Service was incredibly slow. Food was adequate but overpriced for what it was.
Flatz is a great place for brunch on a Sunday. The bottomless Mimosas are great and the food is always good. The chef also makes food that is not already prepared. I think I need to find out what other things I can order from the Chef. :-)
Celebrating an anniversary
We have enjoyed the breakfast buffet at Flatz on several occasions for Mother's Day, New Year's etc. This New Year's day buffet was very disappointing. There were limited selections compared to past years. and virtually no dessert offerings. We would have been better off going to a favorite restaurant and each ordering what we wanted off the menu.
I had been searching for a place to have a special Christmas dinner with my family. Flatz had advertised a “special Christmas Buffet”. Booking our reservation more than 1 month in advance, we had high hopes for the dinner.
We were sadly disappointed with Flatz - it came out very “flat” in our opinion. We have experienced other Christmas Buffets at other hotels and resorts (ex; the Hyatt in Downtown Denver; the Cheyenne Mountain Resort in CO Springs; etc) and we were anticipating something of that caliber. We were sorely disappointed - especially related to the price ($50/adult & $25/child!)
The buffet had a limited selection of foods. The main items consisted only of prime rib or ham. There were only 4 side items which were as common place as a “regular meal” (sticky mashed potatoes, rice pilaf, carrots, and squash). The desserts were left-over from the brunch buffet (cinnamon rolls and the like). The salad was fresh, but, again, limited items.
Our waitress was kind, but only checked on us when we first sat down with our food. We did not see her, again, until we had already selected our desserts. We had empty water glasses and had to request more water and some coffee. The restaurant was not busy at that time, either.
This restaurant would have been satisfactory for anyone traveling from out of town with limited knowledge of the area - or no means to eat elsewhere; but, specially selected for a holiday meal, it was an extreme disappointment.
The family went to Flatz for Christmas brunch. The wait staff was great, the salad bar was just okay, hot vegetables were underdone carrots & overdone broccoli? The mashed potatoes were tasty but stiff. Prime rib and ham were excellent & the only redeeming feature of Flatz which is an appropriate name for the flat features passing for ambiance. The dessert table had a variety of stiff cream pies, cakes and old cinnamon rolls? Bottomless mimosas were weak. Overall, our Flatz Christmas was not a festive feast.
Christmas buffet with prime rib an ham as main entree choices. Fresh and very well presented. Sides and desserts were fantastic. A bit pricey for the limited selection, but all in all, a nice experience in a ski-lodge type atmosphere.
Great Food, Staff was very friendly. Had Christmas Brunch here with my kids and eveyone had a great time.
This classy open kitchen style restaurant has a soft and warm ambiance with big Long booth seating which provides an added peacefulness. The drinks were perfectly made, one of the best Moscow mules I’ve ever had, hands down! The food was excellent, fast and fresh. Recommend for locals and hotel guests!
The decor and atmosphere are very nice, not as casual as most places, which is a good thing. The only negative was that we were not aware that the breakfast time had just ended and we could only order from the buffet. It seemed priced a little high for what was available, which was fairly standard breakfast fare.

Terrific Thanksgivings dinner buffet. We loved it and would definitely come back for another holiday dinner. The food was delicious! Thank you Flatz for making our family holiday a wonderful experience.

We did the thanksgiving buffet. The food was delicious and the staff and service exceptional. I was surprised by the quantity and quality of the fresh fruit.
Flatz is tired. The décor, which was beautiful when we first went 11 years ago, has suffered through recent makeovers. It felt like there were some lights that needed to be turned on - the beautiful wood branch ceiling soffit was dark where it used to be illuminated to show off the featured wood. One of the arching "branch lights" (much too dim) over the booths had the shade sitting off kilter and off of it's supports. The dining room was so empty at 6 p.m. that it felt sad.
As to the food - The Wild Game Chili and Colorado Bass were both delicious and well prepared and nicely presented. The tempura vegetable appetizer tasted nice but was greasy. This dish was served in a deep conical bowl with the dipping sauce in a cup in the center so that all the grease settled to the bottom rendering the last half of the veggies limp and greasy. If this were served in a shallow vessel on a bed of greens or starch to drain away the oil, they would stay crisp and be less greasy. The vegetable Pappardelle Pasta Carbonara was much to heavily sauced with a tasty but dense sauce that overpowered everything. To have the over-easy egg served atop this heavy sauce just made the dish more oppressive. I expected a light clinging coating of sauce.
The service was attentive and professional. Seeing the idle kitchen staff leaning over the counter watching the game from the open kitchen detracted from the upscale feel of the dining room. This restaurant should be a magnet drawing people into the hotel lobby from the surrounding Flatirons area. Instead it seemed to be mostly either single business travelers dining alone on their expense accounts or small work-groups of travelers doing the same. In other words - instead of being a draw, the clientele is mainly there by convenience/default as guests of the hotel. Compare this to Kachina at the Westin Westminster where the busy vital restaurant is full of food-savvy locals and you see that Flatz is a real missed opportunity.

Meet friends from Denver there to celebrate birthdays. Three live in Denver and two of us live north. It has become our go-to place for our celebrations for a Sunday brunch. We all love the Sunday buffet brunch.
Picked Flatz because it was walking distance from our hotel and we had just driven 8 hours. Glad we did- food, service, ambiance were all great.
This is a very pretty restaurant in a very pretty hotel. The food is fine--nothing spectacular, but plenty good for a hotel. My lamb was cooked medium-rare, as ordered, and the risotto was a bit too rich and overcooked. My husband enjoyed his chili and the garlic bread.
We chose this restaurant based on numerous good reviews and were appalled by how bad our meal was. The restaurant was completely empty when we arrived and we should have bolted as soon as we saw that. It was, without a doubt, the worst $100 meal we have ever eaten. The "Crispy Brussels Sprouts" were far from crispy. The chunks of brussels were undercooked. The "Truffle Fries" were not freshly cooked and had definitely been reheated. The "Giant Sea Scallops" were mediocre and there were only three of them. For $32 there should have been at least one more, if not two. The seasonal vegetable salad was just a pile of undercooked chopped carrots and asparagus under the scallops, wading in the broth. The "Seared Lamb Tenderloin Risotto" was not good either. We ordered the lamb rare and it was well-done, and the risotto was not made from arborio rice -- it was just a gooey, tasteless pile of regular rice.
Hum...food was underwhelming. Service was excellent.
Went for brunch with a couple of friends. The buffet is really nice, and I love that they will do eggs, omelettes, pancakes, French toast, and waffles to order. The servers are all very nice and attentive, and they remembered me from times I've been there before, even though it's been a few months. The food is great quality, and the price is reasonable. The atmosphere is also pretty calm, unlike many other places I've gone for brunch. I highly recommend Flatz brunch, and I am looking forward to going back.

We went with family members for Sunday brunch. It was a quiet day in the restaurant, but we enjoyed being able to visit. The buffet was nice and fresh...the fruit very fresh and tasty. We stayed for a couple of hours visiting. Our sever was excellent.

Tough to give a robust review here; I only had oatmeal. It was good; a little pricey for just oatmeal, though. Nice location in the renassaince hotel

We've always like the weekend buffet brunch here but the food seems to have slide a little downward. The fruit selections were great but it would be good if they had some special dishes. You can get an omelet made to order. What we like the most is the ambience, the champagne, and that you can visit with friends in a leisurely fashion. Beautiful restaurant. Very clean. Service just OK but it's a buffet so that doesn't really matter!
We have been here many times, love it but I think for $30. There should have been some form of beef offered. Not just bacon, sausage.
Our server, Michelle, was truly a gem. She made the evening extremely worthwhile.

Flatz is located in the Marriott Renaissance in Broomfield. I used Open Table 3 times to make reservations and Flatz had my reservation and table ready each time. It has a great bar scene outside of the entry way, great seating inside and outside seating which I didn't use because an April snow storm but looked terrific. Great views across the plains for this SoCal boy.

Stopped here before theater in Arvada. Did not know Flatz is in a hotel. We were early so not many people around. Great food and service. Waitress was knowledgeable and attentive. Would be a good place for happy hour outside in warm weather. Great view of the mountains from their outdoor dining area. Great view from inside too.
I can't recommend Flatz given all the options in the area in Denver or Boulder. Only exception: if you're staying in the hotel without a car.
Server was nice and attentive. Menu was a bit limiting. My cocktail although acceptable, indicated a low grade bar.
We were looking for a place to visit with some dear friends we hadn't seen in many years. We wanted a place where we could enjoy the food while talking without interruptions. Flatz delivered. We were promptly seated ( had a reservation), our servers were professional and friendly. The menu had some fabulous dishes. There weren't a lot of patrons so we were able to easily chat. Everyone enjoyed their meal. We were not pressured to leave and stayed for another hour or so visiting. So glad I found this place!
We ate here because it had good reviews and it was in our hotel, so we didn't have to leave to go eat. We started with drinks and my wife was served a mule with no copper cup because they "were out of cups" - it looked and tasted bad. My rum and Coke tasted a little off and later I discovered by looking at the bill that it was actually a rum and Pepsi (it was written on there). The waiter should have told me as I don't like Pepsi with rum. We got their signature "crispy brussel sprouts" and they were a little too crispy with black char on the leaf edges and a burnt oil taste. Then our entrees came, game hen and NY strip steak, both of which were served on top of mashed potatoes. The meat was tough to cut and would slide around the plate on the potatoes as you tried to cut it, so that made it hard to eat. Sometimes it is nice to get a "clean" bite of food with no potatoes on it, but that was impossible. When the evening was over we had spent over $100.00 for a meal that was less than average. It met the typical flashy restaurant attached to a hotel stereotype and had the poor food to go with it. Would not recommend to anyone.

Forget everything you've heard about hotel restaurants. This one really is spectacular. While not extensive, the restaurant menu really does feature wonderful local cuisine. What a lucky find. So glad we stayed in house tonight.
Sunday brunch at Flatz is one of the best around, in my opinion. We went for a birthday celebration. They have great choices on the buffet, and the chef makes omelets, pancakes, and waffles to order. The $4 bottomless mimosas are a steal.
