Nada despierta el apetito mejor que un filete de Pace's Steak caliente, jugoso y suave, recién salido de la parrilla, descansando en el pato frente al comensal, listo para cortarse y degustarse. La carne es diferente, y los comensales lo comprueban. Prestan especial atención a las carnes mucho antes de llegar a la cocina. En primer lugar, seleccionan solamente los mejores ejemplares directamente de los embarcaderos del mercado de carnes en el corazón de la ciudad de Nueva York. No confían en nadie para añejarlos.
