We typically order a big prime rib like this and have it finished on the grill to a medium. This renders the fat a bit while preserving the tenderness of the meat from the slow roasting process. We've done this several times in the past. The problem with the meal this time is that the restaurant provided us with an "end piece", which tends to be dryer, leaner, and saltier to start with. This is not what we wanted. The restaurant did address this issue but I would recommend to the restaurant (and future patrons) that if an "end-piece" is served, it should be communicated. The kitchen needs to know if this cut of meat is what the table wants.
