Three brothers and a brother-in-law from El Salvador realized their long-held dream of opening a restaurant together in November of last year. Jaime Sorto, his brothers Hugo and Jose Bonilla, and his brother-in-law Jose Zelaya looked for a name that symbolizes their concept of two cultures coming together. They chose La Malinche, the name given to a historical figure who has been at the center of controversy for centuries. The noble Mexican woman was enslaved and given to Hernán Cortés, a Spanish conquistador. She became his interpreter and confidante. Their son was viewed as the first mestizo, a child of mixed blood. Many Mexicans consider La Malinche or Doña Marina to have been a traitor, but today, she is also honored as the symbolic mother of the country’s mixed-race people. At La Malinche, all of the starters, vegetables, meats and seafood are served as Spanish tapas, called botanas in Mexico.

This is also a fresh take on the historic architecture of the venue, which was once a theater. Fraiche is designed to be a non-pretentious culinary destination with a nod to upscale dining without the stuffiness. The menu is constructed in a way that takes approachable and recognizable food and elevates it, with no flavor left behind! Since the beginning of time, food has brought people together and that is our ultimate goal with this concept.

We made a reservation for the Grand Opening. Overall, our experience was outstanding. All wait staff, host greeters, managers, etc. were exceptionally friendly and welcoming. Our waitress, KayKay was awesome! We tried the oxtail meatballs and she crab soup for appetizers. The meatballs are to die for! Wish they were offered as an entree, they are delicious! The soup was also delicious, flavorful and loaded with lump crab. Our entrees, fried red snapper and Cornish hens, were also delicious. The 4 cheese macaroni and cheese was yummy! We had the Remy Martin sidecar cocktails, no regrets there! Would definitely return.

This was our first time trying the new Afternoon Tea at cut. Such a fun activity for the afternoon. Nice selection of teas. The 3 savory sandwiches were so yummy! The desserts were pretty to look at and yummy to taste. The penaut butter mille feuille and the chocolate rocher were melt in your mouth yummy. The detail of the cherry blossom on the desserts was amazing and so fitting for DC in the spring. The service was great as usual for CUT. A really cool new concept. If there was a bit more savory to sweet ratio, this would be perfect.
