Nice small plate menu. Service was excellent. For a casino location not bad just open to the environment. Quality was very good with good choices.

We did the 5-course tasting menu and the service as well as the food was amazing. My only complaint was we struggled to finish everything.
We are huge Keller fans since Top Chef Masters Season 1 and had been to his flagship Fleur De Lis in San Francisco before he closed it. Even with those expectations, this did not disappoint.
I am not sure why but I get the feeling that people don’t always feel like his menus are captivating. All I can say is that once you eat there you will never think that...
... I mean he is a traditional French chef whose favorite food is a cheeseburger. How can you beat that?
Absolutely fantastic food but even better service far exceeded all expectations!! We were celebrating my mother-in-law's birthday, who is hooked up to an oxygen tank, and our Maitre D' Jesus was excellent in every way. He made sure the wheelchair was put away properly, and was returned to the table at exactly the right time. We told him we were going to the 7PM Michael Jackson One show after dinner, but had to pick-up tickets at will-call and were not quite sure the best way to get there, so he personally escorted us to the venue. Thank you so much for making a special occasion even more special.

After dining at this restaurant for years, it's disappointing that the staff has changed in the back of the house. This is clearly noticeable in the presentation of the food and the inappropriate temp of the entrees being served. The skirt steak is currently being served sliced which is having a severe cooling effect on the meat. The entree is cold within minutes of being served. This dish was previously served as a whole piece of meat. Maybe the slicing of the meat hides the fact that the portion sized has diminished substantially. Nevertheless, some staffing changes are necessary in the kitchen.
Have eaten here 3 times now, never disappointed. Can't say enough about this place. Enjoyed the new menu
The service was friendly and efficient and the drinks and food were excellent. Chef Keller visited our table and was so gracious. It was our most enjoyable evening in Las Vegas.
My one complaint was..Chef Keller was actually here that night. He walked back and forth in the restaurant without stopping at tables. He was obviously friends with the people at one table. Most people visit a restaurant because of the chef. For him to ignore the people who made him what he is was inexcusable. He needs to be a bit more humble
Loved the small plates- we chose one from USA, France, Italy and Mexico. The fresh oysters were amazing, the Italian agnolotti shouldn’t be missed- really enjoyed every bite. Because we sat on the “patio” outside the restaurant it was a bit loud with hotel guests- but great people watching.
Food was mediocre at best. And way overpriced. Sangria was tasteless.
Excellent service. Food was perfect and delicious. Hubert Keller came out personally to greet every diner. He autographed a recipe card for wife. A delightful experience.
The onion soup is a "must have". I had the yellow tail. Husband had the filet. Sister had the skirt steak. All were beyond excellent!

My dinner was excellent (pix included), but the hamburger lunch was just OK. The issue is that there are banners advertising the burger as if it was the specialty, or at least something special.
The bun was dry, not well toasted, the meat was not moist, and shaped too high. Onions were raw, lettuce a seeming afterthought, and frankly, the entire concoction was just average. Again, my main issue here is the way the 'burger bar' is advertised via banners located around Mandalay Bay, created an anticipation of something competitive with Gordon Ramsey's BurGR at PH. Which brings me to my next point - the product there is truly THE benchmark in burger excellence. Elevated, remarkable and they take a humble 'burger' to an entirely new dimension.
For Chef Keller, I suggest focusing the brand (per their banners and advertising) on bites from around the world (for which they've created a fantastic array of small plate samplings including octopus, squid ink, and the Mexican delicacy cuitlacoche). My steak was outstanding. Cocktails were thirst quenching and spot on. Dessert left me wanting more. I would recommend Fleur without hesitation - just not the lunch hamburger. But really, what's more important a great steak, or a burger and fries? I digress...
Very limited menu for lunch
Eric and his team rolled out the red carpet for a special evening to celebrate a birthday. After starting with a rosé champagne, we had the feast for four with wine pairing. Each dish was better than the next with beautiful service. The White Onion Soup Velouté was absolutely divine, and perfectly paired with a Riesling. The Hudson Valley foie gras was perfectly presented with a caramelized brioche and Ice Wine. The surprise favorite was the grilled octopus which was succulent and flavorful, so different from the usual preparations. Each entree, the Poulet Rôti, the Braised Angus Short Ribs, and the Grilled Skirt Steak Lyonnaise, were perfection on a plate. These were accompanied by a delicious Nebbiolo. The final star of the evening was a lavish tray of desserts including soufflés. Fleur is a beautiful restaurant with great cuisine and attentive service. The attention to detail is what makes this restaurant so very special.

Not as good as last year. Used to be best hamburger in LV. Hamburger served lukewarm and bun was dry. Maybe an off day. Am trying again tomorrow.
Food was amazing and the overall experience was outstanding. Everyone in our large group enjoyed the meal so much, that they are still talking about it at the office a week later. Finally, Chef Keller came out to the table to say hello and we got the opportunity to thank him for a wonderful meal. Highly recommended.

Shocked at how ordinary the food and service was. I'm happy to pay elevated pricing for elevated cooking, but all four of us were disappointed. I suppose that's what one should expect in Las Vegas. Too bad.
We were seated at 1:00 pm. At 1:40 I asked if we were going to be served. They apologized and said the kitchen was backed up. In Las Vegas, in Mandalay, where there are conventions every week of the year, I would think you would be prepared to a lunch service. Food was ok. Service was poor. We won't be back.
This service was absolutely horrible...we booked a business lunch to meet clients during a trade show and the wait for was over an hour and a half before our food came out. Most of us had ordered salad! The table next to us got so frustrated that they cancelled everything after waiting an hour and got up and left to go back to the tradeshow without having eaten anything.
This restaurant clearly needs to get it together with their staffing considering how often conventions are held at Mandalay Bay. If they can’t service the tables in a reasonable time then they shouldn’t be in business of selling food. We only had a group of 8, which is large but definitely manageable. I will not be booking group business lunches here again during conventions.

We had the onion soup, salads, and short ribs. All were so good we will one back just for them. We highly recommend this restaurant.
Disappointing compared to past restaurants from Hubert Keller. No actual truffles were harmed in the making of the truffle agnoloti. The skirt steak was tough and badly prepared. The foie gras tasted good and had an impressive presentation, but was badly cleaned and hard to eat.
Insane and Horrible ambiance with a Loud Obnoxious band playing outside this open to the outside promenade. We we’re sat down in the rear of the Restuarant, only to be hit with the constant thumping of the annoying noise that was overpowering. We told them we we’re leaving and the waiter pointed up to the glassed-in upstairs Wine room that had a private table. They offered and we accepted. They saved the evening!! We both did multiple “small plates” and finished with a Gran Mariner Soufflé. Food was outstanding. All ended well!!
Loved everything about this place. Staff, food, ambiance. There are so many restaurants to choose from in Vegas and I am so glad we chose Fleur for our last night there!
I was very pleased with the food, loved the decor...the staff was very friendly. The only issue at all was that despite there only being a handful of full tables, the service tended to be slow. I might be a bit picky, but when spending $$ and enjoying a fine dining meal, I expect empty plates to be cleared relatively quickly. That wasn't the case. But otherwise, very enjoyable. Highly recommend the sliders!
Fleur de Lys - Where art you? Well, just Fleur signifies the move from French/Alsace (Lys- the Flower of France) to global French fusion-esque. Food technically well made and presented; it lacked soul and character. And the punch of flavor. The beef Carpaccio, sliced too thick; difficult to eat; a bit more acid and salt would help; The menu items leaves one paralyzed to choose as there really is nothing grabbing; it seems the concept of bouquet of flavors (or flowers) only works with the sum is more than parts. Here it is not. BTW, the $5000 burger is a steal; as the Ch. Petrus sold with the burger seems to go for $5300 alone. Not disappointed, but expected more.
Not bad for a $25 burger. The Pain Keller cocktails almost put us under the table, tread lightly, but know that they are amazing.
World Tour was awesome! Incredible amount of food. Every course was a multi-dish sampler.
Service I received raised the bar. It was that good. My 2 only issues were when asked for water I was not informed a bottle of water would be $10! The other was ordering a drink it was $23 for a double.
