Holdfast seats you directly around the kitchen, where you get to watch the chefs meticulously craft each course. The duck breast served toward the end of the tasting was simply the best plate of food I had while in Portland.

This was our fourth evening dining with Holdfast. We love the concept, the incredible and thoughtful preparations of edible art. We loved the new location - it was elegant.
I love everything about this place: food, techniques, creativity, pairing that goes well with the food. I love that Holdfast can accommodate dietary restrictions. We had vegetarians in the party and they loved the place as much as meat eaters. I love passion of Joel and Will. I think they bring out the best of every ingredient they use. They just fun to look at when they work on their culinarily masterpieces.
Over several courses the chefs at Holdfast tell a complete story with a deft balance of color, texture, palate weight and flavor. Each dish highlights specific flavors without being heavy handed. To me, there's no better sign of a chef's expertise than to pack so much interesting flavor into each bite without feeling heavy.
As much as I loved the execution of each dish, my biggest critique was with the drink pairings. When you're paying a luxury price for the meal ($140 a person) you want to feel like you're getting luxury wine pairings to match the caliber of the food.
To the layperson, each beverage pairing probably seemed fine. To me, it seemed like the person putting together the wine pairings did a lot of value shopping in "cheap" regions.
For example, the foie gras w/ pickled cherries, cherry gelée and dehydrated/rehydrated beets was off the charts. That, followed by duck confit w/ corn purée was the apex of the meal. This is where I'd really punctuate the dishes with a like-minded wine selection. Burgundy, Etna Rossa or Priorat are other regions I would've looked to to give the diner a strong pairing.
But instead, they gave us Lambrusco—a region known as a "cheap" wine region. To pair it with the foie gras and duck confit "logically" worked. If I had paid more like $60 per person for the tasting menu and pairings (like SPQR in San Francisco) Lambrusco would've been fine. This was after the previous dish where the black cod was paired with Muscadet—another low tier region known for cheap bland wines. The Muscadet was nice because the wine was aged on the lees for 48 months making it interesting. I would've looked elsewhere, like Loire.
During the dessert course they poured us an apple cider from Sweden (or Switzerland). The cider came from 300-year old trees. I hate cider. Never mind it's the latest drink trend, but again Holdfast went the cheap route. Again, I would've liked to see something from a top tier region for $140.
Exceptional dining experience. If you have the opportunity to go, you must! Food and wine pairings were some of the best I’ve ever had. I tasted ingredients I would have never tried anywhere else and they were incredible.
