Fitler Dining Room has a short menu, but one that captures what 95% of diners would like (fish, poultry, meat). It stands out in its use of very fresh ingredients and locally sourced food. The dishes are innovative without being tiresomely trendy (and unusual or trendy ingredients just for the sake of being deemed innovative). The waitstaff were way above the usual center city waitstaff. The woman who seated us listened to a request (that the music be lowered a bit as one of the people at the table was over 90) and actually responded to it. (Often waiters/waitresses will smile and then go off and do absolutely nothing.) Our main server was poised, could give us the relevant information succinctly and knew how to be appropriately watchful and attentive without being intrusive or overly friendly (e.g., the type who come over every 10 minutes and say "How are you guys coming along?"). This restaurant is a gem of direct, honest, intelligent and tasteful approach to dining. It really is a dining room.
