Salt's name comes its Salthill locale - which itself was derived from salt works that were once here - plus the nearby sea and, of course, the seasoning. Menus are fresh and interesting (see below), with plenty of appetizing salads and lighter lunch dishes, reasonably priced for the casual mid-week crowd.

Roly's Bistro first opened its doors in 1992 and has served traditional European cuisine ever since. Lunch is served in the Bistro on Wednesday to Sunday with Monday and Tuesday lunch being served in The Terrace Restaurant. Dinner is served in the Bistro seven evenings a week. The menu caters for most palates with a Goat's cheese and vegetable tart and a selection of meat dishes from Roly's butcher block, such as sirloin steak and rib of prime Irish steak.
