Chef Nicolas Guardado and his wife Reyna opened Guardado's Restaurant in 2007. Guardado brought with him a wealth of experience, rising through the ranks at local-area tapas restaurant Jaleo to a seasoned head chef.
Now, he is infusing that knowledge into his own restaurant, as well as adding some popular Latin American entrees and some traditional dishes from his native Salvadorean background to Guardado's extensive menu.

Dinner started well. The tapas were delicious. Then the paella arrived. The first few bites were delicious. And then the 4” hair, intertwined in the vegetables and rice, killed the experience. The waiter and manager were challenging us about the hair. They asked where it was and my wife had to tell them it was twisted in the bite she spat on a plate. The manager forgot the most basic truth: the customer is ALWAYS right. Sadly we will not be coming back.
We went to Guardado's for restaurant week. What a great offer--four tapas plus a dessert for $25. We enjoyed the tapas, but needed to take some home because they were so plentiful. It's a small restaurant with a dedicated clientele loyal to the family-owned business. What a find!
Guardado's is a local favorite. The food is always excellent, no matter what we order. The atmosphere is perfect if you want to have dinner with friends and not want to have a problem with noise level. And the personnel are very attentive. You can't miss at Guardado's.
The tapas were delicious & an excellent value. The staff was friendly, helpful, & attentive. We have passed the restaurant when walking in Bethesda but this was our first time eating tbere. Tbe live music wasn't too loud for us to have a conversation. All around a lovely experience & we'll be back again soon.
I wanted to love this restaurant. It's 'cozy', but we were squished into a small area with two tables of 4. The tables nearest the door. It was noisy and claustrophobic. Our waiter was horrible. We saw very little of him. The woman helping him took care of us.
Our favorite tapas were the mussels, the spinach with raisins and the chicken thighs and shrimp with rosemary. The chicken dish was spectacular. Then we shared a paella valencia which was good.
Great food. Small authentic place. Very pleasant service. We ordered the tapas, and some ceviche. Flan and tres leches cake for dessert. Everyone loved the food and added this place to repeat list. Likely to become a favorite place to come enjoy a meal with friends
Once Guardado's came to my attention, I went there to eat every chance I got.
In particular, I enjoy treating friends to meals there in celebration of special occasions.
Never ever have I been disappointed by the quality of the food or the level of service! Both are deservedly praiseworthy.
Having come back from some time in Madrid and Andalusia some months ago, my husband and I love to make a meal of tapas. We were delighted with Guardado's! It's a block off the beaten path of one of Bethesda's restaurant pockets, and a jewel. Simple but bright and pleasant decor, knowledgeable, friendly but non-obtrusive service, and each little dish was as well prepared as it possibly could have been, creative and delicious, with appropriate portions. The waiter brought out each dish as it was ready, so all was fresh, and we had the pleasure of a new surprise every few minutes. This is now our local tapas spot!
Two Women shared three tapas (or small plates) a tender steak, a mushroom and shrimp dish and an endive, mandarin orange and delicious cheese salad. (On other visits I've had the wonderful lamb chops. I also love a fabulous dessert ---tres leches cake.) This time we had flan for dessert. My friend, from Florida, was amazed at how reasonable our check was.
Excellent food, tremendous value, very good service, always consistent. This place flies under the radar and might be the best Tapas in the DC area. Price wise=excellent, food quality is great. Always have had a very very satisfying meal and experience here, not flashy, not expensive an excellent neighborhood restaurant that deserves to be on your list!
