Where East Meets West - Robata | Sushi | Whiskey --- Located at The Remi Hotel, Kauboi, is a modern Japanese-American grill in Scottsdale, where live-fire cooking meets refined design and Southwestern soul. The space blends natural wood, leather, and stone with soft lighting for an elevated yet grounded atmosphere. At its heart: a custom wood-fired robata and grill suite fueled by binchotan charcoal and local hardwood. One side handles yakitori and robata; the other, Santa Maria-style grilling. The menu is designed for sharing, from nigiri and sushi to skewers, steaks, and wood-fired vegetables. Desserts and cocktails are crafted with the same attention to detail, using authentic Japanese ingredients and seasonal flavors. Served on handmade Japanese plateware, every dish is a sensory experience, with theatrical presentations like the Smoking Bluefin Tuna. Kauboi is more than a meal, it’s a celebration of contrast, balance, and craft.
