Chef Nicolas Guardado and his wife Reyna opened Guardado's Restaurant in 2007. Guardado brought with him a wealth of experience, rising through the ranks at local-area tapas restaurant Jaleo to a seasoned head chef.
Now, he is infusing that knowledge into his own restaurant, as well as adding some popular Latin American entrees and some traditional dishes from his native Salvadorean background to Guardado's extensive menu.

We were 8 people although we thought we would be ten. We used the private room and it was wonderful. We could enjoy conversation, the food was delicious and our waiter was charming. The wine and margaritas were also enjoyed by all. I would highly recommend Guardados for a small group or any other occasion.
Every tapas selection we tried was fantastic. Simple fried plantains were amazing! Great mojitos! Small seating area so not much room between tables and kind of loud but warm and friendly service. Small issues for the excellent food. Food was delivered quickly. Tres Leches cake was light, perfectly sweetened, and delicious. Can't wait to go back.
The paella negra barely had any squid ink in it so it tasted bland. Plus it was over baked. It took over 1/2 hour to receive our drinks and in the meant time, we were rudely informed by the woman running the dining room that we couldn't have bread until we ordered. Problem was, our waiter was deep in the weeds and didn't come to our table.
Roasted and stuffed red peppers were excellent as was the broiled octopus but everything else was not as good as our first experience. Stick with beer and wine at this place as the drinks are terrible and will unreasonably slow the meal down.
Our second visit and there will definitely be a third. A bit slow at first but they were admittedly slammed, and once things eased up so did the pace thru the kitchen. Despite this I would rate the wait staff as terrific. Great food, reasonably priced. Amazing tortilla de chorizo -- we ordered three! Flan was also amazing!
The paella was really tasty with shrimp,sausage and different vegetables. The sangria was just perfect, with bits of fruits floating around in my glass! The fried plantains were wonderful! and the flan was silky and delicious! Our server was very knowledgable about everything on the menu and very friendly. The restaurant is a little tight, the tables are really close together but this can be expected in Bethesda. No problem finding parking across the street. We will be going back again soon!
Glad we made reservations as Guardados was packed the night before Inauguration. Service was slow as a result, but the food was terrific as always and we were in no hurry. Paella is always wonderful, and we had a few tapas and sangria while waiting for it to arrive. This is our favorite tapas spot as it is small, friendly, family-owned and has plenty of parking across the street.
Guardado's is always our go-to restaurant when we want a "comfort" meal - a meal we know will be cooked with care and served with a smile. They just celebrated their 10th anniversary which is an incredible milestone for any restaurant, large or small. I wish them another 10 years of success.
We visited Guardano's for the first time this past New Year's Eve. We were pleasantly surprised by how good the food was--very tasty, fresh, and beautifully presented. The service and atmosphere were also really nice. The dining room is small and intimate and had a really nice buzz. Overall, it was a great dining experience.
I have taken friends here several times. Each time we have enjoyed the friendly service and great small plates which come hot to the table. It is family friendly and parents should feel comfortable about taking small children; they have more variety on the kids' menu than several other restaurants. All in all I would recommend this place to my friends any time.
Guardado's serves amazing Spanish tapas and wonderful paellas. We had the seafood paella (marinera) and it came loaded. We also loved the paella negra, with squid ink and yummy chorizos. It was DELICIOUS. Everything we ordered tasted authentic and amazing, especially the croquetas, the gambas al ajillo, the pinchitos, and the jamón serrano con queso manchego. The sangría was delicious and half price on Wednesdays. I can't say enough good things about this place. It's family owned and the staff is treated like family as well. Just go and try it for yourself.
Love this restaurant for it's neighborhood feel, consistently wonderful food and attentive, friendly service. Our go to place for special occasions and to bring out-of-town friends. Everyone is always impressed by this quaint, family owned restaurant amongst the impersonal, well-known chef restaurants of Bethesda. There is a county parking garage directly across the street which is free on the weekends. Always plenty of parking.
We have been to many Bethesda restaurants over the years, but somehow missed Guardado's.
All four of us in our party were thrilled with the food and the service. It was an accidental find when looking for a place for a casual dinner. It is now on our short "go-to" list for dining in Bethesda. We all recommend it highly.
I always love Guardado's, whether it is dining with a friend or with a small group of friends. Wonderful choice of delicious tapas, excellent paellas, nice wine list, friendly and easy service, a lovely experience. Always such satisfying food and a satisfying experience. Nico, Reyna, and Jesus, along with other staff, make this a very good restaurant.
